2 pounds skinless salmon fillet
Coarse salt and ground pepper
1 teaspoon hot sauce, such as Tabasco
1/2 cup plain dried breadcrumbs
1/3 cup chopped fresh parsley
1/4 cup light mayonnaise
1/4 cup Dijon mustard
2 large eggs, lightly beaten
2 tablespoons fresh lemon juice
1/4 cup light mayonnaise
1/4 cup reduced-fat sour cream
2 tablespoons fresh lemon juice
2 teaspoons chopped fresh parsley, dill, or cilantro
Coarse salt and ground pepper
3 tablespoons prepared horseradish
2 tablespoons minced capers
1 teaspoon hot sauce, such as Tabasco
2 tablespoons minced pickled jalapeno chile

Steps:

  • Preheat oven to 400 degrees. Place fish on a rimmed baking sheet; season with salt and pepper. Roast until cooked through, 15 to 20 minutes. Let cool completely; pat dry with paper towels. Break salmon into smaller pieces; flake with a fork.
  • In a large bowl, combine scallions, breadcrumbs, and parsley. Add mayonnaise, mustard, eggs, lemon juice, and salmon. Season again with salt and pepper, plus an additional flavoring if desired. Mix gently until ingredients just hold together.
  • Form mixture into 8 patties (each about 3 inches wide). Place on a foil-lined baking sheet. Refrigerate until cold and firm, 20 to 30 minutes.
  • Make Lemon-Herb Sauce: Whisk together mayonnaise, sour cream, fresh lemon juice, and chopped herbs. Season with coarse salt and ground pepper.
  • Heat broiler. Broil patties until lightly golden on top (without turning), 6 to 8 minutes. Serve with Lemon-Herb Sauce.

1/4 cup chopped onion
1 egg
1/2 cup mayonnaise
2 teaspoons Dijon mustard

1 (14-ounce) can wild salmon, checked for large bones
1 baked or boiled russet potato, peeled, and fluffed with a fork
1/4 cup bread crumbs
2 tablespoons grated Parmesan

Steps:

  • Heat 1 tablespoon of the reserved bacon fat in a small saute pan over low heat. Add the onions and cook until translucent. Cool the onions for a bit.
  • Mix the bacon, onion, egg, mayonnaise, mustard, sugar, and lemon zest in a bowl. Add the salmon and potato, mixing gently after each addition. Form the mixture into 12 small patties. In a shallow dish, combine the bread crumbs, Parmesan, and pepper, to taste. Coat the patties in the bread crumb topping. Heat 1/4 cup of the oil in a large saute pan over medium heat, and cook the salmon cakes in batches until golden, about 3 to 4 minutes per side. Add more oil, as necessary. 1 lb fresh salmon filet*
Garlic Salt - I use Lawry's brand
Black Pepper
Olive Oil
1 medium onion (1 cup finely diced)
1/2 red bell pepper (diced)
3 Tbsp unsalted butter (divided)
1 cup Panko bread crumbs (Japanese Style crumbs)
2 large eggs (lightly beaten)
3 Tbsp mayo
1 tsp Worcestershire sauce
1/4 cup minced fresh parsley

Steps:

  • Preheat Oven to 425˚F. Line a rimmed baking sheet with parchment or a silpat. Place salmon skin-side down, brush with olive oil and season with garlic salt and black pepper. Bake uncovered for 10-15 min or just until cooked through (my thinner cut salmon was closer to 10 min). Remove from oven, cover with foil and rest ten minutes. Discard skin, flake salmon with forks, remove any bones, and cool to room temp.
  • Heat a medium skillet over medium heat. Add 1 Tbsp olive oil, 1 Tbsp butter and finely diced onion and bell pepper. Saute until softened and golden (7-9 minutes) then remove from heat.
  • In a large mixing bowl, combine cooled flaked salmon, sautéed onion and pepper, 1 cup bread crumbs, 2 beaten eggs, 3 Tbsp mayo, 1 tsp Worcestershire sauce, 1 tsp garlic salt, 1/4 tsp black pepper, and 1/4 cup fresh parsley. Stir to combine then form into 13-14 patties. It's easy to portion patties using a flat ice cream scoop then pressing them into 1/3 to 1/2" thick patties.
  • Heat 1 Tbsp oil and 1 Tbsp butter in a large pan over medium heat and once butter is done sizzling, add half of the salmon cakes and sauté 3 1/2 to 4 min per side or until golden brown and cooked through. If salmon cakes brown too quickly, reduce heat. Remove to a paper-towel lined plate. Add remaining 1 Tbsp oil and 1 Tbsp butter and repeat cooking remaining salmon cakes.

This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. If you need a quick and yummy salmon dinner/lunch, try this out. It would be nice served in a pita pocket with lettuce, tomato, etc as well. If you use plain bread crumbs, mix in a handful of fresh chopped parsley.

