Grilled Salmon with Strawberry Salsa image

Grilled Salmon with Strawberry Salsa is the only salmon salad recipe you'll need all summer long!

1 pound salmon fillet
2 tablespoons olive oil
½ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon paprika
1 teaspoon ground chili powder
¼ teaspoon sea salt
6 large ripe strawberries, finely chopped
1 jalapeno, seeded and chopped
¼ cup red onion, finely chopped
1 clove small garlic, minced
1 lime, juiced
Pinch sea salt
5 ounces baby arugula
½ ripe avocado, diced
3 radishes, thinly sliced
4 ripe strawberries, chopped
1/3 cup olive oil
¼ cup balsamic vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon lemon zest
3 ripe strawberries, chopped
1-½ tablespoons honey
1-½ tablespoons dijon mustard

Steps:

  • Add all of the ingredients for the vinaigrette to a blender and blend until smooth. Transfer to a jar or sealable container and refrigerate until ready to use.
  • Stir together the ingredients for the salsa in a bowl. Refrigerate until ready to use.
  • Add the ingrediens for the salad to a large serving bowl and toss in desired amount of strawberry vinaigrette. Refrigerate until the salmon is ready.
  • Place the salmon on a plate or in a casserole dish and drizzle with olive oil. Use your hands to spread the oil over the flesh so that the whole surface is coated. Stir together all of the spices (or use your favorite spice blend) and sprinkle them over the fish.
  • Scrape any food particles off of your grill and spray (or brush) it with oil - this ensures the fish will not stick to the grill. Preheat the grill to medium-high (about 400 to 450 degrees F), keeping the grill covered.
  • Place the salmon fillet on the grill skin-side down and cover the grill, leaving the fish untouched for 5 to 6 minutes. Carefully flip and cook on the other side about 2 minutes, or until grill marks appear. Note: Salmon fillets that are one inch thick or less will take about 8 minutes total on the grill. Thicker fillets will require 10 to 12 minutes. You can cook the salmon for less time if you want the center of the fish to be rare).
  • Transfer to a cutting board and cut smaller fillets to serve.
  • Serve arugula salad with salmon and top with strawberry salsa.

1 lb. Wild Sockeye Salmon Fillet
1/2 tsp. salt
1/2 tsp. pepper
4 cloves garlic, minced
1 Tbsp. Olive oil
16 oz. Organic Strawberries, fresh, chopped
1 large avocado, diced
1/2 red onion, diced
1/2 cup cherry tomatoes, halved
2 Tbsp. lime juice
2 Tbsp. lemon juice
1/4 cup cilantro, fresh, chopped
1/2 tsp. salt
1/2 tsp. pepper

Steps:

  • Preheat oven to 375°F. Remove the salmon from the fridge 15 minutes before cooking and let it come to room temperature.
  • Line a baking dish with foil and coat with oil. Place the salmon skin side down in the baking dish and season with ½ tsp salt, pepper and garlic.Bake anywhere from 12-16 minutes or until the salmon is lightly translucent in the center. Fish should reach an internal temperature of 145° F.
  • While the salmon cooks, make the strawberry salsa by chopping and prepping the ingredients. Place all ingredients in a bowl and gently stir to mix.Place this on top of your salmon and serve with salad and rice/ or pasta. Enjoy!

4 teaspoons olive oil, divided
4 (6-ounce) salmon fillets, skin-on
2 teaspoons Essence, recipe follows
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 recipe Fruit Salsa, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
3/4 cup small diced pineapple
3/4 cup small diced mango
1/2 cup small diced strawberries
1/4 cup small diced red onion
1 jalapeno, stemmed, seeded and finely chopped
2 tablespoons chopped fresh mint leaves
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lime juice
1/4 teaspoon salt

Steps:

  • Preheat a grill to medium.
  • Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
  • Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
  • Combine all ingredients thoroughly.
  • In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.

