NEW ENGLAND SATURDAY NIGHT BAKED BEANS
My father always made the baked beans in our house. He never wrote the recipe down so this is how I've adapted it to make in a crockpot. We used to have them with Hot dogs and brown bread on Saturday nights in the winter, If there was any left overs we would have them for breakfast Sunday morning with our eggs. Sometimes I have skipped the soaking overnight and just boiled the beans a little longer to make sure they soften. I discovered by adding the baking soda and vinegar, it had helped lessen the need for "Beano"...

Steps:
- Pick over beans making sure there's no rocks or bad beans in the bag. Soak them overnight in just enough cold water to cover them. Drain water and fill pot with clean water to about an inch above beans. Bring to boil, simmer for about 10 minutes. Drain and pour beans into a crockpot. Put in the onion and salt pork. Put in the other ingredients, finish by pouring in enough water to just cover the beans. Stir and let cook slow at least 5 hours, until beans are tender. Add water if needed. If the water hasn't cooked down you can take the lid off to allow thickening.
- I love to put on a pot of these on a Saturday morning and smell them cooking all day.

MAKE-AHEAD GREEN BEAN CASSEROLE
Dedicate just a little bit of your freezer space to this crowd-pleasing casserole and save yourself some time at your next holiday meal. Make the green bean-and-mushroom favorite (no canned soup required), then freeze and forget it. To serve, just reheat (from frozen) and top with crunchy fried onions.

- Bring a large pot of salted water to a boil. Add the green beans, and cook until bright green and crisp-tender, about 10 minutes. Drain and shake off any excess moisture; set aside.
- Melt the butter in a medium pot over medium heat. Add the onions, and cook, stirring, until soft, about 8 minutes. Add the mushrooms and a pinch of salt, and continue to cook, stirring, until they are soft and most of their liquid has evaporated, about 10 minutes. Sprinkle the flour over the vegetables, and stir until all the flour has been absorbed, about 1 minute. Add the chicken broth, half-and-half, 3/4 teaspoon salt and several grinds of pepper. Bring to a boil, then reduce to a simmer and cook, stirring, until the sauce thickens and coats the back of a spoon, about 5 minutes. Remove the pot from the heat, add the green beans and stir to coat in the sauce. Transfer the mixture to a 3-quart baking dish.
- Let the casserole cool to room temperature. Wrap well with plastic wrap and foil, label and date, then freeze for up to 2 weeks.
- To serve, preheat the oven to 350 degrees F. Discard the plastic wrap and foil from the frozen casserole. Cover with new foil, and bake until warmed through, about 45 minutes. Uncover, and top with the fried onions. Continue to bake until the casserole is hot and bubbly and the onions have crisped slightly, about 20 minutes more.
GREEN BEAN CASSEROLE

Steps:
- Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
- Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
- Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

GIANT BUTTER BEAN STEW

- Drain the canned beans, reserving 200ml of the liquid. Heat the oil in a large flameproof lidded casserole dish, and cook the onions, carrots and celery until tender and the onions are soft and transparent, but not coloured. Stir in the remaining ingredients, reserving half of the chopped herbs and feta (if using).
- Heat oven to 180C/160C fan/gas 4. Cook over a gentle heat for a further 5 mins, then pour over the reserved liquid. Cover the dish and bake in the oven for 40 mins. Check occasionally that the beans are not drying out - add a little more water if needed.
- Remove the lid and bake for 10 mins more. Can be made 2 days ahead and reheated. Stir through the reserved chopped herbs, season to taste, then crumble over the remaining feta just before serving.

SATURDAY NIGHT BEAN CASSEROLE
This was one a my favorites growing up. Mom would serve French Toast, as the side for it. No syrup, coat bread and my Dad was the "french toast cooker". I know this sounds strange, but they went well with each other. And still does today!!!

- 1. Drain pineapple, reserve juice, slice in half.
- 2. In a 1 1/2 qt baking dish, mix baked beans and pineapple together.
- 3. Slice Treet into 6 triangles, place on top of beans, plice half pineapple on top of Treet, put 3 or 4 cloves in pineapple.
- 4. Mix juice, molasses and mustard together, pour over meat. Bake at 375, for 30 minutes

- Wash beans and cover with 6 cups of water; bring to a boil and boil for 3 minutes.
- Cover, let stand for 1 hour.
- Drain and throw away soak water.
- Cover beans with fresh water and boil gently until tender.
- Drain.
- Brown pork chops lightly, sprinkle with salt and pepper to taste.
- Combine beans, mustard, brown sugar, ketchup, onion, tomato sauce and molasses and pour into a casserole.
- If necessary, add more liquid such as ketchup.
- Place pork chops on top and bake in a 350 degree oven for 1& 1/2 hours.
