I am working though posting some recipes from my Portuguese cookbooks, this one is adapted from Portuguese cooking by Hilaire Walden. I plan on making this recipe but if you make it before I do, I would appreciate the feedback.

16 -20 sardines
sea salt
olive oil

Steps:

  • Rinse the sardines and remove the scales, then sprinkle liberally with the sea salt and leave for at least 1 hour.
  • Preheat your grill, broiler or barbecue so that it's nice and hot.
  • Rinse the sardines under some water and then dry them with papertowels.
  • Brush the sardines with a little olive oil and then grill for several minutes each side until they are cooked.
  • Serve immediately with a dash of olive oil drizzled over the tops, and sea salt sprinkled over them.

Sardines Portuguese-Style image

From Emeril at the Grill. A very easy and traditional way to enjoy fresh sardines. Serve this with lots of crusty bread!

2 lbs fresh sardines, scaled cleaned and rinsed
2 cups tomatoes, peeled seeded and diced (about 1 pound)
3/4 cup extra virgin olive oil
1/3 cup kalamata olive, pitted and coarsely chopped
1/3 cup fresh parsley, chopped
2 tablespoons fresh basil, chopped
2 tablespoons red onions, minced
1 tablespoon garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 cup extra virgin olive oil
1 teaspoon sea salt
1/2 teaspoon pepper
1/4 cup fresh lemon juice
1 lemon, sliced
4 roma tomatoes, halved

Steps:

  • Lay the sardines on a clean kitchen towel, and remove any excess moisture from them. Refrigerate until ready to grill.
  • Preheat a grill or broiler to medium high, and make sure the grates are VERY clean (to prevent the fish from sticking).
  • In a mixing bowl, combine the diced tomatoes, 1/2 cup olive oil, olives, parsley, basil, onion, garlic, salt and pepper. Mix well, then set aside at room temp until you are ready to serve.
  • Place the sardines on a rimmed baking sheet, then drizzle with 1/4 cup olive oil, turning to coat completely. Season with the remaining salt and pepper.
  • Oil the grill grates well, then place the sardines directly on the grates. Cook undisturbed, until the skin is crispy and slightly charred (2-3 minutes), at which point they will release easily from the grill. Turn them over, and cook for another 2-3 minutes.
  • While the fish are cooking, brush the lemon slices and tomato halves with some of the remaining olive oil, and season to taste with salt and pepper. Place on the grill with the fish, and cooked until they get char marks, about 2 minutes.
  • Place the sardines on a serving platter, drizzle with the remaining olive oil and 1/4 cup lemon juice. Serve immediately, with the grilled lemon and tomatoes, and the tomato-olive vinaigrette spooned over the top.

2 1/4 lbs fresh sardines (1 kg, cleaned & scales removed)
salt
pepper
1 tablespoon olive oil
1 1/4 cups tomatoes (peeled, seeded, diced)
2 garlic cloves
1 small onion (finely diced)
4 tablespoons fresh parsley (chopped)
4 tablespoons fresh dill (chopped)
1 cup dry white wine

Steps:

  • Preheat oven to 350°F (175°C)
  • Brush the fish with half of the olive oil and season with salt and pepper.
  • Use the rest of the olive oil to grease a shallow oven dish.
  • Combine the tomatoes, onion, garlic, parsley, dill, a little more salt, pepper and the wine and spread evenly over the bottom of the oven dish. Place the sardines on top of the tomato mixture and spoon a little of the mixture over the sardines.
  • Bake until fish is cooked (depends on the size of the sardines) between 10-20 minutes.
  • Serve immediately.

10 ounces sardines in oil, drained
1 red onion
2 red ripe tomatoes
1/2 lemon, juice of, only
1 teaspoon cumin seed, toasted
1 tablespoon parsley, chopped
2 tablespoons extra virgin olive oil
1 garlic clove, halved
4 ounces feta cheese
sliced French bread, toasted

Steps:

  • Using your hands, remove the skin and bones from the sardines - simply hold the fish under a gently running tap and rub the skins off with your thumb.
  • Gently open the fish and remove any bones. Flake the flesh and leave on one side
  • Finely dice the red onion. Blanch the tomatoes in boiling water for about 30 seconds, before plunging them into cold water. Remove their skins and seeds and finely dice the flesh.
  • Toss the tomatoes and onion with the lemon juice, olive oil, cumin seeds and parsley. Season with salt and pepper.
  • To serve, rub the toasted bread with olive oil and garlic, and heap the sardines onto the bread. Scatter over the tomato mixture and garnish with the Feta cheese.
