CROCK-POT BAKED BEANS IN TOMATO SAUCE
Very easy, I think it tastes best when cooked slow and I found with my slow cooker I had to cook for an hour or two longer than the recipe says. My hubby loves this recipe! If you have used up all the reserved fluid and need extra fluid while cooking, in particular when on high, use up to 1/2 cup of tomato juice. Prep time does not include the bean soak.

Steps:
- Soak beans overnight in large bowl.
- Drain, put in large pot and cover with 5 cups of water. Simmer over medium low heat until tender, about 1 hour.
- Drain beans reserving 2 cups of liquid.
- Add beans to slow cooker.
- In a skillet over medium high heat fry bacon until browned, chop and stir into beans.
- Combine juice, chopped onion, ketchup, molasses, brown sugar, dry mustard, salt, pepper and chili, add to beans and stir well.
- Cover and cook on low for 7 to 9 hours. Until beans are tender and flavourful.
- Check and add a little of the reserved liquid as necessary.

- The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
- In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

- In a large skillet over medium heat, cook the bacon and onion until the bacon is cooked through and starting to crisp and the onions are translucent, 5-7 minutes. Drain excess grease.
- Rinse and drain only two cans of the beans. Add the rinsed and drained beans to the skillet along with the two cans of undrained beans.
- Stir in the ketchup, brown sugar, molasses, vinegar, Worcestershire sauce, mustard, garlic powder, salt, pepper, and paprika.
- Oven Directions: Preheat the oven to 350 degrees F. Transfer the baked beans to an oven-safe 9X13-inch dish and cover with foil. Bake for 1 hour. Uncover and bake for 15-20 more minutes until bubbling. Remove from the oven and let sit for 15 minutes. They'll thicken up more as they cool slightly. Season to taste with additional salt and pepper, if needed.

- Rinse soaked beans and place in large pan with enough fresh water to cover.
- Cook, covered, over medium heat for one hour or until tender.
- While beans cook, sauté bacon in a skillet until lightly browned, remove and set aside, then lightly sauté the chopped onions in the remaining bacon fat until translucent. Remove onions and set aside.
- In a saucepan, combine maple syrup, molasses, pepper, mustard, ketchup, tomato paste, brown sugar, Tabasco, the orange juice, the pineapple juice, the coffee and the stock. Cook over medium heat for 1 hour, stirring occasionally.
- Combine beans, sauce, onions and bacon in a crock pot. There should be enough liquid to cover the beans generously. If not, add some more stock, or combination of juices.
- Cook at low for 12 hours, at high for 8.
- Taste for seasoning near the end of the cooking time and add salt if needed.

These are a hit at my house for even those that aren't fans of baked beans. I think it's the bacon that adds the x-tra somethin somethin. Or maybe the french fried onions. This can also be done in the oven and so reduce the baking time to 1 1/2 hrs.
