2 tablespoons EVOO Extra Virgin Olive Oil
1/3 cup orzo
1 clove garlic
finely chopped or grated
1 cup light brown or white rice
such as Texmati brand
1 3/4 cups chicken stock or broth
regular or low-sodium
Salt and ground black pepper
2 bunches fresh spinach
chopped (about 4 cups) or 1 10-ounce box frozen chopped spinach
defrosted
3/4 to 1 cup grated Parmigiano Reggiano cheese

Steps:

  • Place a medium pot over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Add the orzo to the pan and toast until golden brown, 3-4 minutes
  • Add the garlic to the pan and continue cooking for another 30 seconds
  • Add the rice, broth, salt and pepper to the pan and bring up to a bubble
  • Cover the pot, reduce the heat to medium-low and simmer until all of the liquid has been absorbed, about 15 minutes
  • Fluff the finished rice with a fork and fold in the spinach and cheese
  • Serve alongside Lemon Pepper Chicken

Extra-virgin olive oil, for liberal drizzling
2 tablespoons butter
1/2 cup orzo
1 onion, finely chopped
1 1/4 cup long grain rice
2 cups chicken stock
1 large bundle farm spinach, washed and dried
Freshly grated nutmeg
Kosher salt and freshly ground black pepper
1 cup Greek feta crumbles
2 (1-pound) pieces flank steak (2-pounds total)
2 tablespoons extra-virgin olive oil, plus more for coating
4 cloves garlic, finely chopped
1 large shallot, finely chopped
1 red chile pepper, chopped or sliced
2 tablespoons chopped fresh oregano
2 tablespoons butter
1 lemon, juiced
6 plum tomatoes, halved
A generous handful flat-leaf parsley, thinly sliced

Steps:

  • For the rice: Heat a drizzle of extra-virgin olive oil and 2 tablespoons butter over medium heat in a saucepot with tight fitting lid. To the melted butter, add the orzo and lightly toast. Add the onion and cook to soften, 5 minutes. Stir in the rice and 1 1/2 cups of stock and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Preheat the broiler.
  • For the beef: Heat a cast iron griddle or a grill pan over medium-high heat. Coat flank steaks in extra-virgin olive oil and season liberally with salt and pepper. When the grill is very hot, cook the meat 10 to 12 minutes for medium-rare or 15 minutes for medium, turning occasionally. When the meat has been cooking for about 5 minutes, start the sauce in a small saucepot over medium heat. Add 2 tablespoons extra-virgin olive oil, garlic, shallot, chile pepper, and oregano. Stir 2 to 3 minutes, and then add the butter. When the butter melts, stir in the lemon juice and remove from heat.
  • For the rice: Add the remaining splash of stock along with the spinach to a food processor and process to a fine chop. Stir the spinach into the rice and season with nutmeg, salt, and pepper. Cover, turn off the heat, and let stand 2 more minutes. Fluff the rice with fork and stir in the feta.
  • For the tomatoes: Season halved tomatoes with salt and pepper and top with parsley. Drizzle the tomatoes liberally with extra-virgin olive oil and broil 3 to 4 minutes. Allow the meat to rest a bit then very thinly slice against the grain. Serve the sliced steak with a side of rice, a spoon of sauce over top, and a 2 tomato halves per person.;

4 pieces boneless, skinless chicken breast
Salt and freshly ground black pepper
1 cup all-purpose flour, plus 2 tablespoons
3 large eggs
Splash milk
3/4 cup plain bread crumbs
Freshly grated nutmeg, about 1/4 teaspoon
3/4 cup grated Parmigiano-Reggiano
2 tablespoons butter
1/3 cup orzo pasta
2 cloves garlic, finely chopped
1 cup white rice
2 cups chicken stock
2 pinches saffron threads
1/4 cup finely chopped flat-leaf parsley
Olive oil, for frying
1 1/2 pints cherry or grape tomatoes, halved or 7 to 8 small Roma tomatoes, thinly sliced lengthwise
1 small red onion, quartered and thinly sliced
1/2 cup torn or thinly sliced basil leaves
3 to 4 stems fresh tarragon, leaves chopped
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 275 degrees F.
  • Butterfly the chicken breasts open by cutting into and across but not all the way through the breast with a sharp knife. Lightly pound out the chicken under plastic wrap and season with salt and pepper, to taste.
  • Set up a breading station: 1 pan of flour, 1 pan of eggs beaten with 2 tablespoons flour and a splash of milk, and 1 pan of bread crumbs seasoned with nutmeg and combined with cheese. Coat the chicken pieces in the flour, then in the egg and then in the bread crumb mixture. Set aside.
  • Arrange a cooling rack over a baking sheet and put it in the middle of the oven.
  • Add the butter to a pot with tight-fitting lid over medium heat. Add the orzo to the warm butter and toast for 2 to 3 minutes, then add garlic and stir a minute more. Add rice and coat in butter. Stir in the stock and the saffron threads and bring to a boil. Reduce the heat to a simmer and cover the pot. Cook the rice until tender, about 17 to 18 minutes. Add the parsley and fluff with a fork.
  • Heat 1/4-inch of oil in a very large skillet over medium heat. Fry the chicken, 2 cutlets at a time, about 3 minutes on each side. Transfer the first 2 cutlets to the cooling rack in the oven to keep warm while you cook the second batch.
  • While the chicken cooks, combine the tomatoes, onions, basil, tarragon, and 2 tablespoons extra-virgin olive oil in a small bowl. Season with salt and pepper, to taste.
  • Transfer the chicken from the oven to serving dishes and top with the raw tomato sauce. Serve the Milanese rice alongside.

