SPAGHETTI SQUASH TOMATO BAKE



Spaghetti Squash Tomato Bake image

Number Of Ingredients 6

One 3-pound spaghetti squash
4 teaspoons extra-virgin olive oil
Coarse salt
Half a 24-ounce jar tomato-basil sauce, such as Classico® Organic Tomato & Basil Sauce
Half an 8-ounce block mozzarella, shredded (or 1 cup shredded mozzarella)
Freshly torn basil leaves, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the spaghetti squash in half lengthwise and scrape out the seeds with a spoon. Drizzle 2 teaspoons extra-virgin in each of the squash halves and sprinkle with salt. Place them flesh-side down on a baking sheet. Roast until you can fluff the squash easily with a fork, 45 to 50 minutes.
  • Flip the squash halves and fluff the "spaghetti" strands with a fork, then season with salt. Pour 2/3 cup sauce over each of the squash halves, and top each with 1/2 cup shredded mozzarella. Bake until the cheese is browned and bubbly, another 25 minutes. (You can flip the oven to the broiler at the last minute for extra cheese browning!)
  • Garnish with basil and serve.

Yellow squash is easily overlooked (cauliflower gets all the attention), but with the addition of cheese and a buttery cracker topping, you can transform it into a summer casserole perfect for a barbecue or potluck.

8 tablespoons (1 stick) unsalted butter
4 medium yellow squash, cut into 1/2-inch-thick rounds (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
1 green bell pepper, diced
Half medium onion, diced
2 cloves garlic, minced
1/2 cup sour cream
4 large eggs
8 ounces shredded Cheddar (about 2 cups)
1/2 teaspoon thyme leaves (from 10 sprigs)
4 sprigs fresh chives, chopped
1 sleeve buttery crackers, such as Ritz (about 30 crackers), crushed
1/2 teaspoon hot sauce

Steps:

  • Preheat the oven to 400 degrees F. Put a large colander inside a large bowl.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add a third of the squash to the skillet, arrange in a single layer and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Cook, tossing occasionally, until the squash begins to soften and are golden brown spots, about 5 minutes. Transfer to the colander. Repeat 2 more times using 2 tablespoons of butter for each batch and sprinkling with 1/2 teaspoon salt and few grinds of pepper. Transfer each batch to the colander.
  • Add 1 tablespoon butter to the skillet along with the pepper and onion and cook, stirring occasionally scraping up any brown bits, until the vegetables are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Let cool for 5 minutes then fold into the squash. Transfer the mixture to a 2-quart casserole dish.
  • Whisk together the sour cream, eggs, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Fold in the Cheddar, thyme and chives. Pour over the squash making sure that some of the mixture sinks down to the bottom.
  • Microwave the remaining tablespoon of butter in a medium bowl until melted. Fold in the crackers and hot sauce. Sprinkle evenly over the squash. Bake until the eggs are cooked through and the crackers are golden brown, 30 to 35 minutes. Let sit for 10 minutes before serving.

2 tablespoons extra virgin olive oil
1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced depending on what shape squash you use
2 garlic cloves, minced
1 pound ripe tomatoes, grated on the large holes of a box grater, or peeled, seeded and diced
Salt
freshly ground pepper
1 to 2 tablespoons chopped or slivered fresh basil (to taste)

Steps:

  • Heat 1 tablespoon of the olive oil over medium-high heat in a wide, heavy skillet. Add the zucchini. Cook, stirring or shaking the pan, until the zucchini is lightly seared and beginning to soften, three to five minutes. Remove from the pan, and set aside.
  • Add the remaining olive oil to the pan, then the garlic. Cook, stirring, just until fragrant -- less than 30 seconds. Stir in the tomatoes. Cook, stirring, until the tomatoes have begun to cook down, about five minutes. Return the zucchini to the pan, add salt and pepper to taste, and reduce the heat to medium. Cook, stirring often, until the zucchini is tender and translucent and the tomatoes have cooked down to a fragrant sauce. Stir in the basil, and taste and adjust seasonings. Remove from the heat and serve hot, or allow to cool and serve at room temperature.

