SERRANO-WRAPPED SHERRY SHRIMP

12 large prawns or jumbo shrimp, tail on and deveined
4 cloves garlic, finely chopped
1 lemon, juiced
1 stem fresh oregano or marjoram, leaves stripped and finely chopped
EVOO, for drizzling
Hot sauce, such as Tabasco
Fat handful fresh flat-leaf parsley leaves, chopped
Salt and freshly ground black pepper
12 slices Serrano ham
Olive oil, for sauteing
1/2 cup dry sherry
2 tablespoons butter

Steps:

  • Toss the shrimp with the garlic, half of the lemon juice, the oregano, a fat drizzle of EVOO, a few shakes hot sauce, the parsley and some salt and pepper. Wrap each shrimp in a slice of ham.
  • Drizzle some olive oil in a large skillet and heat over medium-high to high heat. Add the shrimp and cook until the ham is brown and crisp and the shrimp are firm and pink at the ends. Remove the shrimp to a platter. Pour the sherry in the pan, swirl, then add the butter and the remaining lemon juice, and swirl to gloss the sauce. Pour the sauce over the shrimp and serve.

SHRIMP IN GARLIC SAUCE

This is, by far and bar none, the most popular Chinese seafood dish I know. In fact, it is better than its restaurant counterpart because it uses real garlic, not dried garlic reconstituted in water.

1 pound large shrimp (21 to 25 shrimp per pound), peeled
1 egg white
1/4 cup cornstarch
1 to 2 tablespoons water
2 cups plus 1 tablespoon vegetable oil
1/4 cup chicken broth
1/4 cup apple cider vinegar
1/4 cup ketchup
3 tablespoons black soy sauce
2 tablespoons dry sherry
8 garlic cloves, crushed and finely minced
2 tablespoons finely minced fresh ginger
5 tablespoons sugar
1 teaspoon chili paste, or to taste and tolerance
1/2 cup sliced fresh water chestnuts, optional
1 tablespoons cornstarch mixed with 3 tablespoons cold water
1/2 cup sliced scallions, on the diagonal in 1/2-inch pieces

Steps:

  • Using a cleaver or knife, slice the shrimp from the back, leaving a small donut-like hole in the center, essentially butterflying the shrimp. Be careful not to cut all the way through the shrimp. Rinse away any veins under cold water. Drain well.
  • Put the shrimp in a bowl and add the egg white, cornstarch and 1 to 2 tablespoons of water. Mix well. The consistency should be silky and the color milky.
  • In a large wok, heat 2 cups of the oil to 280 degrees F, or place 1 shrimp in the oil and when bubbles rise from it like Champagne bubbles in a glass, add the rest of the shrimp. Turn the shrimp gently in the poaching oil. When they are white and fluffy, remove them with a stainless steel strainer or brass metal strainer. Put the cooked shrimp in a colander to drain.
  • For the sauce. In a small saucepan, mix the chicken broth, vinegar, ketchup, soy sauce, sherry, garlic, ginger, sugar, and chili paste. Stir well. Bring the garlic sauce to a boil, lower the heat to a simmer.
  • In a clean wok, heat the remaining 1 tablespoon of oil to smoking. Add the sliced water chestnuts and stir-fry for 30 seconds. Add the garlic sauce, stir, and bring to a boil. Stir in the cornstarch mixture and bring to a boil, stirring until thickened. Add the shrimp. Toss and stir 3 times until well coated. Stir in the sliced scallions and serve.