MY Mom found this recipe in a local newspaper years ago and it has been one of our favorite side dishes for a long time. The original recipe was a little bland, so I have doctored it up a little. Sometimes I make more than I need for one meal so I can have leftovers.

1 small onion, chopped
2 tablespoons plus 1-1/2 teaspoons butter
1 cup uncooked instant rice
1 cup water
1 teaspoon beef bouillon granules
1/4 teaspoon garlic powder
1/4 teaspoon pepper
2 tablespoons grated Parmesan cheese
Fresh marjoram sprig and shaved Parmesan cheese, optional

Steps:

  • In a small saucepan, saute onion in butter until tender. Stir in the rice, water, bouillon, garlic powder and pepper; bring to a boil. , Remove from the heat; cover and let stand for 5 minutes. Stir in grated Parmesan cheese. Garnish with a sprig of marjoram and shaved Parmesan cheese if desired.

1 small onion
2 to 3 cloves garlic
1 (10-ounce) bunch spinach
2 tablespoons unsalted butter
1/2 teaspoon fine sea salt, or to taste
1 cup long-grain rice
1 3/4 vegetable broth
2 tablespoons chopped dill leaves, optional
Freshly ground black pepper, optional

Steps:

  • Trim the stem end off the onion. Leave the root end in tact to hold the layers of the onion together. Cut the onion in half lengthwise and remove the peel. Working with one-​​half of the onion at a time, make horizontal cuts into the onion before making vertical and then crosswise cuts to finely chop the onion, using the root end as a sort of a handle. Set the onion aside.
  • Peel and mince the garlic. Set aside.
  • Pick over and trim the spinach. Rinse it clean , spin or pat it dry. You really want the spinach dried off to avoid having to cook off the water later. Cut the leaves into thin ribbons. Set aside.
  • In a medium pot over medium-high heat, melt the butter. Add the onion and salt and cook, stirring occasionally, until the onion is soft, about 3 minutes.
  • Add the garlic to the onion and cook, stirring, until fragrant, about 1 minute. Stir in the spinach. Cook, stirring occasionally, until the leaves are wilted and any liquid that has cooked out of the spinach has evaporated, about 4 minutes. If there's a lot of liquid, turn up the heat and boil it off.
  • Add the rice and stir to coat it and make sure it's as well-combined with the spinach and onions as possible. Add the broth and bring to a boil. Add the dill, if you like. Cover and reduce the heat to low. Cook, undisturbed, for 15 minutes. Without removing the cover, remove the pot from the heat and let sit 5 minutes.
  • Remove the cover. Fluff the pilaf with a fork. Stir in the pepper, if you like. Serve the pilaf hot or warm.

Steps:

  • Bring broth and garlic to boil in medium saucepan. Add Neufchatel and mustard; cook and stir 1 min. or until Neufchatel is melted and mixture is blended.

1 cup basmati rice, uncooked
2 cups water
3/4 cup vegetable stock
2 onions, chopped

1 cup peeled tomatoes, diced (optional)

  • Place lentils in saucepan and cover with cold water.

  • Simmer for 25 to 40 minutes, until tender but not mushy; drain and set aside.

  • Reduce heat and simmer rice about 20 minutes, covered, until all liquid is absorbed; set aside.
  • Bring the vegetable stock to a boil in a saucepan.
  • Add onions and simmer until tender and translucent, approx 10 minutes.
  • Add the garlic, celery, cumin and cinnamon and simmer for 5 minutes longer.
  • Add the lentils and lemon zest (and tomatoes, if desired); heat through.
  • Add the greens; cook and stir until tender.
  • Fold the lentil and greens mixture into the rice.
  • Season with salt and pepper.
  • Note: You may make this ahead of time and place in a baking pan, cover with foil, and warm in the oven for 15 to 20 minutes.
