I just threw a bunch of stuff together, and out came a new chili that's become our favorite. My husband always tells me that I'm the world's best cook. 1 pound bulk Italian sausage
3 garlic cloves, minced
1/2 cup chopped green pepper
1/2 cup chopped onion
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) whole kernel corn, drained
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1/2 cup water
1 tablespoon chili powder
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon pepper
Shredded cheddar cheese, optional

Steps:

  • In a large saucepan, cook sausage and garlic over medium heat until the sausage is not longer pink. , Add green pepper and onion. Cook and stir until onion is tender; drain. Stir in the beans, tomatoes, corn, tomato sauce and paste, water, chili powder, oregano, salt, basil and pepper; bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Garnish with cheese if desired.

2 tbsp vegetable oil
8 sausages of your choice
1 large onion (red or white), finely chopped
2 peppers (red, orange or yellow, or a mixture), sliced
3 garlic cloves, crushed
1 tbsp smoked paprika
1 tsp ground coriander
1 tsp ground cumin
1 heaped tbsp chipotle paste (optional)
400g chopped tomatoes
2 tbsp ketchup
400g can black beans, drained
handful of coriander, leaves picked, to serve (optional)
grated cheddar, natural yogurt or soured cream, and tortilla chips, jacket potatoes or rice, to serve

Steps:

  • Heat half the oil in a large pan and cook the sausages for 12-15 mins over a medium heat until brown all over and cooked through. Remove to a plate.
  • Drizzle the rest of the oil into the pan and cook the onion and peppers for 10 mins, over a low heat stirring often until all the veg has softened.
  • Stir in the garlic, all the spices and the chipotle paste, if using, and cook for another minute. Add the tomatoes, a canful of water, the ketchup and some seasoning. Bring to a simmer and cook for 20 mins half-covered with a lid or loosely covered with foil. Stir occasionally, topping up with water if the mixture starts to look too thick.
  • Slice the cooked sausages into thick coins and return to the pan, then tip in the beans. Cook for another few minutes until heated through, then spoon into bowls and scatter with coriander leaves, if using, some grated cheese and a dollop of yogurt or soured cream. Serve with tortilla chips for scooping, as a filling for jacket potatoes, or over rice.

1 lb hot Italian sausage
2 tablespoons chili powder
2 teaspoons dried oregano
2 teaspoons ground cumin
1 teaspoon cinnamon
1 teaspoon fennel seed, crushed
2 bay leaves
2 onions, chopped
4 cloves garlic, minced
2 sweet red peppers, chopped
1 teaspoon adobo sauce
1 chipotle pepper, diced
1 (28 ounce) can diced tomatoes
1 (19 ounce) can black beans, drained and rinsed

Steps:

  • Remove sausage from casing.
  • In dutch oven over medium-high heat, brown meat breaking it up with a wooden spoon as it cooks.
  • Drain off all but 2 tsp fat.
  • Reduce heat to medium.
  • Add chili powder, cumin, oregano, cinnamon, fennel seeds and bay leaves.
  • Cook, stirring for 1 minute.
  • Add onions, garlic, red peppers, adobo sauce, and chipotle pepper.
  • Cook, stirring, for about 8 minutes or until vegetables are softened.
  • Stir in diced tomatoes and 2 cups water.
  • Bring to boil, reduce heat and cook, covered, for 20 minutes.
  • Stir in beans.
  • Simmer, uncovered, for another 30 minutes or until sauce is thickened.
  • Remove bay leaves.
  • Note: you can substitute a jalapeno pepper for the chipotle pepper and hot sauce for the adobo sauce.

1 tablespoon olive oil
3/4 lb chorizo sausage or 3/4 lb hot Italian sausage
1 large yellow onion, chopped
2 cups butternut squash, cubes cut into 1/2-inch squares
3 garlic cloves, minced
1 poblano pepper, membranes and seeds removed, cut into 1/2-inch pieces
1 jalapeno pepper, seeded, finely chopped
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon ground coriander
28 ounces can Italian plum tomatoes
1 1/2 cups chicken stock
2 tablespoons tomato paste
1 tablespoon sriracha asian garlic sauce, plus extra for serving
1 bay leaf
2 cups canned black beans, drained
2 teaspoons salt
1 teaspoon fresh ground black pepper
1/4 cup chopped cilantro leaf, plus extra for garnish
chopped fresh avocado (to garnish)

Steps:

