GRILLED SALMON WITH CITRUS SALSA VERDE

Grilled Salmon with Citrus Salsa Verde image

Provided by Giada De Laurentiis

Categories     main-dish

Time 23m

Yield 4 servings

Number Of Ingredients 15

2 large oranges
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/2 cup chopped fresh flat-leaf parsley
2 scallions, finely sliced
3 tablespoons chopped fresh mint leaves
2 tablespoons capers, rinsed, drained and coarsely chopped
2 tablespoons orange zest
1 teaspoon lemon zest
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for oiling the grill
4 (4 to 5-ounce) center cut salmon fillets, skinned, each about 3-inches square
2 tablespoons amber agave nectar
Kosher salt and freshly ground black pepper

Steps:

  • For the salsa: Peel and trim the ends from each orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a medium bowl. Add the olive oil, lemon juice, parsley, scallions, mint, capers, orange zest, lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside.
  • For the salmon: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the grilling rack with vegetable oil to keep the salmon from sticking. Brush the salmon on both sides with the agave nectar and season with salt and pepper, to taste. Grill until the fish flakes easily and is cooked through, about 3 to 4 minutes on each side. Transfer the salmon to a platter and allow to rest for 5 minutes.
  • Spoon the salsa verde on top of the salmon or serve on the side as an accompaniment.

SALMON WITH SALSA FRESCA

Salmon With Salsa Fresca image

There was a time when the appearance of the first ripe tomatoes would have inspired me to make the southern Italian sauce of raw tomatoes, basil, garlic and olive oil. These days, I turn to a Mexican-style salsa fresca: tomatoes, white onion, chili and loads of cilantro and lime. I love salsa with fish, and since it is wild salmon season, the marriage seems opportune. Halibut and swordfish, whether grilled, broiled, roasted, or even steamed, are equally fine. Though the salsa is quick to prepare, it's best if allowed to sit for 15 to 30 minutes before serving. The tomatoes' juices will run, and the flavors will mingle. No more than an hour, though.

Time 30m

Yield 4 servings

Number Of Ingredients 8

2 large fresh ripe tomatoes, or 3 or 4 ripe plum tomatoes, cored and diced
1/2 large white onion, peeled and minced
1/4 habanero or jalapeño chili, stemmed, seeded and minced, or to taste
1/2 cup roughly chopped cilantro or flat-leaf parsley leaves
Juice of 1 or 2 limes, to taste
Freshly ground pepper and salt to taste
1 salmon fillet, about 1 1/2 pounds, preferably with skin on
2 tablespoons neutral oil, like corn or canola

Steps:

  • Start a charcoal or gas grill; fire should be moderately hot and grill rack about 4 inches from heat source. Or, heat oven to 500 degrees.
  • Chop tomatoes and combine them in a bowl with onion, chili, cilantro, lime juice and some salt. Set aside.
  • Sprinkle fish with salt and pepper. If grilling, rub fish with a little oil as well; put it on grill, skin side down, and let it sit for 4 to 5 minutes, then turn once (don't worry if part of skin sticks to grill). Cook for about 3 minutes more, until medium-rare.
  • If roasting, heat a large nonstick skillet over high heat for a minute. Add oil and, a few seconds later, salmon, skin side up. Sear for a minute, then transfer to oven and roast until medium-rare, about 10 minutes. Allow to rest for a minute or so, then remove skin. Turn over and serve, passing salsa at the table.

BAKED SALMON WITH VEGETABLES AND FETA

Baked Salmon with Vegetables and Feta image

This easy baked salmon recipe with vegetables and feta is the perfect one-pan dinner for any night of the week! For tender, flaky, never-dry salmon, it helps to take the salmon out of the fridge about 15 minutes or so before cooking. Here, you'll also par-cook the vegetables briefly before adding the salmon in. And finally, cover the salmon with foil to trap the moisture in.

Provided by Suzy Karadsheh

Categories     Dinner

Number Of Ingredients 13

2 teaspoon dried oregano
1 teaspoon sumac
1 teaspoon cumin
1 cup cherry tomatoes
1 bell pepper, (any color, cored and sliced into thin sticks)
5 ounces baby bella mushrooms, (trimmed and halved)
4 to 5 large garlic cloves, (peeled)
5 to 6 ounces feta cheese block, (cut into large chunks)
6 to 7 sprigs of fresh thyme
Kosher salt and black pepper
Extra virgin olive oil
4 6-ounce portions salmon fillet
1 to 2 large lemons, (halved, for serving)

Steps:

  • Heat the oven to 425 degrees F and arrange a rack in the middle.
  • In a small bowl, combine the oregano, sumac, and cumin.
  • In a baking dish or sheet-pan, arrange the tomatoes, mushrooms, bell peppers, and 4 to 5 whole garlic cloves. Nestle the chunks of feta in between. Sprinkle with 1 ½ teaspoons of the spice mixture and a good pinch of kosher salt and black pepper. Add a few sprigs of fresh thyme. Drizzle with 1 to 2 tbsp olive oil.
  • Place the sheet pan in the heated oven on the center rack. Bake for 5 to 10 minutes until the veggies are softer.
  • Meanwhile, pat the fish dry and season on both sides with kosher salt and black pepper and the remainder of the spice mixture.
  • Carefully remove the sheet pan from the oven and add the fish in with the veggies and feta.
  • Cover the sheet pan with foil and return to the center rack of the heated oven. Cook for about 10 minutes or until the fish is cooked through and flakes easily. Remove from the oven and immediately squeeze lemon juice onto the fish.

This recipe is delightful. You can pair the salsa with grilled chicken breasts or barbecued shrimp kabobs, too. The only fresh ingredient not available in my son's garden was the avocado! • Preheat broiler. Place tomatillos, chiles, and garlic on a rimmed baking sheet. Broil, tossing once, until tomatillos are blistered in spots and starting to release some juices, 7–10 minutes. Transfer to a medium bowl and cover. Let sit until tomatillos are softened, about 5 minutes. Uncover and let sit until cool enough to handle, about 10 minutes.
  • Remove skins from chiles if desired and peel garlic; place in a molcajete or mortar and pestle along with cumin seeds and a pinch of salt. Grind until smooth. (Or you can use a blender if you grind the cumin seeds before adding.) Add tomatillos and grind until a coarse purée forms. Stir in spring onion, cilantro, and oregano. Season with more salt if needed; squeeze in lime juice to taste if desired.
  • Heat oil in a large skillet over medium-high. Sprinkle in cumin seeds. Season salmon with salt; arrange, skin side down, in skillet. Reduce heat to medium and cook, pressing down gently on fish, until skin is golden brown and crisp, 6–8 minutes. Turn over; cook until just cooked through, about 4 minutes.
  • Divide salmon among plates; spoon salsa over. Scatter some oregano and cilantro on top. Serve with avocado and lime wedges alongside.
