BRATS WITH SAUERKRAUT
I've made many variations of this excellent main dish. The bratwurst can be plain, smoked or cheese-flavored, served whole or cut in slices, with a bun or without. It would be popular at a party or potluck.

- Place the bratwurst in a 5-qt. slow cooker. In a large bowl, combine the sauerkraut, apples, bacon, brown sugar, onion and mustard; spoon over bratwurst. , Cover and cook on low until a thermometer inserted in the sausage reads 160°, 6-8 hours. , Place brats in buns; using a slotted spoon, top with sauerkraut mixture.

QUICK SAUERKRAUT WITH GRILLED BRATS AND MUSTARD BAR

Steps:
- Preheat a grill for direct and indirect cooking.
- Toss the cabbage with the shallots, vinegar, brown sugar and 1 tablespoon salt in a large microwave-safe bowl. Cover the bowl with plastic wrap and microwave on high for 5 minutes. Stir well and let stand for 15 minutes.
- Meanwhile, place the brats on the indirect heat portion of the grill and grill, turning occasionally, until the internal temperature reaches 160 degrees F, 15 to 18 minutes. Move the brats over to the direct side of the grill and cook, turning occasionally, until lightly browned on all sides, about 5 minutes.
- While the brats finish grilling, melt the butter in a large skillet placed directly on the grill. Add the caraway seeds and cook, stirring, until fragrant, about 1 minute. Add the sauerkraut and stir until well coated. Stir in the dill if using.
- Serve the bratwursts with the sauerkraut and assorted mustards on the side.

Note: If using a light tasting beer like the Blue Moon we used in this recipe, the sugar listed below in the ingredients list may not be necessary. However if you are using a dark or more bitter beer, sugar should be used to avoid a bitter aftertaste.

- If you plan to serve this dish as an entrée with boiled potatoes instead of as a sandwich, begin preparing the potatoes now.
- In a large skillet or sauté pan, heat oil over medium heat and add bratwurst. Brown each side for two minutes turning a quarter turn each time so all four sides get browned. If they are curled, I found that stacking them against each other while cooking will keep them from flipping on their side. Once browned, remove to a platter and set aside.
- In the same pan, raise the heat to medium high and add onions. Cook for four minutes stirring with a wooden spoon.
- Add garlic, celery salt, caraway seeds and dry mustard. Stir and cook one minute.
- Add cabbage and cook for five minutes.
- Add drained sauerkraut, optional sugar, beer and browned bratwurst. Nestle the bratwurst into the mixture so they are totally covered. Bring to a boil, cover and lower to a simmer. Cook five minutes then remove cover and turn bratwurst. Raise heat to a medium simmer and with cover off cook 5-7 more minutes to cook off some of the liquid and to finish cooking the bratwurst. It is OK to still have some liquid in pan.
- Serve on rolls with spicy, yellow mustard or serve with boiled potatoes as a complete meal.
SAUSAGE AND SAUERKRAUT
This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

- Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
- Bake in the preheated oven until bubbling, about 1 hour.

- In a large skillet, sauté onions in margarine until tender.
- Add the potatoes, sauerkraut, wine, broth, brown sugar, vinegar, mustard, caraway seeds, bay leaf and pepper.
- Cover and simmer for 35-40 minutes or until potatoes are tender.
- Stir in the bratwurst; heat through.
- Discard bay leaf.
BEER-SIMMERED BRATWURST WITH ONIONS AND RED CABBAGE SAUERKRAUT
Steps:
- Preheat the grill to high. Arrange the onion slices and garlic along the bottom of a medium stockpot. Place the bratwurst on top and then add the beer, water, coriander, caraway, mustard seeds, and ginger. Bring to a simmer over the grill grates or on a burner. Simmer the sausages in the mixture for about 10 minutes. Remove the pan from the heat and let the bratwurst sit in the liquid for 10 minutes.
- Remove the sausages with a pair of tongs onto a platter. Remove the onions with a slotted spoon and place in a bowl. Grill the sausages until the casings are crisp and golden brown, about 3 to 4 minutes per side. Serve the bratwurst on the buns with the onions, mustard and sauerkraut, if desired. Garnish with pickles, pickled beets, and pickled eggs, if desired.
- Preheat grill to high. In a medium saucepan, combine the oil, vinegar, water, and sugar over medium heat, and cook until the sugar has melted. Add the mustard seeds, garlic, and cabbage, and cook until the cabbage is soft, about 15 to 20 minutes. Season with salt and pepper, to taste.

- Brown sausages: Heat a skillet large enough to hold the sauerkraut as well. Add 1 tablespoon oil and brown the sausages on all sides, they should not be cooked through as they will continue cooking with the kraut.
- Chop: In the meantime, chop the onion finely, peel, and dice the apple.
- Saute: Remove the brats from the skillet. If there isn't enough sausage fat left in the skillet, add another 1 tablespoon olive oil. Next, add the onion and saute for about 3 minutes. Add the apple and saute for another 3 minutes.
- Caramelize: Sprinkle the sugar on top and let caramelize for 1-2 minutes.
- Combine: Add drained sauerkraut, caraway seeds, bay leaves, salt, and pepper. Stir in the beer or another cooking liquid of choice.
- Simmer sauerkraut: Cover and cook for 20 minutes, stirring occasionally.
- Cook: Nestle the brats into the cabbage, cover, and cook until the brats are done about 10-15 minutes. Check with a meat thermometer (internal temperature 71 degrees Celsius/ 160 degrees Fahrenheit) or by cutting one sausage in the middle, it should not be pink anymore

- Brown sausages and onion slices in oil in a wide skillet. The sausages do not need to be cooked through at this stage, you just want to get some color on them.

- Preheat oven to 375-degrees.
- Cut the uncooked bratwurst into 1" pieces to make 24 pieces.
- In a large skillet, brown the bratwurst pieces (on medium/high heat) in the oil until browned and cooked through, turning occasionally (approximately 10 minutes).
- Remove the cooked bratwurst to a paper towel to drain and cool.
- Pop and unroll the crescent sheet. Slice the sheet in half lengthwise and then slice into ½" strips to equal 24 - 6" strips.
- Wrap each cooked bratwurst piece in one of the 6" crescent strips.
- Place each wrapped bratwurst onto a parchment lined baking sheet.
- In a small bowl, whisk together the egg and water.
- Brush each crescent wrapped bratwurst with a bit of the egg wash, being careful not to saturate the bites as this will make them stick to the tray.
- Sprinkle each bratwurst bite with poppy seeds.
- Bake in a preheated oven for 15-17 minutes, or until the crescent rolls are golden brown.
- Meanwhile, in a small bowl, mix together the sauerkraut, mayonnaise, pepper, and smoked paprika. Keep cold until ready to serve.
- Serve the bratwurst bites warm (or at room temperature), along with the chilled sauerkraut sauce.

- Preheat oven to 350°. I put mine in the crockpot.
- Drain and rinse sauerkraut in a colander.
- Mix with all the ingredients in a bowl and pour into large casserole dish (or put in crockpot) Cover and bake for 1 1/4 to 1 1/2 hours.
- Or let cook in crockpot on low for several hours until potatoes are tender. I usually add 1 can of water and mix well. Add more water accordingly throughout the day.
- I let mine cook all day on low.
- You can also try substituting the brown sugar with applesauce and apple chunks (1/2 cup each) for color and texture.
- I also use the Bavarian kraut--this gives this dish a sweeter flavor--even my kids like it.
