1 cup heavy cream
1 tablespoon unsalted butter
1/2 pound semisweet chocolate, chopped in chunks

Steps:

  • Heat the cream and butter in a saucepan over medium heat. Add the chocolate, stirring, until it's melted and smooth. Remove from heat and cool to room temperature.

10 g de fécule de maïs ou de riz.

Steps:

  • Préparer les ingrédients.
  • Fondre le chocolat dans l'eau.
  • Mélanger le chocolat au fouet.
  • Ajouter la fécule diluée dans un peu d'eau.
  • Mélanger, jusqu'à l'épaississement du chocolat.
  • Cette sauce au chocolat est idéale pour accompagner des poires pochées ou des oeufs à la neige voire même des crêpes avec de la chantilly pour les plus gourmands.

25g butter
125ml double cream
1 tbsp caster sugar
1 tbsp Disaronno liqueur (optional)

Steps:

  • Melt the chocolate in a bowl over a pan of barely simmering water until completely smooth (see step-by-step).
  • Heat all of the remaining ingredients in a small saucepan until evenly combined. Remove from the heat and stir through the melted chocolate. Serve warm over chocolate pudding, vanilla ice cream or both!

1/2 cup half-and-half cream
1 tablespoon unsalted butter
2 tablespoons granulated sugar
4 ounces semisweet chocolate, finely chopped
1/2 teaspoon espresso powder
1 teaspoon pure vanilla extract
1 tablespoon coffee liqueur

Steps:

  • Place the chopped chocolate in a medium bowl. In a small saucepan, bring the half and half, butter, and sugar to a boil, stirring constantly. Pour the heated mixture over the chocolate.
  • Let stand for 1-2 minutes, then stir until the chocolate is completely smooth. Add the vanilla, espresso powder and liqueur (if using), and stir to combine. Serve warm. If serving cool, sauce can be thinned with water--one teaspoon at a time. Cover and refrigerate for up to 2 weeks. Reheat over a low heat or in the microwave.

Steps:

  • In a small saucepan, melt chocolate with 1/2 cup water over medium heat, about 2 minutes. When mixture comes to a boil, whisk gently until smooth. Continue whisking while sauce gently boils for 1 minute. (If sauce is too thin, cook it longer. If it is too thick, add more liquid, and return to a boil.) Remove from heat, and allow to cool to room temperature.

¾ cup white sugar
1 ½ tablespoons all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups milk
2 tablespoons butter
½ teaspoon vanilla extract, or more to taste
1 tiny pinch salt

Steps:

  • Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
  • Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.
  • Whisk dry ingredients into the milk mixture a little at a time. Increase heat to medium-high until mixture comes to a simmer. Cook, stirring constantly, for 6 minutes. After 6 minutes, turn off heat. Whisk in a pinch of salt.
  • Pour hot over ice cream or store in airtight containers in the refrigerator.
