1/2 pound whole-wheat spaghetti pasta
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 tablespoon olive oil
4 (4-ounce) pieces salmon
1/4 cup chopped fresh basil leaves
3 tablespoons capers
1 lemon, zested
2 tablespoons lemon juice
2 cups fresh baby spinach leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and transfer to a large bowl. Add the garlic, extra-virgin olive oil, salt, and pepper. Toss to combine.
  • Meanwhile, warm the olive oil in a medium skillet over medium-high heat. Season the salmon with salt and pepper. Add the fish to the pan and cook until medium-rare, about 2 minutes per side, depending on the thickness of the fish. Remove the salmon from the pan.
  • Add the basil, capers, lemon zest, and lemon juice to the spaghetti mixture and toss to combine. Set out 4 serving plates or shallow bowls. Place 1/2 cup spinach in each bowl. Top with 1/4 of the pasta. Top each mound of pasta with a piece of salmon. Serve immediately.

Steps:

  • In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.
  • Place salmon fillets in a medium glass baking dish, and cover with the marinade.
  • Marinate in the refrigerator about 1 hour, turning occasionally.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Place fillets in aluminum foil, cover with marinade, and seal.
  • Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Coarse salt and ground pepper
2 cups packed fresh basil leaves, thinly sliced crosswise
1 large shallot, thinly sliced crosswise (about 1/4 cup)
Grated zest of 1 lemon (2 to 3 teaspoons)
2 tablespoons fresh lemon juice
1 tablespoon olive oil
Lemon wedges, for serving (optional)

Steps:

  • Lightly season salmon with salt and pepper; arrange in a 9-by-13-inch baking dish, about 1 inch apart.
  • In a small bowl, stir together basil, shallot, lemon zest and juice, oil, 1/4 teaspoon salt, and a pinch of pepper. Dividing evenly, spread mixture over the salmon fillets. Cover with foil; place in the refrigerator, and let marinate 20 minutes.

6 (1/4-inch-thick) lime slices
1/4 cup plus 1 1/2 tablespoons extra-virgin olive oil

Fine sea salt to taste
1 cup loosely packed fresh basil, thinly sliced

Steps:

  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes.
  • Brush both sides of citrus slices with 1/2 tablespoon oil, then brush fish all over with 1 tablespoon oil and season with sea salt and pepper.
  • Grill citrus slices, covered only if using a gas grill, on lightly oiled grill rack, turning over once, until grill marks appear, 2 to 3 minutes total. 2 ears of corn (shucked)

Steps:

  • Heat the grill to medium-high heat and brush grates clean with wire brush and brush grates with oil to prevent sticking.
  • In a small bowl combine the Land O Lakes® Butter with Olive Oil & Sea Salt with 1 tbsp fresh basil, lemon zest, garlic powder and salt and pepper to taste. Stir until combined and set aside.
  • Brush the salmon filets with the vegetable and season to taste with salt and pepper. Place salmon, SKIN SIDE UP, on the hot grill for about 2 minutes, until salmon easily moves away from grill grates.   • Preheat Oven: Preheat oven to 375F with rack on lower middle position. Line a large sheet pan with foil and grease the foil with some olive oil. Set aside.

1 bunch asparagus (woody ends trimmed)
2 (150 g) salmon fillets (skinless and boneless)
20 g breadcrumbs (1/2 cup fresh made from Italian style bread)
1 tablespoon basil (fresh finely shredded)
1/2 teaspoon lemon zest (finely grated)
250 g baby potatoes (halved and steamed to serve)
1/2 bunch baby carrots (steamed to serve)
1/2 lemon (cut into wedges to serve)
1/2 teaspoon olive oil
1/2 leek (cut into short strips)
1 garlic clove (minced)
1 tablespoon plain flour (wholemeal)
160 ml skim milk (2/3 cup)
20 g goat's cheese
1 tablespoon lemon juice (freshly squeezed)

½ cup walnuts (roughly chopped)
¼ cup lemon juice (plus zest of one lemon)
½ cup olive oil
1 tablespoon dijon mustard
1 teaspoon honey
2 cloves garlic (minced)

Steps:

  • Lightly season both sides of the salmon fillet with salt and pepper. Drizzle a small amount of olive oil on both sides to coat.
  • Heat grill to medium-high. Add a small amount of vegetable oil on a folded piece of paper towel, and then carefully grease the grill grates.
  • Once the grill is nice and hot, add the salmon fillets. Cook uncovered about 4 to 5 minutes on each side until flaky (about 130-140°F).

3/4 Cups of Seasoned Bread Crumbs
1/2 Sticks Unsalted Butter
Juice of 1 1/2 Large Lemons
1/2 Cup Dry White Wine
4 Medium Artichokes, Cleaned, Sauteed, And Cut Into Eight Pieces
4 to 5 Sun-dried Tomatoes, Chopped
1 Large Garlic Clove, Peeled And Minced
3 Tablespoons Chopped Fresh Basil
Salt & Pepper
1 Tablespoon Soft Butter
1 Tablespoon Flour

Steps:

  • Melt the butter in a heavy saucepan, and add the garlic, artichokes, and sun-dried tomatoes and cook 3 minutes over medium low heat.
  • Add the lemon juice, wine, salt and pepper to taste, and cook over low heat until thickened.
  • Just before serving, stir in the fresh, chopped basil. (If your sauce does not thicken up enough, mix the soft butter with the flour and whisk in just a teaspoon or so, adding more as needed.)
  • Preheat oven to 375 degrees F.
  • Brush the salmon with the 3 tbs. of oil then sprinkle on the crumbs.

Toaster Oven Salmon has luscious salmon topped with a simple Lemon Basil Butter. This is a low sodium dinner for two, ready in under 30 minutes. Cooking salmon in the toaster oven gives you a delicious dinner and is SO easy to make. Basil flavor and acidic lemon "cut" the buttery goodness so you will not miss the salt.

2 pinches dried onion powder
2 pinches dried garlic powder
zest of 1 lemon
1 teaspoon minced fresh basil leaves
2 (4 ounce) salmon filets (skin removed)
1 pinch dried garlic powder
1 pinch fresh cracked pepper
cooking spray

Steps:

  • In a small bowl, use a fork to mash together the ingredients for the butter.
  • Wrap in plastic wrap forming a ~2-inch long log, and refrigerate.
  • Heat toaster oven or conventional oven to 425°F.
  • Lay the salmon on oven pan lined with foil and sprayed with cooking spray. Season with garlic powder and black pepper.
  • Bake at 425°F for 12-15 minutes until just cooked through and flakes with fork.
  • Slice the Lemon Basil Butter and lay slices on the fish. Return to the oven to melt the butter. Serve.
