1 lb lean (at least 80%) ground beef
1 lb ground sweet Italian sausage
1/2 onion, finely chopped
1 small green bell pepper, seeded and finely chopped
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed or diced tomatoes, undrained, pureed in blender or food processor
1 tablespoon packed brown sugar
1 tablespoon Worcestershire sauce
1/2 cup ketchup
1 teaspoon ground mustard
6 burger buns, split

Steps:

  • In 10-inch skillet, cook beef and sausage over medium-high heat until no longer pink, stirring and breaking up with wooden spoon as necessary.
  • Add onion, bell pepper, tomatoes, brown sugar, Worcestershire sauce, ketchup and ground mustard. Stir to combine. Reduce heat to low; simmer 10 minutes.
  • Serve over buns.

We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced

1 1/4 pounds ground turkey (I use 7% fat)
1 medium green bell pepper, chopped
1 small jalapeno, finely chopped (can omit for less heat)
3 cloves of garlic, minced
3 tablespoons chili powder
3/4 cup liquid of choice: beer, low-sodium chicken broth or water
3/4 cup ketchup
1/2 to 1 tablespoon sriracha sauce (optional: you can omit or reduce for less heat)
2 tablespoons Worcestershire sauce
2 cups shredded cheddar cheese
1/2 small French bread loaf, cut into thick 1-inch slices
Olive oil for drizzling

Steps:

  • Preheat oven to 350. Spray an 8x12 inch casserole dish with cooking spray and set aside.
  • To make the sloppy Joe's, heat oil in a large sauté pan over medium-high heat.
  • Add ground turkey, green pepper and jalapeno, if using. Sauté until the ground turkey is cooked through and the peppers are tender, about 8-10 minutes.
  • Add garlic and chili powder and sauté for another minute.
  • Add liquid of choice, ketchup, sriracha (if using) and Worcestershire sauce. Mix well and bring to a simmer, then turn off heat.
  • Transfer sloppy Joe mixture to prepared casserole dish. Top with cheddar cheese then bread slices. Drizzle the bread with a little olive oil.
  • Transfer the casserole dish to the oven and bake at 350 for 15 minutes. If desired, you can broil for an additional minute to help the bread pieces brown up. Just be sure to watch it carefully!
  • To serve: Invert the bread onto the plate so the crusty side is down then spoon the sloppy Joe mixture on top of the bread. Enjoy!

The horse trailers were puling into the lot behind our church. It was a huge, long lot that was approximately 2 acres, and would house horses, their trailers, their owners and riders, and a large jumping course that would provide lots of fun and frolic for 2 days. My mother was in charge of the food supply, and early in the morning she made large, bubbling pots of "Sloppy Joes' a la All Saints!" I know we must of had at least 10 dozen rolls, and probably 25 lbs. of ground beef, large cans of tomato sauces, fresh tomatoes, and V8. Anyway you make these, they are 100% real from our horse show. The only thing missing is the peppermint stuck in the lemon.

1 pound ground beef ((I used an 80%-20% blend))
1 tbsp olive oil
½ cup yellow onion (small diced)
½ cup red bell pepper (small diced)
1.31 oz packet Sloppy Joe Seasoning ((I used McCormick brand))
½ cup low-sodium beef broth
¼ cup ketchup
1¾ cup tomato puree
2 tbsp tomato paste
2 tsp worcestershire sauce
½ tsp salt
¼ tsp black pepper
2 cups shredded colby jack cheese
1 fresh french baguette (sliced into ¼" pieces)

Steps:

  • Preheat oven to 375* F. You will need an 8x8 inch., oven safe, casserole dish.
  • In a medium skillet, on medium-high heat, add the olive oil and ground beef. Cook the meat for 5 minutes, or until browned and cooked through. Transfer the cooked ground beef to a paper towel lined plate and drain any excess fat from the skillet. Make sure to leave 1 tablespoon of fat in the pan to saute the vegetables in.
  • To the same skillet that you cooked the ground beef in, after the excess fat has been drained off, add the chopped onions and red bell pepper. Saute for 5 minutes or until the vegetables are tender.
  • To the vegetables add the packet of sloppy joe seasoning, beef broth, ketchup, tomato puree, tomato paste, worcestershire sauce, salt and black pepper. Stir to combine. Add the cooked ground beef back to the skillet and simmer the mixture on medium heat for 5 minutes. Turn off the heat to the skillet.
  • Stir in 1 cup of the shredded colby jack cheese. Transfer the sloppy joe dip mixture to the 8x8 casserole dish. Top the mixture with the remaining 1 cup shredded colby jack cheese.
  • Bake for 20 minutes or until the cheese is melted and the dip is bubbly and hot.

3/4 cup freshly grated sharp cheddar cheese
6 brioche hamburger buns
softened butter or mayo for brushing ((optional))
6 slices provolone cheese

Steps:

  • Preheat oven to 400 degrees F. Split buns and lay them cut side up on a large baking tray (15x21). Lightly brush the cut sides with softened butter or mayonnaise (optional for crispier/more flavorful buns). Bake for 5 minutes to toast the buns. Meanwhile you can continue with the recipe:
  • Heat 1 tablespoon olive oil in a large cast iron skillet over medium-high heat. Add beef, onions and bell peppers and cook until beef is browned and onions are softened, about 7 minutes. Add garlic, and sauté 30 seconds.
  • In a liquid measuring cup (or small bowl), whisk the beef broth, cornstarch and beef bouillon together until smooth. Add to the meat mixture followed by the ketchup, Worcestershire sauce, Dijon and all seasonings.
  • Gently simmer over medium heat, stirring occasionally, until most of the liquid has been absorbed, but the mixture is still a little saucy, about 5 minutes.
  • Stir in the sharp cheddar cheese until melted. Taste and season with salt, pepper, red pepper flakes to taste (I like more salt). Keep in mind the flavors will be diluted with the cheese and buns.
  • Divide mixture between the bottom toasted buns and top each with a slice of provolone cheese. Bake (leaving both top and bottoms cut side up) at 400 degrees F for 5-10 minutes or until cheese is completely melted. Top the sandwiches and serve immediately.
