WONDERFUL SALSA WITH PEACHES
I am a salsa lover and Paul Newmans has a peach salsa that is great, so I went in search of a peach salsa (more tomato then peaches) and couldn't find any. I canned Wonderful Salsa, recipe #9272 last year and decided to try and can my own peach salsa. I would like to thank Jazze22 for sharing her orginal recipe. I thought that with the changes and the fact that I coudln't find one posted, I should post it in case others might be looking for a peach salsa. To reduce the heat, take out the veins and seeds in the peppers. Remember to wear gloves when handeling the peppers. I hope you enjoy it as much as I do.

PERI PERI PORK MEDALLIONS AND LEMON
Peri peri chili sauce is a Portuguese condiment, which is also popular in both Brazi and parts of Africa. It is sometimes known as piri piri or pili pili and is often served with chicken or fish, though I like it best with pork. Peri peri sauce is now available in most supermarkets.

Steps:
- Very thinly slice the lemons and very lightly brush them with oil. Cut the pork fillet into rounds 1cm thick and brush them with 1 Tbsp of the peri peri sauce.
- Place a lemon slice on top of each piece of pork and pin in place with a cocktail stick. You will need to soak the sticks for 20 minutes before using them. Cook over hot coals, lemon side down first, for 2-3 minutes on each side until well browned and cooked through - the lemons should look a little charred. If you don't have a barbeque, cook under a pre heated grill for 4-5 minutes on each side.
- Arrange on a serving platter with a little bowl of the remaining sauce for drizzling over. Serve with stir fried mixed veggies.

- Blanch, peel, pit and chop peaches.
- Measure 6 cups.
- Combine peaches, onion, peppers, cilantro, vinegar, honey, garlic, cumin and cayenne pepper in a large stainless steel or enamel saucepan.
- Bring to a boil, stirring constantly to prevent scorching.
- Boil gently, stirring frequently, 5 minutes.
- If bottling, process in usual way, processing for a further 10 minutes.
- This will make approximately 4 pints of Salsa.

- Lay chops on top.

- Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
- Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
- Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.

- Place tomatillos and jalapeno peppers in a food
- processor, process 1 minute or until smooth.
- Heat a large dutch oven coated with a cooking spray
- over medium-high heat. add pork, brown on all sides.

PORK MEDALLIONS IN MUSHROOM MARSALA SAUCE

- Trim the tenderloins of silverskin and any excess fat. Cut the tenderloins into 2-inch-thick medallions. Flip each medallion onto a cut side and press down with the palm of your hand to flatten slightly. Season the meat with 3/4 teaspoons salt and 1/4 teaspoons black pepper.
- Heat the olive oil and 1 Tbs. of the butter in a large sauté pan over high heat. When the butter is melted and foaming, add half of the meat and sear until nicely browned, 2 to 3 minute Flip and cook the other side until the meat is well browned and slightly firm to the touch, about another 2 minute Transfer to a plate and repeat with the remaining pork.
- Melt the remaining 2 Tbs. butter in the pan. Add the shallots and a pinch of salt and sauté for about 30 seconds, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Add the mushrooms and sauté until all of the mushroom liquid has evaporated and the mushrooms are golden, about 3 minute Season with 1/2 teaspoons salt, sprinkle with the flour, and add the Marsala. Once the Marsala has almost completely evaporated, add the chicken broth and reduce by half, about 3 minute Stir in the cream and parsley, return the pork and any accumulated juices to the pan, and cook, flipping the pork once, until it's firm to the touch and still a little pink in the middle (cut into a piece to check), 2 to 4 minute Taste for salt and pepper and serve.

- Preheat the oven to 350 degrees F.
- Make the glaze: Put garlic and rosemary in a small bowl. Add the vinegar, honey, olive oil, mustard, and salt and pepper, to taste, and stir to combine.
- For the pork: Slice the tenderloin into 1-inch thick medallions (rounds). Cover the bottom of a medium skillet with a light film of canola oil and heat over medium-high heat until hot. Add the pork slices in 1 layer, season with salt and pepper, and sear for 1 minute. Turn and sear for 1 more minute, until lightly browned. Transfer the slices in 1 layer to a shallow baking dish.
- Pour the glaze over the slices and turn them to coat.
- Roast for 8 to 10 minutes, until a thermometer inserted reaches 140 degrees F for medium. Remove from the oven and keep warm, loosely covered until ready to serve.
- To serve place pork medallions on a platter and spoon the balsamic-honey glaze over them. Garnish the platter with the rosemary sprigs.

PORK MEDALLIONS WITH GRAPES AND PEARL ONIONS
This recipe is from my good friend, Ginny, who is an excellent cook. You can change the fruit with the season for this recipe: Peaches would be good in early summer; fresh figs in late summer; apples and pears in the winter. The one thing you need to calibrate is the time it takes for the fruits to cook; so add the fruit earlier if you're using apples or pears, or later if you're using peaches or figs. To Make Ahead: Prepare Steps 1-3 and freeze until ready to use. Defrost pork chops overnight, reheat, and then complete Step 4.

- Bring a medium pot of salted water to boil, add the onions, and cook until almost tender but not falling apart (about 8-10 minutes). Drain and set aside, reserving 1 cup of the onion-cooking broth.
- Cut each pork tenderloin into 6 chunks. With a meat mallet, pound each to a thickness of about 1/2 inch.
- In a large skillet, over medium heat, melt 2 tbsp of the butter in the olive oil. Spread flour on a plate for dredging. Season the pork with 1/2 tsp of salt, and lightly dredge it in the flour. Brown the pork on both sides, about 2 minutes per side, and remove to a plate.
- Add the onions to the skillet, and let them cook a few minutes until lightly carmelized. Add the white wine, and bring to a boil. Once the wine is almost reduced, add the sage, the reserved onion-cooking broth, and the remaining 1/2 tsp of salt. Let the sauce simmer for a few minutes, until it is reduced by almost half. Whisk in the vinegar and the remaining 2 tbsp of butter. Add the pork back to the skillet with the grapes, and simmer until the sauce is thickened and grapes just begin to soften (about 3-4 minutes).

- Trim tenderloin of fat, etc.
- Cut pork tenderloin into medallions about 3/4" thick.
- Mix together green chilies, chile powder, ground cumin, black pepper, cayenne, salt, onion powder, garlic, olive oil, and cilantro; process in blender or food processor until it becomes a smooth paste.
- Rub each side of medallion with paste and allow to rest at room temperature for approximately 30 minutes.
- Meanwhile, mix together peaches, black beans, balsamic, jalapeno, red bell pepper, cilantro, and sugar.
- Squeeze in juice of lime wedge and adjust jalapeno and sugar flavorings to taste.
- Grill pork medallions over medium mesquite coals (or use mesquite smoking chips with other coals or gas grills), cooking about 4-5 minutes per side, or until meat is cooked through.
- Serve salsa spooned over medallions.
