20 (3/4-ounce) slices (about 1 pound) Land O Lakes® Deli American quartered
1/4 cup milk
1/2 cup thick and chunky salsa
Tortilla chips or blue tortilla chips

Steps:

  • Combine cheese and milk in saucepan. Cook over medium heat, stirring occasionally, 7-10 minutes or until cheese is melted. Add salsa, mix until well combined.
  • Pour mixture into small slow cooker. Serve warm with tortilla chips.

4 to 5 medium tomatoes or 10 to 15 plum tomatoes
5 fresh jalapenos
3 tablespoons olive oil
1 medium onion, minced
2 cloves garlic, minced
1 teaspoon salt
8 ounces mozzarella
Tortilla chips or heated fresh corn tortillas, for serving

Steps:

  • Preheat broiler. Spread a sheet of aluminum foil over broiler pan, place the tomatoes and jalapenos on it and broil. Turn occasionally. Remove the jalapenos after about 10 minutes, when the skins are browned and blistered, and place in a plastic bag. The tomatoes will take an additional 10 to 15 minutes until the skins are blackened and the tomatoes are softened. Remove to a plate to cool.
  • When tomatoes and jalapenos are cool enough to handle, rub off the skins, remove the stems, and put the flesh and juices in a food processor or blender. Be careful peeling the jalapenos and wash hands thoroughly after handling. Blend or pulse jalapenos and tomatoes until coarsely chopped. Set aside.
  • Pour olive oil into a large heated skillet or saucepan over low heat. Add the onion and garlic and cook, stirring occasionally, until softened but not browned, about 10 minutes. Pour in tomatoes and jalapeno mixture and salt, stir and cook for 10 minutes, stirring occasionally.
  • Stir in cheese and cook 5 minutes, stirring frequently to incorporate the cheese as it melts. Pour into a bowl and serve immediately with tortilla chips or scoop up with heated fresh corn tortillas.

5 or 6 fresh poblano chiles
3 tablespoons corn oil
2 large onions, halved and sliced about 1/4-inch thick
1 (16-ounce) container sour cream
Chicken bouillon granules, to taste
1 1/2 cups oaxaca or mozzarella cheese, cut in small cubes

Steps:

  • Roast the chilies over an open flame or on a griddle until blackened but not charred. Wrap the chilies in a towel and place them in a plastic bag for about 10 minutes. Remove the chilies and with the help of a kitchen towel rub the skins off. The chilies should be firm. Cut them in 1/2-inch strips discarding all the seeds and the ribs. Do not rinse them. Heat the oil in a large pan over medium heat. Add the chilies and the onions at the same time. Stir often. When everything is soft add all the sour cream and the chicken bouillon granules to taste. When the cream is hot turn off the burner and add the cheese. Cover immediately. Enjoy with warm tortillas and white rice.

1 (14 ounce) can Ro-Tel tomatoes, with juice (Tomatoes with Green chiles)
1 (14 ounce) can canned diced tomatoes with juice
1/4 cup yellow onion, minced fine
1/2 large jalapeno pepper, deveined
1 small serrano chilies or 1 medium serrano chili, deveined, minced fine
3 -4 garlic cloves
1 lime, juice of, fresh
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
1/2 teaspoon salt
1/3 tablespoon sugar

Steps:

  • Place onions, jalapeno chile, and garlic into food processor. Pulse several times, until chopped fine.
  • Place tomatoes into food processor.
  • Place chopped cilantro, lime juice, salt, and sugar into food processor.
  • Mince Serrano chile very fine, then saute for a few minutes, until soft, in olive oil. Place inside food processor, oil and all.
  • Pulse all ingredients together until as smooth or chunky as you like. Taste, add salt if desired, serve with tortilla chips.

1 can (14-1/2 ounces) diced tomatoes with garlic and onion, drained
1 can (14-1/2 ounces) Mexican stewed tomatoes, drained
1 can (10 ounces) diced tomatoes and green chiles, drained
1 medium onion, quartered
2 banana peppers, seeded and coarsely chopped
2 jalapeno peppers, seeded and coarsely chopped
3 garlic cloves, minced
2 teaspoons salt
1/4 teaspoon ground cumin
1/2 cup minced fresh cilantro
1/4 cup lime juice
2 medium ripe avocados, peeled and cubed

This is my sister-in-law's red salsa recipe. She uses it to make her wonderful chicken enchiladas, but it's excellent for other uses as well. She is from Mexico City, and her Mexican cooking is always outstanding. We love to visit because every meal in her home is a feast!

6 large tomatoes, red and ripe
2 -4 serrano peppers, depending on how spicy you like it
3 garlic cloves, peeled and chopped
3 tablespoons chicken bouillon
1/3 cup water (preferably the cooking liquid)
1/4 onion, roughly chopped
2 tablespoons olive oil

Steps:

  • Place the whole tomatoes in a saucepan with the peppers; cover with water and bring to a boil.
  • Simmer gently until the tomatoes are fairly soft but not falling apart - about 5 minutes.
  • Drain, but reserve 1/3 cup of the cooking liquid.
  • Mix the bouillon into the 1/3 cup reserved cooking liquid and pour into the jar of a blender.
  • Add garlic; blend until the garlic is finely dispersed throughout the liquid.
  • Add the tomatoes and peppers to the blender jar, and blend for a few seconds. Do not over blend. It should have a rough texture.
  • Heat the olive oil in the bottom of a sauce pan.
  • Add the chopped onion and saute a couple of minutes.
  • Add the sauce from the blender.
  • Cook on high heat, stirring from time to time scraping the bottom of the pan until the sauce is reduced - about 6 - 8 minutes.
  • Taste, and add salt if necessary.
