SALMON PINWHEELS
Don't be intimidated by this fancy-looking breaded-salmon pinwheel--it's quite easy to do. This technique works best when you use "center-cut" salmon fillet. If you don't have a center-cut fillet or want to simplify the preparation, leave the fillet whole, spread the mayonnaise over it, top with the breadcrumb mixture and bake. To cut down on prep time, ask your fishmonger to skin the salmon for you. Serve with garlic-rosemary roasted potatoes and wilted spinach.

- Preheat oven to 400 degrees F. Coat a 9-by-13-inch baking dish with cooking spray.
- Mix breadcrumbs, oil, mustard, shallot, lemon juice, capers and thyme in a small bowl until combined.
- Working with one at a time, spread each salmon strip with 1 teaspoon mayonnaise. Spread about 3 tablespoons of the breadcrumb mixture over the mayonnaise. Starting at one end, roll the salmon up tightly, tucking in any loose filling as you go. Insert a toothpick though the end to keep the pinwheel from unrolling. Place in the prepared dish. Repeat with the remaining salmon strips.
- Bake the pinwheels until just cooked through, 15 to 20 minutes. Remove the toothpicks before serving.

Steps:
- Thaw salmon, if frozen.
- Cut salmon fillet lengthwise into 6 even strips.
- Lightly season with salt and pepper.
- Starting with the thick end of each strip, roll into pinwheels.
- Secure each pinwheel with a wooden toothpick or wooden skewer In a large skillet combine white wine or water, the 1/4 tsp salt, 1/4 tsp pepper, and bay leaf; bring to boil.
- Add salmon.
- Return to boiling and reduce heat.
- Cover and simmer for 6-8 minutes or until fish just flakes easily when tested with a fork, turn once.
- Using a slotted spoon, remove salmon from cooking liquid.
- Discard cooking liquid.
- Cover and chill salmon in refrigerator at least 2 hours In a small bowl stir together sour cream, shredded orange peel, orange juice, sugar, and poppy seed.
- Add additional orange juice 1 tsp at a time until desired consistency.
- To serve, arrange salad greens, orange sections, cucumber slices and almonds on salad plates or in salad bowls.
- Top each salad with a salmon pinwheel.
- Spoon fresh orange dressing over salads.

In the old days, I would go out to the buffets and eat my weight in smoked salmon! I especially liked it served traditionally, with capers, cream cheese and onions. The only problem was that the capers and onions always fell off the fork when I tried to eat it all together. This recipe combines all my favorite ingredients in an easy-to-make and easy-to-serve party appetizer!

- Combine the cream cheese, lemon juice, red onion, and basil in a bowl until completely blended.
- On a piece of waxed paper, arrange the smoked salmon slices in a rectangle about 3 inches wide and 12 inches long, slightly overlapping each piece. (If the salmon slices are cut irregularly, simply piece them together like a puzzle.)
- Spread a thin layer of the cream cheese mixture on the salmon, sprinkle with the capers, and roll up like a jellyroll.

- In a large frying pan, heat oil over medium heat. Add onions and cook until tender but not browned. Stir in garlic and chopped spinach, salt and pepper. Cook until spinach just starts to wilt. About 3 minutes.
- Remove from heat. Add cooked rice and stir in lemon zest until well combined.
- Spread mixture evenly over salmon fillets and sprinkle with cheese and walnuts.
- Roll up gently and secure with toothpicks or twine.

- In medium sauté pan over medium high heat, add oil and butter; sauté peppers and onions until softened, about 3 minutes. Add kale and 1 tbsp (15 mL) of the rub marinade; cook, stirring occasionally, until kale is softened, about 5 minutes. Remove from heat and let cool completely.
- Using a long sharp knife, butterfly the salmon lengthwise (see tip below). In a small bowl mix remaining 3 tbsp (45 mL) rub marinade with water; brush half of mixture on inside of the salmon.
