- Preheat the oven to 400°F. Line a rimmed baking sheet with heavy-duty aluminum foil and spray with nonstick spray.
- Lay the crackers (salt-side down) in a single layer until the sheet is covered.
- Melt the butter in a nonstick pan set over medium-low heat.
- Add the brown sugar and bring to a rolling boil.
- Boil for 4-5 minutes, until lighter in color of bubbly.
- Pour the butter/sugar mixture carefully over the crackers.
- Bake the toffee for 5 minutes.
- Let the toffee cool for 1-2 minutes, then sprinkle the chocolate chips on top.
- Let sit for a few minutes until the chocolate melts (you might need to put the pan in the oven for 30 seconds or so to warm the chocolate chips).
- Carefully spread the chocolate over the crackers until smooth and covers every cracker.
- Let cool to room temperature, then cool in the refrigerator until cold.
- Break the crackers into rough pieces.

- CARAMEL: Position a rack in the center of the oven and preheat the oven to 350ºF. Line a baking sheet with a silicone mat or parchment paper, trust me, you don't want to skip this! Place the saltine cracker side by side, in a single layer on the baking sheet; set aside. Melt the butter and brown sugar together in a saucepan until the sugar dissolves, stirring as required until the caramel comes to a boil. Once it boils, don't stir it, just let it cook for 3 minutes. Carefully pour the caramel over the saltines and make sure all the crackers are covered in the caramel, using an offset spatula. Bake for 8 minutes.
- CHOCOLATE: Pull the baking sheet out of the oven and immediately top with the chocolate chips. Let the chocolate sit for a minute and heat through, then spread using an offset spatula. If all of the chocolate doesn't melt right away, pop the baking sheet back in the oven for roughly 1 minute or until the chocolate spreads easily.
- DECORATE: Top with chopped nuts and heath toffee bits. Melt the white chocolate in the microwave (see notes) and drizzle on top; sprinkle with Maldon sea salt if desired. Let cool for several minutes before placing it in the refrigerator to cool for at least 2 hours or pop it into the freezer for roughly 30 minutes if you want to have them ready to eat quicker!

- Pre-heat the oven to 325°F.
- Line a medium sized cookie sheet with aluminum foil and then spray it with non-stick cooking spray.
- Place the saltine crackers out on the cookie sheet until it's completely covered. (If you overlap the crackers, they'll be thicker in the end)
- Melt the butter and sugar over medium low heat. Then bring to a boil for 3 minutes, stirring constantly.
- Pour the bubbly mixture evenly over the saltine crackers. If you missed any big areas use a knife to spread it out, but it should settle evenly when it bakes.
- Bake it at 325°F for 8 minutes.
- Remove the cookie sheet from the oven and then sprinkle the chocolate chips evenly on top.
- Return the cookie sheet to the oven for another 1 to 2 minutes to help melt the chocolate chips.
- Use a spatula to spread the melted chocolate evenly.
- Decorate with sprinkles, M&M's or chopped pecans.

- Combine the butter and brown sugar in a saucepan over medium heat to form the toffee. Stir constantly until the mixture reaches a temperature of 250-268 degrees (I highly recommend using a candy thermometer) or until the mixture runs off a spoon in thick, rope-like strands.

- Preheat oven to 350F. Line a 9 x 13 pan or similar with aluminum foil and spray it very well with cooking spray. Do not try to make this without using foil; you will hate yourself.
- Place saltine crackers in a single layer on the bottom of the pan. Some recipes suggest using a jelly roll pan which may allow for a slightly bigger batch, i.e. 40 crackers, but it's a bit too shallow for my comfort zone and didn't want any bubble-overs.
- In a saucepan on the stovetop, combine butter and sugar and bring to a boil while stirring constantly.
- Once a boil is reached, reduce the heat and simmer, uncovered, for 3 to 5 minutes or until mixture has thickened some. Take care not that your simmer is not too fast/too high because it will be prone to bubbling over or scorching. Stir mixture frequently while it simmers to avoid bubbling over or scorching. The taste of burnt butter and sugar is awful so don't burn it.
- After mixture has thickened a bit, remove it from the heat, wait 30 seconds, add the vanilla extract and stir.
- Pour mixture over the prepared pan with the saltine crackers.
- Bake in for 5- 7 minutes, or until toffee/liquid becomes bubbly.
- After removing the pan from the oven, let it rest for 3 to 5 minutes.
- Sprinkle on the chocolate chips and wait for 3 to 5 minutes, letting them soften and melt a bit, and then spread and smooth them into an even layer with a spatula. * (see note below)
- Let cool very well and if desired for expediting purposes, refrigerate or freeze until hardened. Break into pieces the size of your choice.
- Store in an airtight container at room temperature for up to 2 weeks or in the freezer for up to 4 months.