SHRIMP AND 'SHROOMS WITH SHERRY

1/2 cup fresh flat-leaf parsley
1/2 medium red onion, coarsely chopped
2 fresh bay leaves
6 cloves garlic, peeled
1 tablespoon black peppercorns, a palmful
1 tablespoon orange zest
About 2 tablespoons fresh thyme leaves
1 red chile pepper, chopped
3 tablespoons extra-virgin olive oil
1 1/4 pounds very small white mushrooms
1 pound large shrimp, peeled and deveined
About 1/3 to 1/2 cup dry sherry
2 tablespoons butter

Steps:

  • In a food processor, process the parsley, onion, bay leaves, garlic, peppercorns, orange zest, thyme leaves, and chile into a paste.
  • Heat the extra-virgin olive oil, 3 turns of the pan, in a large skillet over medium-high heat. Lightly brown the mushrooms for about 8 to 10 minutes, and then add the paste to the pan and stir. Add the shrimp and cook until they are pink and firm. Deglaze the pan with sherry, add the butter, and toss to melt. Serve immediately.

This recipe is from Spain. Sherry or lemon juice is not always used, but either one adds a nice contrast to the richness of the oil and garlic. You can easily substitute squid or scallops for the shrimp.

1 tablespoon vegetable oil
3 pounds medium shrimp in shell (31 to 35 per pound), rinsed, peeled, and shells reserved
8 cups water
1 onion, halved, plus 1/2 cup minced onion
1 carrot, halved
1 Turkish or 1/2 California bay leaf
2 fresh parsley sprigs
1 fresh thyme sprig
1/2 teaspoon whole black peppercorns
1 1/2 teaspoons salt
1 1/2 tablespoons all-purpose flour
1 stick (1/2 cup) unsalted butter, cut into tablespoon pieces and softened
1/2 cup medium-dry Sherry
2 teaspoons fresh lemon juice, or to taste

Steps:

  • Heat oil in a 4- to 5-quart heavy pot over moderately high heat until hot but not smoking, then cook shrimp shells, stirring, 1 minute. Add water, onion halves, carrot, bay leaf, parsley, thyme, peppercorns, and salt and simmer, uncovered, 30 minutes.
  • Pour stock through a large sieve lined with a dampened paper towel into a large bowl, discarding solids. Return stock to cleaned pot. Add shrimp and cook over high heat (stock will be hot but not boiling), stirring frequently, until just cooked through, about 2 minutes. Transfer shrimp with a slotted spoon to a large shallow baking pan, spreading in 1 layer to cool quickly. Boil stock until reduced to about 1 1/2 cups, 30 to 40 minutes, then transfer to a bowl.
  • Stir together flour and 1 1/2 tablespoons butter until a paste forms, then set aside. Cook minced onion in 1 tablespoon butter in cleaned pot over moderately low heat, stirring, until softened, about 3 minutes. Add Sherry and boil until liquid is reduced to about 1/3 cup, about 2 minutes. Add shrimp stock and bring to a simmer, then reduce heat to low and whisk in remaining 5 1/2 tablespoons butter until just incorporated. Whisk in flour paste, bit by bit, and simmer sauce, whisking, until slightly thickened, about 2 minutes. Add lemon juice, shrimp, and salt and pepper to taste and cook over moderate heat, stirring, until shrimp are just heated through, about 1 minute.

1 slice thick-cut bacon, cut into 1/4-inch strips (optional)
2 tablespoons olive oil
2 ounces cremini mushrooms or 2 ounces button mushrooms, sliced into quarters
1/2 lb large shrimp, peeled and deveined, leaving tails attached (about 16 shrimp)
2 garlic cloves, thinly sliced
2 tablespoons medium-dry sherry
1 tablespoon fresh lemon juice
1/4 teaspoon red pepper flakes

Steps:

  • Cook bacon in lg. skillet, over med. heat until brown and crispy. Remove from skillet with slotted spoon.
  • Drain on paper towels. Set aside.
  • Add oil to bacon drippings in skillet.
  • Add mushrooms. Cook and stir 2 minutes.
  • Add shrimp and garlic. Cook and stir 3 minutes, or until shrimp turn pink and opaque.
  • Stir in Sherry, lemon juice, and red pepper flakes.
  • Remove shrimp to serving bowl with slotted spoon.
  • Cook sauce 1 min., or until reduced and thickened.
  • Pour over shrimp.
  • Sprinkle with reserved bacon.
