Light and delicious, this brothy fish soup is surprisingly easy to pull together. Make this for a cozy night in, fun dinner parties, or the holidays! Depending on how many you're serving, this soup can easily be doubled or halved.

1 leek, (white and light green parts only)
2 tablespoons unsalted butter or extra-virgin olive oil (+ more for serving)
1 fennel bulb, (trimmed, halved and thinly sliced, fronds reserved)
1 small white onion, (chopped (1 cup))
2 large celery ribs, (diced (¾ cup))
Kosher salt and black pepper
2 cloves garlic, (finely chopped)
2 teaspoons chopped fresh oregano, (or 1 ½ teaspoons dried)
2 teaspoons chopped fresh thyme, (or 1 ½ teaspoons dried)
½ teaspoon crushed red pepper flakes
1 cup dry white wine, (such as Sauvignon blanc)
4 cups low-sodium seafood stock or chicken broth
8 ounces bottled clam juice
2 dried bay leaves
1 pound firm white fish,* (cut into 1-inch chunks)
1 pound medium (41-50 count) raw shrimp, (peeled and deveined)
1 pound scallops, (feet removed)
1 pound mussels or clams
¼ cup chopped parsley
1 tablespoon fresh lemon juice
Crusty bread or ciabatta croutons for serving *

Steps:

  • Halve leek lengthwise and cut into ¼-inch-thick slices; transfer to a large bowl and cover with cold water. Shimmy leek slices around in water; let rest 10 minutes. Using a slotted spoon or spider (or hands) strain leeks from water, being careful not to kick up dirt at bottom of bowl.
  • Heat butter in a large pot or Dutch oven over medium heat.
  • Add leek, fennel, onion, and celery; season with ½ teaspoon each salt and pepper and cook, stirring frequently, until softened, 8-10 minutes.
  • Stir in garlic, oregano, thyme, and red pepper flakes and cook 1 minute.
  • Deglaze with wine, scraping up any browned bits. Stir in broth, 4 cups water, clam juice and bay leaves. Bring to a simmer and cook 10 minutes.
  • Season white fish with salt and pepper.
  • Stir in shrimp and mussels, then arrange fish and scallops on top of stew, cover, reduce heat to medium-low (if your stove runs hot, reduce the heat to low), and simmer until mussels open and fish, scallops and shrimp are firm and opaque, about 5 minutes.
  • Discard bay leaves and stir in parsley, 2 tablespoons chopped fennel fronds, and lemon juice; season with salt to taste (at least 1 teaspoon, I add 1 ½ teaspoons)
  • Off heat, stir in a tablespoon of butter or drizzle servings with olive oil (optional).

¾ cup butter
2 onions, chopped
2 cloves garlic, minced
1 bunch fresh parsley, chopped
2 (14.5 ounce) cans stewed tomatoes
2 (14.5 ounce) cans chicken broth
2 bay leaves
1 tablespoon dried basil
½ teaspoon dried thyme
½ teaspoon dried oregano
1 cup water
1 ½ cups white wine
1 ½ pounds large shrimp - peeled and deveined
1 ½ pounds bay scallops
18 small clams
18 mussels, cleaned and debearded
1 ½ cups crabmeat
1 ½ pounds cod fillets, cubed

Steps:

  • Over medium-low heat melt butter in a large stockpot, add onions, garlic and parsley. Cook slowly, stirring occasionally until onions are soft.
  • Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth, bay leaves, basil, thyme, oregano, water and wine. Mix well. Cover and simmer 30 minutes.
  • Stir in the shrimp, scallops, clams, mussels and crabmeat. Stir in fish, if desired. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open. Ladle soup into bowls and serve with warm, crusty bread!

400 g salmon fillets, skinned and boned
8 scallops
1 tablespoon dill, chopped
12 mussels
250 ml double cream

Steps:

  • Pour fish stock into a large saucepan and bring to the boil before turning down to a simmer.
  • Cut the salmon into 3-4cm cubes and lower into the stock.
  • Add the scallops, chopped dill and the mussels.
  • The second the mussels have opened, add the cream, season the soup with salt and pepper, then ladle into warm bowls.
  • Sprinkle over some dill for presentation.

ROASTED SALMON WITH SCALLOPS AND MUSTARD BUTTER



Roasted Salmon with Scallops and Mustard Butter image

2 pounds salmon middle cut, boned, or fillets
6 ounces butter
8 scallops, without roe
3 generous teaspoons wholegrain mustard
4 level teaspoons dried dill wood, or 2 teaspoons each of dried and fresh dill
Salt and freshly ground pepper
10 ounces fresh spinach or rocket (arugula)

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the salmon piece or fillets skin-side up in a shallow ovenproof dish. Cook in the oven for 15 minutes.
  • Meanwhile gently melt the butter in a small saucepan. Remove from the heat and stir in the mustard and dill. Season to taste. Remove the salmon from the oven and arrange the scallops round it, baste with the mustard sauce.
  • Return to the oven for a further 5 minutes. Slice the salmon quite thickly and serve on top of the spinach rocket and spoon over the mustard butter.

1l low-salt chicken stock
2 tsp Thai red curry paste
100g flat rice noodle
150g pack shiitake mushroom , sliced
125g pack baby corn , sliced
2 skinless salmon fillets , sliced
juice 2 limes
1 tbsp reduced-salt soy sauce
pinch brown sugar
small bunch coriander , chopped

Steps:

  • Pour the stock into a large pan, bring to the boil, then stir in the curry paste. Add the noodles and cook for 8 mins. Tip in the mushrooms and corn and cook for 2 mins more.
  • Add the salmon to the pan and cook for 3 mins or until cooked through. Remove from the heat and stir in the lime juice, soy sauce and a pinch of sugar. Ladle into 4 bowls and sprinkle over the coriander just before you serve.

