COCO-NUT CARAMEL CHEWS

5 ounces soft caramel candies, 24 pieces, unwrapped
1/2 cup unsalted dry roasted peanuts
1/4 cup white chocolate chip morsels, 2 handfuls
1 1/4 cups sweetened coconut flakes
Vegetable cooking spray

Steps:

  • Line a 8 by 8-inch square microwave safe dish with plastic wrap allowing the wrap to come over the sides. Spray the prepared dish with cooking spray.
  • Spray a medium size, microwave safe bowl with cooking spray. To the prepared bowl, add the caramel candies, peanuts, white chocolate and 1/2 cup of the coconut. Give it a stir to combine. set the microwave for 1 minute 30 seconds on HIGH. Place the bowl in the microwave and cook 1 minute. Stop the microwave, stir the mixture, return to microwave to cook 30 seconds longer. Remove the mixture and stir. Scrape it into the prepared square pan. Flatten the mixture with a rubber spatula evenly. Cover the top of the candy with remaining coconut, using the rubber spatula to press it in slightly. If the mixture is too firm on top for the coconut to stick, place the mixture back in the microwave for 10 seconds, then resume pressing the coconut into the candy.
  • Allow the candies to cool completely. Remove the entire block, using the plastic wrap to help you pull it out. Using a sharp knife, cut candy into small, 1-inch squares.

1/2 cup (100 grams) margarine (use soy-free, if needed)
1/2 cup sugar
1/2 cup light brown sugar
1 egg
3/8 teaspoon Gefen Almond Extract
1 and 1/4 cups flour (I used 70% whole wheat)
1/2 teaspoon Gefen Baking Soda
1/2 teaspoon salt
1 and 1/4 cups flaked coconut or 1 cup Israeli coconut (it's drier with shorter flakes)
1/4 cup ground almonds or pecans
candied cherries, halved

Steps:

  • In a mixing bowl, cream margarine and sugars. Add egg, beating well. Beat in extract.
  • Gradually add flour, baking soda, and salt. Stir in coconut and nuts.
  • Form into balls and press down gently as they're placed two inches apart onto baking sheet lined with Gefen Parchment Paper. Place a cherry half in the center of each, pressing down slightly.
  • Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 12-14 minutes or until lightly browned.

3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

1 cup rolled oats
1 cup packed brown sugar
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
2 eggs
1 cup packed brown sugar
½ teaspoon almond extract

1 teaspoon baking powder
½ teaspoon salt
1 cup flaked coconut
1 cup maraschino cherries, drained and juice reserved
½ cup chopped pecans
6 tablespoons butter, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together 1 cup flour, oats, 1 cup brown sugar, baking soda and 1/4 teaspoon salt. Rub in the 1/2 cup of butter until crumbly. Press into the bottom of a 9x13 inch baking pan.
  • Bake for 10 minutes in the preheated oven. Remove and cool. Make the filling while the crust is baking. In a medium bowl, beat eggs, almond extract, 1 cup of brown sugar, 1 tablespoon of flour, baking powder and 1/2 teaspoon of salt until smooth. Stir in the coconut, cherries and pecans. Spread over the pre-baked crust.
  • Bake for 25 minutes in the preheated oven, until light brown. Let cool before icing.
  • To make the icing, mix together the remaining 6 tablespoons butter, confectioners' sugar and vanilla until smooth. Gradually add the reserved cherry juice until the desired consistency is reached. Drizzle over cooled bars before cutting into squares.

Steps:

  • Preheat oven to 350*.
  • Combine flour, baking soda, oats and brown sugar.
  • Cut in shortening until crumbly.
  • Press into a 9 x 13 pan, and bake for 10 minutes.
  • Beat eggs, brown sugar and almond extract thoroughly.
  • In a separate cup, mix together the flour, baking powder and salt.
  • Add to the egg/sugar mixture and blend well.

3 cups holiday cookie mix
1 cup coconut
2 teaspoons almond extract
1 egg
1 egg white
1 tablespoon water
1 -1 1/2 cup coconut
maraschino cherry, halved

Steps:

  • Dip measuring cup into mix and level off;allow to come to room temperature.
  • Heat oven to 375°F.
  • Grease cookie sheets.
  • In a large bowl,combine cookie mix,1 cup coconut,almond extract and egg at low speed until well mixed and dough forms.
  • In a small bowl,beat egg white and water until foamy.
  • Shape dough into 1-inch balls.
  • Dip in egg-white mixture;roll in coconut.
  • Place 2 inches apart on greased cookie sheets.
  • Place cherry in center,pressing down lightly.
  • Bake at 375 F for 11-14 minutes or until edges are light golden brown.
  • These overbake easily so keep an eye on them.

Just another wonderful recipe from Light & Tasty that I adjusted to our taste. Although this recipe does have the coconut in it, the cherry is the most powerful flavor. I would recommend coconut extract, instead of vanilla, if you are going for the coconut taste.

3/4 cup all-purpose flour
3 tablespoons confectioners' sugar
3 tablespoons cold butter, cut into cubes
2 eggs

1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • In food processor, mix flour and confectioners' sugar.
  • Add butter and pulse approximately 15 times, or until mixture resembles fine crumbs.
  • Press in to a 9 inch square baking dish that has been sprayed with oil.
  • Bake on 350°F for 12-15 minutes, or until lightly browned.
  • Cool on wire rack.
  • While crust is cooling, combine eggs, sugar and vanilla extract in food processor and blend well.

  • In a medium bowl, mix flour, baking powder, and salt. Add to butter mixture, stir to mix, then beat on low speed until dough comes together, about 5 minutes (see notes). Mix in cranberries and coconut.
  • Shape dough into 1-inch balls and place about 2 inches apart on buttered 12" x 15" baking sheets.
  • Bake in a 350°F regular or convection oven until cookie edges just begin to brown, 11 to 15 minutes (shorter baking time will yield a chewier cookie; longer baking time will yield a crispier cookie). 1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
3/4 teaspoon almond extract
2-1/2 cups all-purpose flour

2-1/2 cups sweetened shredded coconut
3/4 cup chopped almonds or pecans, optional
1 jar (16 ounces) maraschino cherries, drained and halved

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. 8 egg whites
2 1/4 cups sugar
2 teaspoons salt
2 teaspoons vanilla
2 1/2 cups flour, sifted
1 1/2 cups pecans, chopped
1 1/2 cups candied cherries, chopped

Steps:

  • Beat egg whites until frothy.
  • Add sugar, salt, and vanilla; beat until mixture forms soft peaks.
  • Add flour and blend well.
  • Mix Crisco and butter until smooth.
  • Fold in pecans and cherries.
  • Pour into two greased 9x9 inch pans. (or you can use muffin or mini-muffin pans).
