Salmon with Mango Chimichurri image

Sweet, tangy mango shines in this take on a South American chimichurri. It's also delicious with boneless chicken breasts or shrimp for lunch or dinner.

1 mango, peeled, pitted, and diced small
1 bunch cilantro, finely chopped
1/2 teaspoon red-pepper flakes
1/4 cup vegetable oil, plus more for grilling
2 tablespoons lime juice
Salt and pepper
6 skin-on salmon fillets (2 pounds total)

Steps:

  • Stir together mango, cilantro, red-pepper flakes, oil, and lime juice; season with salt and pepper.
  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. Season salmon with salt and pepper and lightly brush with oil. Grill, skin side up, until salmon begins to turn opaque, 4 to 6 minutes. Flip and cook until opaque throughout, 4 to 6 minutes. Transfer to a platter, spoon chimichurri over top, and serve.

1/4 cup KRAFT Zesty Italian Dressing, divided
6 salmon fillets (1-1/2 lb.), skin removed
1/4 cup fresh parsley, finely chopped
1/4 cup cilantro, finely chopped
1/4 cup finely chopped onions
1/4 cup KRAFT Real Mayo
1 tsp. crushed red pepper
1 tsp. lime juice
1 small French bread baguette, cut diagonally into 12 slices
1 cucumber, thinly sliced

Steps:

  • Heat 2 Tbsp. of the dressing in large skillet. Add fish; cook 4 min. on each side or until fish flakes easily with fork and golden brown on both sides.
  • Meanwhile, mix remaining 2 Tbsp. dressing, the parsley, cilantro, onions, mayo, red pepper and lime juice.
  • Spread mayo mixture onto bread slices. Fill evenly with fish and cucumbers.

1 (1 pound) fillet salmon fillet
¼ cup avocado oil
1 teaspoon curry powder
salt to taste
1 mango - peeled, seeded, and diced
¼ cup diced red onion
1 small serrano pepper, diced
1 small bunch cilantro leaves
1 lime

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Place salmon on the baking sheet and fold edges of aluminum foil up over the salmon and crimp to seal.
  • Bake in the preheated oven until cooked through and flesh flakes easily with a fork, about 15 minutes.
  • Mix avocado oil, curry powder, and salt together in a small bowl. Pour over salmon. Scatter diced mango, red onion, and serrano pepper over salmon. Serve garnished with cilantro and a squeeze of lime.