1 tablespoon olive oil
1 small onion, chopped
1 small green pepper, chopped
2 medium carrots, chopped
1 garlic clove, minced
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
3/4 cup white wine or chicken broth
1 bay leaf
1/2 teaspoon dried oregano

Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

2 large onions, diced
3 carrots, sliced
7 potatoes, cubed
1 pound salmon, cut into chunks
1 pound cod, cut into chunks
1 pound scallops
1 pound shrimp, peeled and deveined

1 (6 ounce) can crabmeat, drained and flaked

2 cups half-and-half

  • Fill a large pot halfway with lightly salted water; bring to a boil. Add onions and carrots; cook until slightly tender, 10 minutes. Add potatoes; cook until tender, 15 to 20 minutes.

1 lb sole or 1 lb any firm-textured white fish fillet, bones and skin removed
2/3 cup cream (divided)
salt
fresh ground pepper
grated nutmeg
1 lb scallops, cleaned
3 egg whites
1/2 lb spinach
1/2 cup unsalted butter
1/4 lb raw shrimp, peeled and deveined
4 green onions, chopped finely
2 tablespoons chopped fresh parsley
3 egg yolks
1 teaspoon salt
fresh ground pepper
1 tablespoon Dijon mustard
1 -2 tablespoon lemon juice
1 1/4 cups oil
4 tablespoons chopped mixed herbs (parsley and basil)
4 tablespoons spinach

Steps:

  • FOR THE TERRINE: Place the fish in the bowl of a blender or food processor and process until smooth and shiny.
  • Add HALF the cream and season with salt, pepper and nutmeg.
  • Process briefly and then transfer the mixture to a bowl.
  • Repeat the process with the scallops and the remaining cream and transfer the mixture to a second bowl.
  • Beat the egg whites until they hold soft peaks.
  • Fold HALF the egg whites into the fish mixture and HALF into the scallop mixture.
  • Wash and blanch the spinach leaves and drain well.
  • Puree in a blender or food processor.
  • Add 2 Tablespoons of the scallop mixture and 2 Tablespoons of the fish mixture and set aside.
  • Melt the butter in the frying pan and cook the shrimps until just colored and firm.
  • Add the green onions and remove the pan from the heat.
  • When the mixture is cool, add it and the parsley to the spinach mixture in the blender or food processor and process.
  • Oil a 9 x 5 inch loaf pan and spread the scallop mixture on the base.
  • Cover with the spinach mixture and, lastly, the fish mixture.
  • Cover with foil.
  • Put the terrine in a baking dish partly filled with hot water and cook in a preheated 350 F.
  • oven for 1 hour or until set.
  • Cool and then chill overnight.
  • Unmold onto a plate.
  • Serve sliced with herb mayonnaise.
  • FOR THE HERB MAYONNAISE: Place the egg yolks, 1 teaspoon salt, pepper, mustard and lemon juice in a blender or food processor and process to mix ingredients.
  • With the motor still running, add the oil slowly in a thin, steady stream.
  • Add chopped herbs and spinach, taste for seasoning.

800 g mussels (I find mussels very light and with the fact they don't all open I tend to buy a kilo for 4)
1 medium onion, finely chopped
4 slices bacon, rashers chopped
2 -3 garlic cloves, crushed (depending on your taste)
1/2 cup dry white wine
2 tablespoons lemon juice
1 1/2 cups water
1 teaspoon fish stock (Concentrated,either powder, cube, paste etc..)
1 teaspoon vegetable stock (concentrated, either powder, cube, paste etc..)
300 ml cream (can use light)
2 tablespoons fresh basil, chopped
2 egg yolks

Steps:

  • Scrub mussels and remove hairy beards from them. Heat a small amount of olive oil in a fry pan, add onion and garlic and cook until onion is soft. In a small pan cook bacon until browned then drain on absorbent paper.
  • In a large saucepan add enough water that will cover mussels and bring water to boil. Add mussels to pan, cover and cook for a few minutes or until mussels open. drain and discard any mussels that do not open. (I cook mussels in a separate pan so that any sand or grit that has not been washed off does not end up in my soup). Remove shells completely from some of the mussels, remove half the shell from others and leave some complete. This is for presentation and ease of eating.
  • Wash saucepan and return to medium heat combine wine, lemon juice, water, both stocks, and onion garlic mixture, bring liquid to boil then reduce heat to a simmer, add cream and bacon. Remove pan from heat. In a bowl lightly beat egg yolks and add a few tablespoons of soup mixture to egg and mix, then add to soup, return pan to a low heat add mussels and basil and stir until heated through.
  • Serve with a mixture of soft cut french loaf and fried french loaf.
  • For fried.
  • Cut a french loaf into slices, crush a couple of cloves of garlic and mix with butter. Spread garlic butter on both sides of bread and fry until golden brown on both sides.

3 fresh chili peppers, very finely chopped (with pips)
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1 slice white bread, soaked in a little of the soup and mashed
1/4 cup mayonnaise

Steps:

  • -------------MUSSELSOUP-------------------.
  • Sauté the onions in the butter/oil mixture.
  • Add the garlic, herbs, saffron and flour and stir-fry for 2 minutes.
  • Add the stock and fresh tomatoes.
  • Reduce the heat and simmer for 20 minutes.
  • Add the tomato pesto, sugar and mussels and simmer a further 5 minutes.
  • Add the cream and adjust the seasoning.
  • If the soup tastes weak allow to reduce by cooking without a lid for a while.
  • Sprinkle with chopped fresh parsley and serve with a spoonful of rouille and a crusty garlic loaf.

  • Mix all ingredients together thoroughly and serve with seafood soups and stews.
