NEW MEXICO GREEN CHILE MEATLOAF
Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
- Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Let cool in the pan for 10 minutes before transferring to a serving dish.

SANTA FE GREEN CHILE MEATLOAF
For this recipe, a classic meatloaf gets a New Mexican style pick-me-up from the earthy, smoky tones imparted from fresh Hatch green chile peppers (from New Mexico) and a spicy topping that offers a bit of extra "heat".

- 1. Preheat oven to 400°F.
- 2. In a small bowl, thoroughly combine the ketchup, hot sauce and chile powder. Cover bowl and keep in refrigerator until ready to use.
- 3. Combine all of the meatloaf ingredients until well blended, and pat it into a 9x13-inch baking dish. Bake for 45 minutes, uncovered. Spread the spicy ketchup across the top of the meatloaf, and continue baking another 15 minutes. Let stand 10 minutes before serving.
DEE'S SANTA FE GREEN CHILE STEW
This is my DD's recipe that she shared with me when she was living in Santa Fe. I am sure that every family in New Mexico has their own favorite version, but this is my favorite. It can also be cooked in a crockpot, but I like the texture of the stew, cooked on top of the stove.

Steps:
- Sprinkle the pork with flour to lightly coat.
- In a large pot (I use a Dutch oven), brown the meat in oil.
- Add chiles, chicken stock, vegetables, salt& pepper, and water if needed.
- Bring to a boil, lower heat to medium low.
- Cover and simmer until meat and vegetables are done, and the stew is slightly thickened (about 3 hours).
- You may cook in a crockpot for 6-8 hours.
- Serve with flour tortillas.

- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion, bell pepper, chili powder, cumin, and garlic to pan; sauté 1 1/2 minutes or until onion is tender. Stir in chipotle chile; sauté 30 seconds. Remove from pan; cool. Combine onion mixture, turkey, turkey breast, breadcrumbs, 1/3 cup salsa, oregano, bacon, and egg whites in a large bowl.
- Place half of turkey mixture in an 8 x 4-inch loaf pan coated with cooking spray. Arrange cheese over top, leaving a 1/2-inch border around outside edges. Arrange remaining turkey mixture over cheese, pressing edges to pack. Spread the remaining 1/3 cup salsa over top of meat loaf. Bake at 350° for 1 hour and 25 minutes or until a thermometer registers 165°. Let stand 10 minutes. Remove from pan; cut into 12 slices.

- Heat olive oil in a large heavy skillet. Add onion, leek, celery, carrot. Saute, stirring often, for about 10 minutes until vegetables are soft but not brown. Set aside to cool, then add the diced Poblano peppers. Refrigerate for about one hour.
- In a large bowl, combine the spices and salt and pepper, then add the egg and half-and-half and 1/4 cup of the enchilada sauce. Mix well.
- Add the ground turkey and Panko bread crumbs to the egg mixture. Mix lightly. Then add the cooled vegetables. Mix thoroughly, preferably with your hands.
- On the prepared rimmed baking sheet, divide the meatloaf mixture in half and shape it into two loaves approximately 8 x 4 inches.
