SALSA CHICKEN MEATLOAF

Salsa Chicken Meatloaf image

Mexican flavor inspired meatloaf. Chicken makes this lower in fat than regular meatloaf, and adding pork keeps the meatloaf from tasting dry.

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h45m

Yield 6

Number Of Ingredients 15

1 ¼ cups herb-seasoned croutons
1 (12 ounce) jar salsa
1 tablespoon olive oil
1 jalapeno pepper, seeded and minced
1 cup finely chopped onion
3 cloves garlic, minced
1 pound ground chicken
½ pound ground pork
1 egg
1 ½ tablespoons taco seasoning mix
1 tablespoon Worcestershire sauce
1 cup shredded pepperjack cheese
¼ cup cilantro, minced
2 tablespoons barbecue sauce
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9-inch loaf pan.
  • Mix the croutons with salsa in a large bowl, and set aside to soften, about 15 minutes. Heat olive oil in a skillet over medium heat, and cook the jalapeno pepper, onion, and garlic until the onion is translucent, 5 to 8 minutes.
  • Mix the ground chicken, ground pork, egg, taco seasoning, Worcestershire sauce, pepperjack cheese, and cilantro into the crouton mixture, and mash any unbroken croutons. Mix in the cooked onion mixture. Transfer the meatloaf into the prepared loaf pan. Mix the barbecue sauce and brown sugar together in a bowl, stirring until the sugar has dissolved, and brush the barbecue sauce mixture over the loaf. Fold a 12-inch long piece of aluminum foil into a tent, and place the foil tent over the loaf.
  • Bake in the preheated oven until the juices run clear and the loaf is no longer pink in the center, about 1 hour. Remove foil tent for last 10 minutes of baking. An instant-read thermometer inserted into the center of the loaf should read at least 160 degrees F (72 degrees C). Remove from oven, cover the loaf with foil, and let stand for 15 minutes before serving.

SALSA CHICKEN

Salsa Chicken image

When I was doing Weight Watchers and the boys were home, I got really tired of fixing 3 sets of meals each night. When I came upon this recipe - I just didn't tell them this was WW and to this day they still don't know. When the boys come home now - this is one dish they will request. Super fast & easy to fix on work nights. 4 oz. = 4 WW points (without rice) *Note - in response to some reviews that experience the sauce being too runny or thin...extend the reduction time (after removing lid). It may take another 5-10 minutes to thicken and have the consistency you desire. **Use any diet cola you like. Back when this recipe was given to me (early 1970s) Diet Coca Cola was the only Diet soda around and the scares were not out like today (2018)To this day I call any Diet Soda - Coke.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 4

4 boneless skinless chicken breasts
1 (16 ounce) jar salsa (your choice of heat)
1 (12 ounce) can Diet Coke (DO NOT SUBSTITUTE ON THIS ITEM)
1 lime, juice of, fresh squeezed

Steps:

  • In 12 inch skillet, cook chicken over medium high heat in UNSEASONED pan (do NOT spray with PAM or add any oil or butter).
  • Sprinkle lightly with salt and pepper to taste.
  • Chicken will stick a bit to skillet when turning but that is ok.
  • Cook till just brown- you want a bit of color.
  • Add the entire jar of Salsa and the can of Diet Coke.
  • Reduce heat to medium low- and simmer for approximately 15-20 minutes, covered.
  • Remove lid, turn chicken and continue to simmer until sauce has thickened to desired consistency.
  • When ready to serve, squeeze juice from 1 fresh lime over the chicken.
  • I serve this over yellow rice (I just add turmeric to my rice when cooking- adds nice bright yellow color!).
  • Do not use regular Coke as this will turn out too sweet.
  • I promise--you cannot taste the Diet Coke.

SALSA CHICKEN MEATLOAF - REVIEW BY MARIANNE
2017-07-26 I used a conglomeration of leftovers to add to my new ingredients to make this yummy meatloaf! Half of my salsa was the Trader Joe's tomatillo green salsa and the other half was a red salsa from a local place----both "medium" but really quite hot. My croutons were some of Chef John's from this site that I had in my freezer. Instead of pork I used a Hillshire kielbasa …
