How to make a delicious sauce with the prairie berry - the Saskatoon berry!

4 cups of fresh Saskatoon's
2 cups of water
1 cup of white sugar
4 tablespoons cornstarch
2 tablespoons lemon juice

Steps:

  • Combine 1 3/4 cups of water, the sugar and the Saskatoon berries and boil for 15-20 minutes, until the juice is very dark and rich with flavor. Some of the berries will start to break down and this is a good thing. Saskatoon's aren't the most sauce friendly berries, they can be seedy and tough.
  • Stir the cornstarch into your remaining water add the lemon and then cook 5 minutes more or until the Saskatoon's are the texture you want.
  • You can can these in a water bath, freeze the sauce in the freezer for up to 6 months or it will keep in the fridge for a few weeks.

Adapted from a cheesecake topping recipe from a Saskatoon Berry grower. I suppose blueberries would work, but cut the sugar or mix cranberries in as well. Experiment with the spices.

2 cups saskatoon berries (fresh or frozen)
1 cup water
1/2 beef bouillon cube
1/2 teaspoon minced garlic
1 tablespoon green peppercorn
1/2 teaspoon thyme
1/2 teaspoon rosemary
2 tablespoons cornstarch
1/2 cup sugar
2 tablespoons lemon juice

Steps:

  • Place Saskatoon berries in a saucepan with water and bring to a boil.
  • Add boullion cube, garlic, peppercorns, thyme and rosemary.
  • Simmer five minutes.
  • Blend cornstarch and sugar together, add gradually to Saskatoon mixture.
  • Boil until clear and thick, add lemon juice.
  • Serve on top of roast or barbequed pork tenderloin or chicken breast.

1/2 cup rolled oats
1/2 cup orange juice
1 1/2 cups flour
1/2 cup sugar
1/2 teaspoon salt
1/4 teaspoon baking soda, and
1 teaspoon baking powder
1/2 cup vegetable oil
1 egg, beaten
1 1/2 cups saskatoon berries
2 tablespoons sugar
1/4 teaspoon cinnamon

Steps:

  • Soak rolled oats in orange juice.
  • Stir the dry ingredients together. Make a well in the centre of the dry ingredients.
  • Pour in the rolled oats mixture and the saskatoon berries.
  • Fold together being careful not to overmix.
  • Spoon the mixture into 12 large muffin cups. Mix the last measurement of sugar and the cinnamon together and spoon on top.
  • Bake at 375F for 18 to 20 minutes.

Delicious cross between a crisp and a crumb cake. Saskatoon berries (or blueberries) and cream cheese flavours go so well together. Cake will be a little crumbly to eat, but it is very, very delicious!

1 ½ cups brown sugar
1 ½ cups all-purpose flour
1 cup rolled oats
1 ½ teaspoons ground cinnamon
⅔ cup vegetable oil
5 cups fresh serviceberries
⅓ cup water
2 tablespoons lemon juice
¾ cup white sugar
2 tablespoons all-purpose flour
1 (4 ounce) package cream cheese, diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  • Whisk brown sugar, 1 1/2 cups flour, oats, and cinnamon together in a bowl; gradually stir in oil until mixture is crumbly. Press half the crumb mixture into the prepared pan; set remaining crumbs aside for topping.
  • Bake in the preheated oven until firm, about 10 minutes. Remove crust from oven and cool slightly, leaving oven on.
  • Place serviceberries and water in a saucepan. Bring to a simmer and cook for 10 minutes; stir in lemon juice. Whisk white sugar and 2 tablespoons flour together in a small bowl; stir sugar mixture into berries and cook until the mixture begins to thicken, about 3 minutes. Allow to cool for a few minutes; pour berry filling over crumb crust.
  • Sprinkle cream cheese pieces evenly over berry filling. Spread remaining crumb mixture over cream cheese layer and press gently with a potato masher.
  • Bake in the preheated oven until crumb topping is golden and filling is bubbly, about 40 minutes.