12 ounces skinless boneless salmon (sold in 6 oz cans or packets)
1/2 medium onion, chopped
1/2 cup breadcrumbs, seasoned or 1/2 cup breadcrumbs, plain
1/4 cup chopped parsley (optional)

2 tablespoons unsalted butter
3 tablespoons olive oil

  • Saute onions in 1 TBS olive oil until cooked through but not brown.
  • Drain liquid from the salmon.

1 cup Panko breadcrumbs ((Note 1 for subs))
1 small onion ((or 1/2 large), grated)
1 garlic clove (, finely minced)
400 g/ 14 oz cooked fresh salmon OR canned red or pink salmon (, drained (Note 2))
2 shallots / scallions / green onions (, finely sliced)
1/3 cup fresh dill (, roughly chopped (or 1 tsp dried herbs of choice))
2 eggs
1/2 cup parmesan (, grated or shredded)
1/4 tsp each salt and pepper
2 tbsp vegetable oil
Oil spray

Steps:

  • Preheat oven to 220C/430F standard (200C fan)
  • Place breadcrumbs in a bowl. Grate over onion, including juices. Mix onion into breadcrumbs, ensuring all breadcrumbs are soaked. (Note 3)
  • Add remaining ingredients except salmon. Mix well.
  • Add salmon. Stir through gently, leaving flakes of salmon (rather than vigorously mixing salmon into tiny pieces).
  • Scoop up 1/4 cup mixture (level, packed standard ice cream scoop, see Video). Form round patties about 1.5 cm/ 2/3" thick and set aside.
  • Drizzle oil all over tray. Place in oven for 2 minutes until hot - oil will spread over tray. Tilt tray to spread if needed.
  • Place patties on tray - DO NOT press down (makes them stick on tray). Spray surface with oil spray.
  • Bake 15 minutes. Flip, spray surface with oil spray, bake 5 minutes.
  • Serve with sour cream or yoghurt on the side for dipping / dolloping, and extra fresh dill if desired.

¼ cup finely diced onion
1 lb. grilled, poached, or baked salmon fillets, broken into large chunks
½ cup saltine cracker crumbs ((about 15 crackers before crushing))
1 large egg, lightly beaten
1 tablespoon mayonnaise
Zest and juice from ½ of a lemon
2 tablespoons chopped fresh parsley ((or sub with 2 teaspoons dried parsley flakes))
Kosher salt and ground black pepper
1 cup plain dry breadcrumbs
3 tablespoons butter, for sautéing
3 tablespoons canola oil or vegetable oil, for sautéing
Optional garnish: chopped fresh parsley; lemon wedges

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the onion and cook, stirring occasionally, until soft and translucent, about 3-4 minutes.
  • Transfer the onion to a large mixing bowl. Add the salmon, saltine cracker crumbs, egg, mayonnaise, lemon zest and juice, parsley, and salt and pepper to taste. Stir gently to mix. Try not to break up the chunks of salmon too much; do not over-mix.
  • Form the salmon mixture into 8 patties, about ½ inch thick.

2 14.75 oz. cans pink or red salmon
2 eggs
1 onion, finely minced
½ cup bread crumbs or crushed Saltine cracker crumbs
Salt and pepper to taste
3 tablespoons Canola oil

Steps:

  • Drain salmon and pick out round backbones and larger pieces of skin.
  • Put salmon in a large bowl and add eggs, onion, bread crumbs, and salt and pepper. Mix together until well blended then form into patties. I usually get 8 or 9 out of 2 cans of salmon.
  • Pour oil into skillet and heat on medium-high heat. Place patties in pan and fry about 3 minutes on each side, until well browned and crisp.
  • Drain on paper towel lined plate for a few minutes before serving.

2 (14 3/4 ounce) cans red salmon
1 cup Italian breadcrumbs
2 raw eggs
3 dashes black pepper
1 dash salt
1 dash red pepper
3 ounces vegetable oil

Steps:

  • Dump the ingredients of the two cans of salmon onto a large plate then pick out all the bones (it is nasty, but necessary).
  • In a large bowl add all ingredients except the oil and mix very well. Make sure it is fairly smooth (you want it less chunky than chicken salad, almost a paste).
  • Using a large spoon or just your hands roll large lumps into firm balls. As for the size of the balls, that is completely up to you. I make mine a little larger than a golf ball.
  • Flatten the balls till they are about the thickness of a pancake.
  • Pour oil into a skillet over medium heat. Add the patties, making sure they are not touching in the skillet. DO NOT turn them too often, they will crumble. I cook them about 5 minutes then carefully flip them over and cook another 5 to 7 minute on the other side.
  • My family likes to eat them plain with ketchup or hot sauce. Sometimes I serve them on sesame seed buns with a slice of tomato and a leaf of lettice.

