BAKED SALMON I
A delicious, healthy dinner of salmon with herbs and rice.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). In a saucepan bring 2 1/2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- In a large pan, add enough water to just cover the bottom of the pan. Lay the salmon fillet in the pan, pink side up. Place cooked rice around the outside of the fish. Sprinkle the orange juice over the fish and rice.
- In a small bowl, combine the dill weed, rosemary, basil, mustard, lemon pepper and sprinkle over the fish and rice. Cover with aluminum foil.
- Bake in a preheated oven for 30 to 40 minutes or until the salmon is tender and flaky.

SALMON AND RICE CASSEROLE
This is quick and easy. The curry powder adds a great flavour. I found the original recipe in a booklet called Family Meal Planning published in 1972 and received permission to post the recipe.

Steps:
- Set oven to 350 degrees F.
- Grease casserole dish.
- Melt margarine.
- Add flour& salt and cook for 1 minute while stirring.
- Remove from heat.
- Add milk gradually, return to heat and cook and stir until thickened.
- Stir curry powder and worcestershire sauce into sauce.
- Break salmon into chunks and add to sauce.
- Add cooked rice.
- Pour into greased casserole.
- Sprinkle cheese on top.
- Bake at 350 degrees F for 30 minutes.

FRIED RICE WITH SIMPLE BAKED SALMON
Steps:
- Preheat the oven to 450 degrees F. Spray a baking sheet with cooking spray.
- Season the salmon with salt and pepper and place it on the prepared baking sheet. Bake the salmon in the oven until cooked through, 10 to 12 minutes. Remove from the oven and keep warm.
- Heat a large, deep skillet over medium-high heat. Add about 1/2 tablespoon of the butter and crack the eggs into the pan, stirring with a metal spatula to scramble and chop them finely. Remove the eggs from the pan.
- Add 1 tablespoon of the remaining butter to the same pan and saute the onion and carrot until softened, 3 to 4 minutes. Add the remaining 2 tablespoons butter and the cooked rice. Stir well, mixing the vegetables and rice together. Fry for a few minutes, mixing constantly with the spatula. Add the eggs and mix well. Add the soy sauce and keep stirring. Turn off the heat.
- Transfer the fried rice to a plate, top with the salmon, sprinkle with sesame seeds and serve.
SALMON RICE BAKE
This is from the Company's Coming Select Series Beans & Rice cookbook. I didn't have instant rice so I used the same amount of regular white rice, increased the chicken broth by 1 cup, and boiled the rice with the veggies. I think I probably should have used a little less rice (or another tin of mushroom soup!) because it was a little on the dry-ish and it filled my 3 qt casserole -- the recipe just calls for a 2 qt. I also substituted chopped red pepper for the carrots and added it with the broccoli. But all modification aside, it was still a very tasty casserole and definitely a do-over in THIS house -- especially when topped with a bit of melted cheddar!!

Steps:
- Combine water, carrot, onion and bouillon powder in a large saucepan. cover and cook until onion is almost tender.
- Add broccoli. Cook for 4 minutes. Do not drain.
- Stir in rice. Cover and let stand for 5 minutes.
- Add soup and salmon. Stir to mix well. Turn into greased 2 qt (2L) casserole dish.
- Sprinkle with paprika if desired (or shredded cheddar!). Cover and bake at 350F for 30 minutes.

An easy casserole, which is easily adaptable. Add other veggies, such as sliced carrots or zucchini, or use tuna or chicken instead of salmon. You can also top this with crushed fried onions for more crunch.

- Preheat oven to 375.
- Beat eggs in a large bowl.
- Whisk in cream of mushroom soup and milk.
- Add garlic salt, crushed red pepper (if using), broccoli, rice, salmon, and 1/4 cup Parmesan cheese. Mix well.
- Pour into greased casserole dish, 8 x 10 or larger.
- In a small bowl, mix together remaining cheese, panko, and parsley. Sprinkle over casserole.
- Cover dish with foil and bake 30 minutes (40 if using brown rice).
- Remove foil and cook for another 15 minutes.

- preheat oven to 350.
- In a large skillet over medium heat,add butter and oil. Once butter is melted add onion and garlic. Saute until vegetables are softened.
- Add baby spinach to onion mixture,sook until spinach is wilted and glossy.
- In a large mixing bowl,mix your salt pepper,sour cream,mayo,mustard,1/4 cup parmesan cheese.Set aside 1/2 cup of the sour cream mixture.
- Mix in rice,and spinach mixture,add your egg beaters,and mix well.
- Grease a large baking dish with cooking spray,or olive oil. Spoon in all of your rice mixture. Place salmon on top ,and cover with 1/2 cup of the sour cream mixture.Sprinkle the remaining cheese over sour cream mixture.

BAKED SALMON & RICE BALLS
This is something my mom used to make when I was growing up. It's easy, inexpensive and filling! I always make sure my canned salmon is "wild caught" for a healthier fish. I also like to leave the bones in for the calcium - just crush them up between your fingers (they are really soft) as you come across them when you are mixing everything with your hands. This is a nice recipe to have children help out with and they love to get their hands messy and be able to eat what they "made" for dinner. Goes nicely with a side of cooked green peas.

- Oil an 11x9 pan with cooking spray and set aside.
- Cook the rice according to package directions and set aside to cool.
- Remove the skin from the canned salmon (and the bones if you prefer).
- Put the salmon, cooled rice, carrots, onions and eggs in a large bowl.
- Add salt and pepper and mix everything together with your hands. When I come across a bone I simply crush it between my thumb and forefinger.
- Form mixture into 8 tennis-sized balls, about 3/4 c mixture for each ball.
- Arrange balls in the prepared pan and allow room for them to expand as they cook.
- Mix the soup and water together well and pour over the balls.
- Cover with foil and bake in 350 oven for 1 hour.
- Allow the salmon balls to rest for a few minutes before serving.