- Preheat oven to 400 degrees. Line a 9x13 baking dish with parchment paper, carefully folding the edges so you can easily lay the crackers flat.
- Line baking dish with crackers. If using Ritz, the circles won't line up perfectly, so break a few into halves and do a second layer to cover holes. It doesn't need to look pretty.
- In a medium saucepan, heat butter and brown sugar over medium heat, stirring frequently until fully combined and smooth. Allow it to reach 285 degrees using a candy thermometer and then let is stay at this heat for 3-4 minutes.
- Remove from heat and whisk in vanilla. Mixture will spit a little, this is normal. Pour over crackers while hot. It will start to set immediately.
- Bake for 8 minutes. Remove and turn off oven.
- Sprinkle top with chocolate chips, then return to the warm oven (oven is off, but warm). Allow to sit in warm oven for 1-2 minutes or until chocolate starts to glisten slightly. Using an offset spatula to smooth it out.

- Preheat oven to 325°F. Line 9×13" jelly roll pan with aluminum foil. Spray foil with cooking spray and then line pan with saltine crackers.
- Place butter in a medium-sized pot over low medium/low heat. Stir until butter is slightly melted, then add sugar. Once butter is melted, bring to a boil over medium-heat for 3 minutes, or until it thickens and sugar has dissolved. Stir constantly. You want the butter and sugar to be combined and turn an amber caramel color.
- After 3 minutes, remove pan from heat and pour evenly over the saltine crackers. Spread mixture with a knife. Place pan in oven and bake for 7-8 minutes or until lightly golden brown. Do not over bake. The mixture will spread evenly over the crackers as it bakes.
- Remove pan from oven and then take foil off of the pan. Allow the toffee to cool and then break pieces off of foil.

EASY CRACKER TOFFEE
Steps:
- Preheat oven to 400 degrees F. Spread parchment paper over a cookie sheet. {It's actually a jelly-roll pan- a cookie sheet with sides. Sides are important!}
- In a saucepan combine the sugar and the butter. Bring to a full, rolling boil over medium-high heat, stirring occasionally. A full, rolling boil is one that doesn't let up once you stir it. Once it's really boiling, set your timer for 3 minutes and stop stirring.
- After 3 minutes, immediately pour over saltines. Do your best to pour some on each cracker, but don't worry about covering each one completely.
- Bake at 400 degrees F (205 degrees C) for 7 minutes. Once it's been in the oven for 2-3 minutes, it will start to bubble. This is when the candy will cover the crackers on its own. They'll also move around a bit, so you can see why it's important to have a bit of excess parchment paper up around the sides.
- Remove from oven and sprinkle chocolate chips over the top. Put back in the oven for 2 minutes. Remove from oven and let sit for 1-2 minutes.
- Spread melted chocolate over toffee and top with chopped nuts. Cool completely and cut into pieces. Enjoy!
EASY SALTINE CRACKER TOFFEE
Steps:
- Preheat oven to 400 degrees.
- Line a baking sheet with parchment paper leaving a bit of overhang and line the sheet with saltines.
- In a small saucepan, melt the butter and then add the light brown sugar stirring to combine. Bring the mixture to a boil and continue boiling for approximately 3 minutes or until the mixture is deep caramel in color. Pour the boiling mixture (please be careful!) onto the saltines and spread to cover evenly.
- Bake the saltines in a 400 degree oven for 5 minutes. Remove from the oven and sprinkle chocolate chips over the saltines.
- Let the toffee sit for a few minutes to allow the chocolate to melt and then spread evenly over the toffee using an offset spatula or a butter knife. Sprinkle the chopped pecans on the chocolate and let cool completely.

- Preheat oven to 350 degrees.
