1 (3 1/2 ounce) package vanilla instant pudding mix, also good with coconut cream flavor

Steps:

  • Bring 1 cup of milk to boil in medium sauce pan.
  • Stir in rice and raisins.
  • Cover pan.
  • Remove from heat.
  • Let stand for 5 minutes.
  • Meanwhile prepare pudding.
  • Beat pudding mix into remaining 2 cups of cold milk with whisk for 2 minutes.
  • Add rice mixture to pudding and stir.
  • Cover surface with plastic wrap.
  • Cool 5 minutes.
  • Stir.
  • Serve warm or chilled.

  • Bring 1 cup of milk to a boil in a medium saucepan. Step 2
  • Stir in rice and raisins, if using, and cover. Step 3
  • Remove the saucepan from the heat and let stand for 5 minutes. Step 4
  • Meanwhile, prepare the pudding as directed on the package with remaining milk. Step 5
  • Add the rice mixture to the prepared pudding, stir to combine and sprinkle with ground cinnamon. Recipe Tip To give this recipe a springtime touch, prepare it as directed, omitting the cinnamon. Sprinkle each serving with tinted, shredded coconut and pastel-colored, miniature jelly beans. To tint the shredded coconut, simply mix 1/2 tsp of water with a few drops of food coloring. 1 quart milk (4 cups)
1 (3 ounce) package vanilla pudding mix
1 cup Minute Rice, uncooked
1/4 cup raisins
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • Beat egg with wire whisk in large saucepan.
  • Gradually add milk, beat well until well blended.
  • Add dry pudding mix, stir 2 minutes or until well blended.
  • Stir in rice and raisins.
  • Bring to full rolling boil over medium heat, stirring constantly.
  • Remove from heat.
  • Cool 5 minutes, stir occassionally.
  • Pour evenly into 10 dessert dishes or into 1 1/2 quart dish.
  • Place plastic wrap on surface of hot pudding.
  • Refrigerate for about 1 hour.
  • Stir before serving.
  • Sprinkle with cinnamon and nutmeg before serving.

1 cup raisins
1 tablespoon butter, melted
1/2 teaspoon salt
1 vanilla bean, split
1 large egg
1/2 teaspoon cinnamon
1 (8 ounce) carton nonfat sour cream

Steps:

  • Combine milk, rice, sugar, raisins, butter, and salt in a slow cooker, and stir well.
  • Scrape seeds from vanilla bean. Add seeds, and bean to milk mixture.
  • Cover with lid, and cook 2 1/2-4 hours or just until rice is tender, and most of the liquid is absorbed.
  • Place egg in small bowl. Stir well with a whisk, and gradually add 1/2 cup hot rice mixture to egg.
  • Return egg mixture to slow cooker, stirring constantly with a whisk.
  • Cook 1 minute while stirring.
  • Remove inner vessel from slow cooker.
  • Let stand 5 minutes, and mix cinnamon, and sour cream.
  • Discard vanilla bean.
  • Serve warm , not hot or refrigerate until fully chilled.

2 slices orange rind (stripes)
1 vanilla bean, seeds scraped (or 1 tsp vanilla extract)
180 g arborio rice
3 egg yolks
baked rhubarb or seasonal poached fruit, to serve
light cream, to serve (optional)

Steps:

  • Place milk, sugar, rind, vanilla bean and seeds (or extract) in a saucepan and bring to a simmer over medium-low heat.
  • Add rice and stir occasionally.
  • Cook for 30 minutes or until rice is tender.
  • Add yolks one at a time, mixing well.
