Alice McGeoghegan from Devevan, California writes, "The original recipe for this dish is used every year at a Fourth of July barbecue in Fort Bragg, California. My husband, Bob, added some extra ingredients to come up with the best grilled salmon we've ever tasted."

1/2 cup butter, melted
1 cup lemon juice
1/4 cup minced fresh basil or 4 teaspoons dried basil
1/4 cup reduced-sodium soy sauce
1/4 cup Worcestershire sauce
4 garlic cloves, minced
2 to 3 teaspoons curry powder
2 teaspoons dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
4 salmon fillets (5 ounces each)
TARTAR SAUCE:
1/2 cup mayonnaise
1 tablespoon finely chopped green onion
1 tablespoon lemon juice
1/2 teaspoon dill weed
1/2 teaspoon ground mustard
1/4 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the first 10 ingredients. Pour into a large resealable plastic bag; add salmon. Seal bag and turn to coat; refrigerate for 30 minutes, turning occasionally. Meanwhile, in a small bowl, combine tartar sauce ingredients; refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. , Grill, covered, over medium heat or 4 in. from the heat for 8-10 minutes or until fish flakes easily with a fork. Serve with tartar sauce.

1 teaspoon minced shallot

2 teaspoons white peppercorns
2 teaspoons black peppercorns
2 teaspoons pink peppercorns
1 teaspoon salt
8 (6 ounce) salmon fillets
3 tablespoons olive oil
7 ounces sun-dried tomatoes packed in oil, sliced lengthwise into strips
1/2 cup green onion, chopped (a bunch of 6 to 8)
1 cup white wine
1 tablespoon fresh parsley, chopped
2 tablespoons butter, chilled

Steps:

  • Preheat the oven to 350 degrees.
  • Use a mortar and pestle (I use a coffee grinder) to grind the ppercorns together with the salt. Or you can use a rolling pin or meat mallet to crush the peppercorns.
  • Press peppercorn mixture onto one side of each salmon fillet.
  • Heat 2 tablespoons olive oil in a skillet over medium high heat. Place several of the salmon fillets, peppercorn side down, into the hot oil. Cook for 2 to 3 minutes or until golden. Use a spatula to turn the fillets and cook for 2 to 3 minutes more. Place the fillets into a baking dish. Repeat until all the fillets have been sauteed. You may need to add more oil to the pan.
  • Roast the salmon in the preheated oven for 8 to 10 minutes, depending on the thickness of the fillets. The salmon should be medium rare in the center.
  • Add the sun-dried tomatoes and oil to the skillet. Add the onion and cook for 2 minutes. Pour in the white wine and cook until reduced by half, about 5 minutes. Stir in the parsley. Remove the pan from the heat. Stir in the butter until just melted. Pour the sauce over the fillets and serve.

1 cup cabernet sauvignon wine
2 tablespoons red wine vinegar
2 tablespoons shallots, minced
2/3 cup whipping cream
4 teaspoons butter, room temperature

32 ounces salmon fillets
1 teaspoon pink peppercorns, crushed
1 tablespoon gingerroot, peeled and minced
white pepper

Steps:

  • For sauce:.
  • Combine wine, vinegar, and shallots in heavy small saucepan; bring to boil. Reduce heat; simmer until reduced to 1/3 cup, about 8 minutes.
  • Boil cream in heavy medium saucepan until reduced by half, about 5 minutes. Stir cream into wine mixture. Simmer sauce until slightly thickened, about 3 minutes. (Can be prepared 1 day ahead. Cover and refrigerate).
  • For salmon:.
  • Spread 1 teaspoon butter on each salmon fillet. Sprinkle each fillet with 1/4 teaspoon peppercorns. Top with ginger. Season with salt. Melt 1 tablespoon butter in large non-stick skillet over medium heat. Add salmon, seasoned side down, and cook 4 minutes. Turn and saute until just cooked through, about 4 minutes. Transfer to plates. Tent with foil.
  • Bring sauce to simmer. Remove from heat. Add 3 tablespoons butter and whisk just until melted. Season sauce with salt and white pepper. Spoon sauce over salmon.

This is a delicious, easy summer salmon dish that gives you a lot of bang for your bucks. We liked it grilled, but you could also broil it in the oven, cook it in a non-stick skillet, or even nuke it! The creamy (faux) 'tartar' sauce is absolutely yummy and really complements the rich, flaky salmon. This dish is great either hot or cold.

1/3 cup creme fraiche
1 tablespoon finely minced gherkins or 1 tablespoon cornichon
1 tablespoon finely minced green onion
1 1/2 teaspoons finely minced fresh dill
1 1/2 teaspoons Dijon mustard
1 teaspoon sweetened condensed milk
1/2 teaspoon fresh lemon juice
salt and pepper, to taste
2 salmon fillets or 2 steaks
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 garlic clove, very finely minced
1/2 teaspoon dried oregano (I prefer the Mediterranean oregano)
salt and pepper, to taste
very finely-sliced green onion top

Steps:

  • For Creamy Tartar Sauce: Combine all ingredients together in a small bowl. Taste and adjust for salt and pepper. Cover and refrigerate until ready to use.
  • For Salmon: Mix olive oil, lemon juice, dijon mustard, garlic, oregano and salt and pepper to taste. Put salmon steaks in a zip-loc bag and add marinade, making sure that salmon is completely coated with marinade. Marinate in refrigerator for 1-2 hours before grilling.
  • To grill: Prepare coals or propane bbq to medium-hot. Remove salmon from marinade in zip-loc bag and grill 3-4 minutes per side, or until done. (Alternatively, you can cook the salmon in your favourite way.).
  • To serve: Center grilled salmon on plate and top with creamy 'tartar' sauce. Garnish with the very finely-sliced green onion tops sprinkled over the sauce.