1 butternut squash (2 pounds)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 cups chicken stock, preferably homemade
6 tablespoons (3/4 stick) unsalted butter
2 ounces pancetta, diced
1/2 cup minced shallots (2 large)
1 1/2 cups Arborio rice (10 ounces)
1/2 cup dry white wine
1 teaspoon saffron threads
1 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees.
  • Peel the butternut squash, remove the seeds, and cut it into 3/4-inch cubes. You should have about 6 cups. Place the squash on a sheet pan and toss it with the olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Roast for 25 to 30 minutes, tossing once, until very tender. Set aside.
  • Meanwhile, heat the chicken stock in a small covered saucepan. Leave it on low heat to simmer.
  • In a heavy-bottomed pot or Dutch oven, melt the butter and saute the pancetta and shallots on medium-low heat for 10 minutes, until the shallots are translucent but not browned. Add the rice and stir to coat the grains with butter. Add the wine and cook for 2 minutes. Add 2 full ladles of stock to the rice plus the saffron, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir, and simmer until the stock is absorbed, 5 to 10 minutes. Continue to add the stock, 2 ladles at a time, stirring every few minutes. Each time, cook until the mixture seems a little dry, then add more stock. Continue until the rice is cooked through, but still al dente, about 30 minutes total. Off the heat, add the roasted squash cubes and Parmesan cheese. Mix well and serve.

I know there are many squash recipes out there. And, I admit, I am not much of a casserole fan, however, sometimes a good creamy casserole is just want you need. Besides ... my favorites, zucchini and summer squash so what could be bad. Now my absolute must for this dish is Ritz crackers and fresh herbs, and to me, this is what makes the dish. It is a simple easy side dish for any day of the week.

2 1/4 lbs squash, I like mine diced in 1/2-inch cubes (I use a mix of zucchini and yellow or summer squash)
1/2 cup yellow onion, copped
1 teaspoon minced garlic
2 eggs (extra large or jumbo, 3 if medium)
1/2 cup sour cream (no low fat)
1 3/4 cups white cheddar cheese cheese (you can use any kind, I just like the white cheddar with this, 1 1/2 cup for the casserole, 1/4 cup )
1 cup fine cracker crumb (Ritz)
1 large tomatoes, cut in slices (I like a large beefsteak)
2 tablespoons melted butter (no margarine)
1 tablespoon fresh parsley
1/2 teaspoon dried thyme
1 tablespoon olive oil
salt
pepper

Steps:

  • Vegetables -- In a medium saute pan, add the olive oil and bring to medium heat. Add the onion, garlic and squash and saute until both the squash and onion become tender. Don't cook on high, you don't want to brown them, you just want to slowly soften them. It should take around 5 minutes.
  • Sauce -- In a small bowl beat the eggs well and add the sour cream, parsley, cheese, thyme, salt and pepper and mix well.
  • Casserole -- After the vegetables are soft, remove from the heat and stir in the parsley, crackers, butter and then the egg / sour cream mixture.
  • In a medium casserole dish, spray with Pam or any non stick spray and pour in the squash mixture. Top with the remaining cheese and cracker crumbs.
  • Bake -- 425 degrees (middle shelf) for 15 minutes. Top with the tomato slices and a little salt and pepper. Cook another 10 minutes until golden brown and bubbly. ENJOY!

Another Prevention Magazine recipe with a few changes. Since it was in my old recipe box, I presume that this is a quite a few years old, but it is still a great recipe. It is a very basic primavera but I love the creamy ricotta vs the heavy cream sauce. You can change up the "veggies" if you want, but this is pretty classic. Try to get a good quality tomato sauce which can really make a difference in the flavor. If you want, serve with some grilled chicken or steak; or just a nice green salad and some fresh baked bread. It is a great hearty casserole.