Its Strawberry season!!! My friend served this last weekend and everyone raved about it, said the flavors were wonderful. My hubby decided we should make this for company this weekend, and I thought I'd share my neighbor's recipe with my friends at Zaar. (I have not personally prepared this dish yet). Prep time does not include 1 hour chilling time. Cook time does not include the time to prepare the charcoal grill.

6 skinless salmon fillet (or fish of your choice)
1 English cucumbers or 1 seedless cucumber, finely chopped
1 green onion, thinly sliced
1 yellow pepper, finely chopped
1 tablespoon cilantro, cut into strips
3 -4 tablespoons seasoned rice wine vinegar
2 cups fresh strawberries, hulled and diced small
1/4 lb butter, unsalted
1 clove garlic
1 tablespoon honey
2 tablespoons soy sauce
1 tablespoon fresh lemon juice

Steps:

  • ***Salsa***.
  • Mix together cucumbers, green onion, yellow pepper, cilanto and vinegar.
  • Cover and chill at least 1 hour.
  • Just before serving add strawberries.
  • ***Sauce***.
  • In small sauce pan over low heat, melt butter with garlic.
  • Stir in honey, soy sauce and lemon juice.
  • Cook 2 minutes, then set aside.
  • ***Grill***.
  • Prepare charcoal grill.
  • When coals are ready, oil a fish grilling rack.
  • Brush sauce on salmon pieces and place on well-oiled rack.
  • Place rack over coals (about 4 inches from heat).
  • Grill salmon about 4-5 minutes on each side.
  • Brush fish with sauce after turning, and again when done.
  • Place grilled fish on warm platter and top with salsa.

2 tablespoons balsamic vinegar
3/4 cup diced strawberry
2 tablespoons cilantro
1 1/2 teaspoons diced jalapenos
1 tablespoon diced green onion
1 teaspoon lime juice

Steps:

  • 1. Place salmon fillet on a baking sheet and use a pastry brush to brush it with a few coats of balsamic vinegar. Reserve the rest of the balsamic for later. Season salmon with a dash of salt and pepper.
  • 2. Bake salmon for 15-20 minutes until cooked to your desired level of doneness. For well done fish, you may need to add a couple of extra minutes in the oven.
  • 3. When salmon is cooked, brush a bit of the remaining balsamic vinegar over the top. Top salmon with strawberry salsa and serve immediately.
  • 4. Combine strawberries, cilantro, jalapeño, green onion, lime juice in a medium bowl.
  • 5. Add salt and pepper to taste.

Last week I went to a place called 'The Salmon Shop' and came back heavily loaded, I'm determined to eat all the 30 salmon cutlets in a different way! This is an original recipe I came up with, note the amount of chili and pepper gives quite a spicy result, some might like to reduce the quantity.

500 g salmon steaks
1 tablespoon extra virgin olive oil
2 garlic cloves
1 cup fresh strawberries
1/4 cup crushed tomatoes
4 teaspoons malt vinegar
4 teaspoons reduced sodium soy sauce
1/4 teaspoon oregano
1/2 teaspoon basil
1 teaspoon chili flakes
1/4 teaspoon ground black pepper
4 sprigs parsley, chopped

Steps:

  • Crush strawberries in a mortar & pestle. Don't go overboard because the sauce looks nicer with a thick texture.
  • Mix all ingredients except salmon, oil and garlic well in a bowl and place in refrigerator (can be done ahead of time).
  • Cook Salmon on a BBQ or grill. I used a medium BBQ plate for around seven minutes a side.
  • Place garlic and olive oil in a saucepan and place over medium heat.
  • Lightly sautee garlic for five minutes.
  • Add the sauce mix to saucepan.
  • Cook for 10 minutes, stirring occasionally. Don't let the sauce boil hard, just simmer.
  • Once the fish is cooked plate up and pour over the sauce.
  • Serve with fresh salad and/or light vegetables.