  • Heat olive oil in a stockpot or deep skillet over medium heat. Add sausages and brown on all sides. Transfer to a plate lined with a paper towel. When cool enough to handle, cut in 1/4-inch slices.
  • Add onion to pot and saute until softened, 3-4 minutes. Add squash, garlic and peppers. Saute 3 minutes. Add dry spices and cook, stirring, 1 minute. Add tomatoes, chicken stock, tomato paste, Sriracha and bay leaf. Simmer until squash is tender, about 20 minutes. Stir in black beans, sausage, salt and pepper. Simmer 10 more minutes. Taste to adjust seasoning.
  • Before serving, add cilantro. Serve in bowls garnished with additional cilantro, chopped avocado and a drizzle of sriracha.
  • (Chili may be made up to 24 hours in advance. Cool, cover and refrigerate. Re-warm over medium heat to serve.).

So, based on that excellent recipe, here's one that builds on it and I think is even better. Thanks to Marty Hugo for the original recipe! 2 1/2 lbs mild Italian sausage (or substitute with your favorite sausage)
1 large onion, chopped
4 garlic cloves, minced
1 (15 ounce) can tomato sauce
2 (15 ounce) cans diced tomatoes
2 cups water
1 (12 ounce) bottle dark beer
2 teaspoons ground cumin
1 teaspoon paprika
1 tablespoon chili powder
red pepper flakes
1 teaspoon oregano and salt or 2 teaspoons adobo seasoning
1 teaspoon pepper
2 teaspoons Worcestershire sauce
2 (15 ounce) cans chili beans
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
2 green bell peppers
shredded cheddar cheese
sour cream
Fritos corn chips

Steps:

  • Brown ground beef, set aside.
  • Cook sausage whole, lightly burning the skin on all four sides.
  • Remove sausage from pan, Slice into relatively thick (1 cm) slices, and then slice those in half. Return to pan and cook until each piece is lightly burnt.
  • Saute onions and garlic until onions are slightly wilted.
  • Add all ingredients to a large stew pot, simmer for 2 hours, stirring occasionally.
  • Serve with cheddar cheese, sour cream, and fritos as desired.

1 1/4 pounds Italian sausages (turkey or pork)
1 large onion, cut into 1/2-inch pieces
1 large red bell pepper, cut into 1/2-inch pieces

2 jalapeño chilies, seeded, chopped
1 tablespoon plus 2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 28-ounce cans crushed tomatoes in puree
1 15 1/4-ounce kidney beans, drained, rinsed
1 15-ounce can cannellini (white kidney beans), drained, rinsed
1 15- to 16-ounce can black beans, drained, rinsed
1 tablespoon balsamic vinegar or red wine vinegar
Sour cream
Chopped fresh cilantro

Steps:

  • Heat olive oil in heavy large saucepan over medium-high heat. Add Italian sausages and brown on all sides, turning occasionally, about 8 minutes. Transfer sausage to plate. Add chopped onion to pan and sauté 5 minutes. Add chopped bell peppers and chilies and sauté 1 minute. Add chili powder and cumin and stir until aromatic, about 30 seconds. Add crushed tomatoes and beans. Simmer 15 minutes to blend flavors. Cut sausage into 1/2-inch pieces. Add to chili and simmer until cooked through, stirring occasionally, about 10 minutes. Mix in vinegar. Season chili to taste with salt and pepper. (Can be prepared 2 day ahead. Cool and refrigerate. Before serving, rewarm over medium heat.)
  • Spoon chili into bowls. Top with sour cream and cilantro and serve.

2 cups chopped onions

1 lb venison loin, cut into 1/2 inch pieces

2 cups reduced-sodium fat-free chicken broth
1 cup chopped plum tomato
1 cup water
2 tablespoons dried ancho chile powder
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
15 ounces black beans, rinsed and drained
1/4 cup crumbled goat cheese
jalapeno, sliced (optional)

Steps:

  • Remove casings from sausage. Heat a large Dutch oven over medium-high heat. Coat pan with cooking spray. Add sausage, onion, and garlic to pan; saute 5 minutes or until onion is tender, stirring to crumble sausage.
  • Add venison; cook 4 minutes or until venison is browned. Stir in tomato paste; cook 3 minutes, stirring occasionally.
  • Add chicken broth and next 5 ingredients (through cumin), scraping pan to loosen browned bits; bring to a boil.
  • Cover and reduce heat. Simmer for 1 hour and 15 minutes or until venison is tender.
  • Stir in black beans; cook 10 minutes or until thoroughly heated.
  • Top each serving with crumbled goat cheese. Serve with jalapeno slices, if desired.