2 lbs salmon, skinless, boneless
oil, for sautéing the onion and cooking the salmon (about 5-6 Tablespoons, divided)
1 onion, minced
4 Tablespoons panko breadcrumbs for the cakes, plus 1 1/2 cups for breading
1 egg, lightly beaten
2 Tablespoons mayonnaise
1 Tablespoon capers, minced
1 1/2 - 2 Tablespoons freshly squeezed lemon juice
1 Tablespoon dijon mustard
1 teaspoon hot sauce
1 1/2 Tablespoons fresh parsley, minced (you can also add fresh chives or dill)
1 1/2 teaspoons salt, 1/2 teaspoon pepper
oil, for pan frying

Steps:

  • Use a food processor to pulse the salmon into small pieces. The salmon should still have small chunks, not be pulsed into a puree.
  • Using a nonstick skillet, heat 1/2 - 1 Tablespoon of oil, add the onion, season with salt and pepper and cook until tender and lightly golden. Cool slightly. Wipe out the skillet and set aside.
  • In a large bowl, combine the salmon, cooked onion, egg, mayonnaise, capers, lemon juice, mustard, hot sauce, parsley, 4 Tablespoons of breadcrumbs, salt and pepper in a large bowl and mix to combine.
  • Using an ice cream scoop (or your hands, of course), portion out the salmon into 2-3 inch circles. You will have 14-16 salmon cakes, depending on how big you make them.
  • Dredge the salmon cakes in the breadcrumbs.
  • Heat about 1 1/ 2 tablespoons oil in a nonstick skillet on medium-high heat and cook the salmon for about 3 minutes per side, just until golden brown. The fish cooks very quickly, so don't overcook it by using low heat or covering the skillet, etc. It will be dry, if you're not careful.
  • Take the salmon cakes off the heat and drain on a paper towel. Wipe out the skillet and repeat with the rest of the salmon cakes.
  • Serve hot or warm. Store leftover salmon in the refrigerator in an airtight container for 3-5 days.

18 ounces canned salmon (3-8oz cans with no skin/bones or 2-14.75 cans with skin/bones, drained, red or pink salmon)
2 eggs
6 green onions (minced)
1/2 cup panko bread crumbs
1/2 cup grated parmesan
1 lime (juiced)
4 tablespoons avocado oil (or sub with olive oil)

Steps:

  • Drain salmon and pick out all of the good meat you want to use. I'm sure all of it can be used, but I like to discard any bone and skin because I think its gross. Personal preference.
  • In a medium sized bowl, combine salmon meat, eggs, green onions, panko bread crumbs, parmesan, and lime juice. Use hands to combine and then form into 8 patties that are no more than one inch thick.
  • Heat large skillet over medium high heat. Add oil. When oil is hot enough to bubble when a bread crumb gets tossed in, add your salmon patties. Be sure to leave enough room to have a good inch in between each patty, so you may need to cook them in two batches. Cook until golden brown, about 5-10 minutes, then flip and cook until golden brown on other side.
  • Serve warm. They also taste excellent cold on top of salad.

  • Heat a large, heavy skillet with 1 inch of frying oil over moderate heat.
  • Flake the cooked cooled salmon with a fork. Add cracker meal to the bowl and work through the fish with your hands. Add the eggs, seasoning, pepper, chives, dill, pepper sauce, and the zest of one lemon to the bowl. Combine the ingredients well with your hands. If the mixture is a little wet, add a bit more cracker meal. Form 3-inch patties of salmon cakes 1-inch thick. You should yield 8 to 10 cakes. Steps:

  • Place the salmon and cracker crumbs in a large bowl. Set aside.
  • In a heavy skillet over medium heat, cook onion and red bell pepper until tender in 1 tablespoon of the olive oil.
  • Add the cooked vegetables to the salmon and cracker crumbs in a bowl and mix gently. Add dill weed, egg , and lemon juice and mix gently.
  • Form the salmon mixture into 4 patties using your hands. At this point, you can cover the patties and refrigerate for a couple of hours before you finish cooking them.
  • When you are ready to cook, add the remaining olive oil and tablespoon of butter to the same skillet over medium heat.
  • Once the butter has melted, add the cold salmon patties to​ the skillet. Cook the patties for 3 to 4 minutes on each side until golden brown and hot. Serve immediately.

1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

Blend in egg. Fold in salmon. Let cool for 5 minutes. Using hands, shape into eight 3/4-inch (2 cm) thick patties. In large nonstick skillet, heat half of the oil over medium heat; cook 4 of the patties for about 5 minutes per side or until golden. Repeat with remaining patties. Serve with lemon wedges, and Lemon Aioli.
