PAN-FRIED SARDINES



Pan-Fried Sardines image

The canned sardines are coated in cornmeal and fried up in minutes for a delicious appetizer.

1 cup extra-virgin olive oil
2 (4.2-oz) cans sardines packed in olive oil, drained, split, and patted dry
1/2 cup fine cornmeal
Coarse salt
Lemon wedges, for serving

Steps:

  • Heat oil in a high-sided medium skillet over medium heat. (Test temperature by adding a little cornmeal; the oil should bubble immediately.) Toss sardines in cornmeal until coated, shaking off excess.
  • Fry until golden brown and crisp, about 2 minutes per side. Transfer to a paper-towel-lined plate. Season with salt and serve with lemon.

2 small zucchini, halved, sliced
1 red bell peppers (either red or green or a combo) or 1 green bell pepper, chopped (either red or green or a combo)
1 small onion, chopped
2 tablespoons olive oil
1/2 teaspoon chili powder
1/2 teaspoon dried oregano leaves, crumbled
1/4 teaspoon salt
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese

Steps:

  • Saute zucchini, pepper and onion in a large skillet in oil over high heat 2 minutes; stirring frequently.
  • Add corn and seasonings; continue cooking 2 minutes or until heated through.
  • Top with cheese; cover.
  • Cook 1 minute or until cheese is melted.

2 tablespoons olive oil
1 1/2 cups broccoli florets
1 1/2 cups cauliflower florets
1 cup diagonally sliced carrot
3/4 cup snow peas
3/4 cup sliced yellow squash
1/2 cup sliced mushrooms
1/2 cup red pepper, strips
1/2 cup onion, wedges
1/4 cup red wine vinegar
1 package good seasons Italian salad dressing mix
salt and pepper, to taste (optional)

Steps:

  • Heat oil in large skillet on medium-high heat and add vegetables.
  • Cook and stir until crisp tender.
  • Stir in vinegar and salad dressing mix and cook until heated through, stirring occasionally.
  • Adjust seasoning as necessary by adding salt and pepper.

2 medium sweet red peppers, julienned
2 medium green peppers, julienned
2 medium zucchini, julienned
4 medium carrots, julienned
1 tablespoon olive oil or 1 tablespoon vegetable oil
4 cups thinly sliced red cabbage
1/4 teaspoon salt
1/4 teaspoon pepper
4 teaspoons cider vinegar or 4 teaspoons white wine vinegar
1/4 cup water
1 tablespoon sesame seeds, toasted

Steps:

  • In a large skillet, saute peppers, zucchini and carrots in oil for 5 minutes.
  • Add cabbage, salt and pepper; saute 1 minute longer.
  • Combine vinegar and water; pour over the vegetables. Saute 3 minutes more.
  • Sprinkle with sesame seeds; cook and stir for 1 minute.

A nice blend of veretables with italian seasoning and parmesan cheese. Easy enough for every day, but sophisticated enough for company. A delishious side dish. See my recipe for copycat dry Italian salad dressing mix. I have also used mushrooms and green beans in place if the snow peas.

4 cups broccoli florets (2 lg stalks)
4 cups cauliflower florets (about a half head)
1 large onion, diced
15 snow peas, halved
2 garlic cloves, minced
1 1/2 teaspoons Italian salad dressing mix (dry)
2 tablespoons butter
2 tablespoons olive oil
1/4 cup parmesan cheese
salt & pepper
2 tablespoons water

Steps:

  • Cut broccoli and cauliflower into bite sized pieces. Peel and slice broccoli stalks and cut into 1/4 inch thick coins. Steam or boil for 3 minutes. Drain and set aside.
  • in large saute pan, saute onion and garlic in butter and oil for 2 minutes. Add 2 tablespoons of water, snow peas, broccoli and cauliflower to pan. Sprinkle with seasoning blend, toss to distribute seasonings, cover and saute an additional 5 to 7 minutes.
  • When vegetables are heated through and still tender crisp add 1/4 cup grated parmesan cheese.
  • Season to taste with salt & pepper. Toss and serve hot.

This is a quick, easy one-pan dish that takes minutes to prep and cook. I made this in a grab-what-you've-got-and-cook-it moment and it was an unexpected hit. I was rather surprised at how it turned out. The sardines are more savory than "fishy" and go well with this combination of veggies. Putting the oil, seasonings, and vegetables together in a gallon zip lock baggie and tumbling to coat the vegetables distributes the flavor more evenly from the start and the dish requires less stirring in the pan to mix. I use tomato paste that comes in a tube to cut down on waste.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon roasted garlic granules
1 teaspoon salt (optional)
1 bunch collard greens, chopped
2 yellow squash, sliced
1 medium onion, chopped
2 (4 1/4 ounce) cans sardines in water, undrained
2 tablespoons tomato paste
1 tablespoon water

Steps:

  • Place seasonings and vegetables into 1 gallon zip lock bag and tumble until all the vegetables are coated thoroughly.
  • Empty coated vegetables into large skillet and saute 5 - 7 minutes over medium heat.
  • Add sardines, tomato paste and water
  • Stir thoroughly breaking sardines into small pieces.
  • Saute 5 - 7 more minutes or until vegetables are tender.
  • Serve and enjoy.
