1/2 cup creamy peanut butter
1 oz. BAKER'S Bittersweet Chocolate, melted, slightly cooled
1 Tbsp. honey
1 cup old-fashioned or quick-cooking oats
1/2 cup sliced almonds
1/4 cup whole ground flaxseed meal
1/4 cup unsweetened coconut flakes, toasted

Steps:

  • Mix first 3 ingredients in medium bowl until blended. Add all remaining ingredients except coconut; mix well. Roll into 14 balls.
  • Place coconut in pie plate. Add peanut butter balls, 1 at a time; turn to evenly coat each ball with coconut. Place in single layer on plate.
  • Refrigerate 30 min.

This is a favorite among my teenage athletes for a before-practice snack. I fill baggies with these and throw them in the freezer. The kids grab a baggie on the way to school and the mini muffins are thawed out and ready to eat before the end of the day.

1 cup whole wheat flour
1 cup all-purpose flour
1 cup chocolate chips
½ cup vanilla whey protein powder
½ cup white sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
1 cup milk
1 cup peanut butter
3 eggs
½ cup vegetable oil
½ cup plain yogurt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease mini muffin cups.
  • Combine whole wheat flour, all-purpose flour, chocolate chips, protein powder, sugar, cocoa powder, and baking soda in a large bowl.
  • Whisk milk, peanut butter, eggs, oil, and yogurt in another bowl until smooth. Pour over flour mixture and stir until batter is just blended. Fill muffin cups 3/4 of the way full.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, about 10 minutes. Cool in the muffin pans for 10 minutes before removing to a wire rack until completely cooled, about 20 minutes.

These Double Chocolate Protein Bites are no bake, vegan and gluten free and have the protein pumped up with chocolate protein powder. For two protein bites, you're getting an impressive amount of protein - 14 grams! Plus 4 grams of filling fiber and for only 200 calories.

Number Of Ingredients 6

1/2 cup rolled oats (gluten-free)
1/2 cup chocolate protein powder
1/2 cup natural peanut butter
2 tbsp unsweetened vanilla almond milk
1 1/2 tbsp maple syrup
3 tbsp dark chocolate chips

Steps:

  • In a medium bowl, mix all of the ingredients together. The mixture should be sticky and not dry. If it seems dry add more almond milk, a 1/2 tbsp at a time.
  • Roll into 12 balls. Eat 'em and love 'em! Store in the fridge or freezer.

Steps:

  • Mix all ingredients together in a small bowl.
  • Form into balls.

8 ounces butter, melted
2 cups cookie crumbs
2 1/2 cups confectioners' sugar
1 cup chunky peanut butter
8 ounces milk chocolate

Steps:

  • Line an 8 inch square pan as follows: Turn the pan over, cover with a 12 inch square of aluminum foil shiny side down, fold down the sides and corners to shape the foil, remove the foil, turn the pan over again and place the foil into the pan, pressing it carefully to fit smooth.
  • Set aside.
  • In the large bowl of an electric mixture (or any large bowl with a wooden spatula), mix the butter with the cookie crumbs, sugar and peanut butter.
  • Turn into the lined pan.
  • With the bottom of a teaspoon, smooth the mixture to make an even layer.
  • Let stand at room temperature.
  • Break up the chocolate and melt in the microwave or on top of a double boiler.
  • Stir until completely melted and smooth.
  • Pour the chocolate on to the peanut butter layer.
  • With the bottom of a teaspoon smooth all the chocolate over the bottom layer, touching the sides of the foil.
  • Refrigerate for an hour (or longer), until firm.
  • Lift the candy from the pan by lifting the aluminum foil.
  • Place the candy, still on the foil, on a cutting board.
  • Fold down the sides of the foil and let stand.
  • If you cut this into squares while cold it will crumble.
  • Let it stand for about an hour, then cut into 32 small squares.
  • Serve at room temperature.

Filling, sweet, snackable bites that don't require cooking. I'm a breastfeeding mom and have a hard time getting enough protein and calories throughout the day. I created this recipe by adapting some recipes I found online to my own taste to help boost my milk production. Each piece is 55 calories. They are very sweet! Use any nut butter or baking chips.

1 cup peanut butter
1 cup oat flour
1/3 cup vanilla protein powder
1 cup Rice Krispies
1/3 cup white chocolate chips

Steps:

  • Mix all ingredients together.
  • Line a baking sheet with wax paper and press into flat square shape a little thinner than 1/2".
  • Cut into 48 pieces and freeze for about 20 minutes.
  • Store in an airtight container in the fridge.
