I found this recipe when trying to decide what I could do with what I had in my fridge while making something tasty. This fit the need and it's also pocketbook friendly as well as family friendly. Serve with rolls and a nice tomato or cucumber salad, a complete meal in short order. Feel free to add any veggies you have on hand.

Number Of Ingredients 7

1 lb ground beef
1 small onion, diced
1 (28 ounce) can diced tomatoes, undrained
1 cup diced carrot
1 cup diced celery
1 cup cubed peeled potato
salt and pepper

Steps:

  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add tomatoes, carrots, celery and potatoes. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. Sprinkle with salt and pepper.

1 cup textured vegetable protein
1 tablespoon ketchup
7/8 cup boiling water
20 ounces shredded potatoes or 4 large potatoes, peeled grated
1 tablespoon oil
1/2 cup onion, chopped
2 tablespoons parsley, chopped finely

Steps:

  • Mix the first three ingredients and let stand 10 minutes.
  • Heat a large skillet and add the oil. Then over med high heat saute the TVP with the onion.
  • Then mix the TVP and the potatoes. If needed add a bit more oil, about 1 to 2 tbs, to the hot skillet.
  • Pat mix into an even layer, reduce heat and cook 10 to 15 minutes. Turn over carefully and cook other side. Sometimes it is easier to cut the hash into 4 wedges to turn.
  • sprinkle with parsley and cut into wedges to serve.
  • Note if you grate your own potatoes make sure they are long thin strands.

1 cup finely chopped cooked beef
1 cup finely chopped cooked potato
1 (5 ounce) can evaporated milk
1/4 cup finely chopped onion
2 teaspoons snipped parsley
2 teaspoons Worcestershire sauce
1 teaspoon salt
1 dash pepper
1/2 cup finely crushed rich round cracker
1 teaspoon butter or 1 teaspoon margarine, melted

Steps:

  • Combine beef, potato, evaporated milk, onion, parsley, Worcestershire, salt and pepper.
  • Turn into a 1-quart casserole dish.
  • Toss cracker crumbs with melted butter.
  • Sprinkle on top of the casserole.
  • Bake at 350°F for 30 minutes or until heated through.

4 large potatoes, cut in chunks
4 large carrots, sliced
1 medium onion, chopped
1 can corned beef

Steps:

  • Boil potatoes, carrots and onion in water- until the potatoes split.
  • Pour off about 2/3 of the liquid into a bowl (if needed for later).
  • Add corned beef to pot.
  • With mixer, mix everything to the consistency of mashed potatoes.
  • (if too dry.. add more liquid) Season with salt and pepper.
  • (I also like ketchup).

1 1/2 lbs chicken, preferably white meat,trimmed and cubed
1 1/2 lbs pork, trimmed and cubed
3 -5 potatoes, peeled and cubed
1 can tomatoes
2 -3 carrots, skinned and grated
1 onion, diced

Steps:

  • Heat a small amount of vegetable oil in a stock pot, ad d onions and garlic, season thoroughly with salt and lots of pepper, cook until clear, then add meat.
  • Sear well, stirring to make sure all pieces heat evenly.
  • Add tomatoes and appx 4-6 cups of water.
  • Bring to a boil, add carrots.
  • Boil for appx 1 hour, then add potatoes.
  • Add seasonings if desired (I use a barbecue rub, or simply add my favorite bbq sauce, 1/2 cup or so. The real flavor comes from the meat and tomatoes, though).
  • Cook, loosely covered, on medium heat for appx 3 hours until meat has fallen apart, tomatoes are completely cooked away, and potatoes have cooked apart.
  • Stir continuously while cooking to keep from burning.
  • Serve over rice.

1/4 cup snipped fresh parsley
2 teaspoons Worcestershire sauce
1 (6 ounce) can evaporated milk
1/4 cup fine dry breadcrumb
1 tablespoon butter, melted

Steps:

  • In frying pan, combine and cook beef, potatoes, onion, parsley, and Worcestershire sauce, and evaporated milk.
  • Remove from heat and turn out into a 1 qt casserole dish.
  • Mix bread crumbs with melted butter and sprinkle on top.
  • Bake in oven at 350F for 30 minutes.