6 ounces zita pasta
1 cup broccoli, cut into bite size florets
1 cup cauliflower, cut into bite size florets
1 cup carrot, cut lengthwise and then cut in 1-inch pieces on an angle
8 ounces asparagus, cut on an angle in 1-inch pieces
1 zucchini, cut lengthwise and then sliced
1 yellow squash, cut lengthwise and then sliced
3/4 cup mixed mushrooms, thick sliced
1 small onion, cut in half and thin sliced
1 large tomatoes, thin sliced
26 ounces tomato sauce
pasta water
4 ounces low fat mozzarella, shredded
3 tablespoons parmesan cheese, grated
3/4 cup low-fat ricotta cheese (low or reduced fat, no NO fat)
1 -2 teaspoon garlic, minced
1 1/2 teaspoons italian seasoning
1 pinch red pepper flakes
salt
pepper

Steps:

  • Pasta -- Cook pasta according to package directions. Make sure to use plenty of salted water on medium heat in a large pot. Four (4) minutes before the pasta is done (according to directions) add the broccoli, cauliflower, and carrots right in the pot with the pasta and cook 2 minutes. Then to the same pot, add the mushrooms, squash (zucchini and yellow), asparagus and onions. Cook another 2 minutes. Drain well.
  • Sauce -- As the pasta and vegetables are draining, add the tomato sauce, garlic, red pepper flakes, Italian seasoning and a pinch of salt and pepper to the pot and mix well and put back on the stove on medium low heat. Add the pasta and vegetables back in a mix to combine. Check for any additional seasoning if necessary (salt and pepper).
  • Bake -- In a 13x9" pan, spray well with a non-stick spray. Add the pasta and vegetables and spread out evenly. Top with the ricotta and spread to cover the top of the dish. Then top with the tomato slices, next is the mozzarella, and lastly, the parmesan. Bake at 425 degrees on the middle shelf, uncovered for 15-20 minutes until bubbly and golden brown on top.
  • Serve -- ENJOY! A nice hearty casserole.

8 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 egg, lightly beaten
1 cup low-fat sour cream
1 sleeve buttery round crackers (such as Ritz®), crushed, divided
2 cups shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash and onion, cover, and steam until squash is tender and easily mashed with a fork, 10 to 15 minutes.
  • Whisk egg and sour cream together in the prepared casserole dish; add squash, onions, 2/3 the crackers, and 2/3 the Cheddar cheese. Stir with a fork. Cover the squash mixture with remaining Cheddar cheese and crackers.
  • Bake in the preheated oven until cheese is melted and crackers are lightly browned, about 30 minutes.

2 pounds yellow squash or zucchini (older larger squash may be used here), cleaned and cut into 1/2-inch rounds
1 yellow onion, peeled and cut into large dice
1 1/2 tablespoons salt
1 1/2 cups fresh breadcrumbs
3 large eggs, lightly beaten
1 cup heavy cream
1 teaspoon fresh thyme, leaves
1 cup shredded sharp cheddar cheese
1 teaspoon freshly ground black pepper
Pinch cayenne, pepper

Steps:

  • Preheat the oven to 350 degrees. Place squash and onion in a medium saucepan, and cover with water. Add 1 tablespoon salt, and bring to a boil. Reduce heat, and simmer until tender, about 20 minutes. Drain well, and transfer to a large bowl.
  • Add 1 cup breadcrumbs, eggs, cream, thyme, 1/2 cup cheese, black pepper, cayenne pepper, and remaining teaspoon salt. Gently stir to combine. Pour into a 2-quart shallow baking dish. Spread remaining 1/2 cup cheese and remaining 1/2 cup breadcrumbs over top. Cover, and bake until set, about 30 minutes. Uncover, and continue baking until top is browned, about 10 minutes more.
