NO-GUILT CREAMY SALMON AND PASTA
The fat content in this creamy meal is nice and low. This is a dish that my kids always eat every last bite of! Serve with a salad to balance out the meal. I use Catelli Smart Pasta because it has more fibre than whole wheat pasta and has a nice texture. For the photos that I posted, I used Recipe #301978 and Recipe #163337. It was delicious. Enjoy!

Steps:
- Boil water in large pot for pasta.
- Heat oil in large nonstick pan and then add in flour until pasty. Gradually whisk in milk while stirring constantly until slightly thickened. Season with pepper.
- Add pasta to boiling water and set timer as directions advise. If pasta is done before the sauce, toss with a bit of olive oil so it doesn't stick.
- Whisk in Parmesan cheese and pesto until thoroughly mixed. Heat for a few minutes on low until thickened.
- Stir in salmon just before serving and heat through.
- Add pasta to salmon mixture and gently toss.
- Sprinkle parsley on completed dish.

PASTA RAGS AND WARMED SALMON

- Seed and dice the tomato and set aside. Cut the salmon into slivers that are paper thin and almost transparent and set aside. Bring the water to a boil and add the salt. When the water returns to the boil add the pasta and cook for between 4 to 6 minutes or until fully cooked but still with a toothy bite. Drain the pasta but reserve 1 cup of the cooking water. Do not rinse the pasta. Toss the pasta in a bowl with the olive oil, add the tomato, salmon and dill and toss again. The heat of the hot pasta will cook the thin pieces of salmon to a delicate finish. Season with salt and plenty of black pepper. If you a prefer a more liquid sauce, some of the hot pasta water may be added to moisten the dish or some whole butter may be added as well. Serve immediately.;

- Cook and drain linguine as directed on package, omitting salt.
- Meanwhile, in 12-skillet nonstick, heat oil over medium heat. Cook salmon in oil 4 to 5 minutes, stirring gently and frequently, until salmon flakes easily with fork (salmon may break apart). Remove from skillet.
- Increase heat to medium-high. Add mushrooms, asparagus and garlic to skillet; cook and stir 2 minutes. Stir in basil, tomatoes and onions; cook and stir 1 minute longer.
- In 2-cup glass measuring cup, stir cornstarch into broth. Add to vegetable mixture. Cook and stir 1 to 2 minutes or until sauce is thickened and bubbly. Stir in salmon. Serve over linguine. Sprinkle with cheese.

- In a large bowl, toss together the pasta, salmon, tomatoes and onion.
- Whisk together dressing by combining oil, lemon juice, dill, garlic, and salt and pepper.

10 MINUTE CREAMY SALMON PASTA SAUCE WITH BROCCOLI (EGG FREE)
A fast dish I make on a semi-regular basis as it is so fast and the kids like it. Broccoli can be changed for cauliflower or corn. This sauce cooks faster than it takes to boil and cook pasta, it's also good on rice or in a large baked potato.

- Cook your broccoli for 2-3 minutes in about 1/4 cup of water (I use the microwave), while you are waiting for this:.
- Melt the butter in a large skillet and gently fry the onions until translucent (about 2 minutes). Add the garlic and cook until fragrant (30 - 60 seconds). Add the flour and stir well over a low heat for 1 minute, while stirring constantly.
- Add the soup, broccoli (and the liquid it cooked in) and salmon, stir well to break up the salmon. Cook for 3-4 minutes.
- Add the cream and stir well. Cook over a low heat (the cream will curdle if heated too high) for 1 - 2 minutes. Add the pepper and stir through.
- Toss through cooked pasta and serve!

EASY SALMON PASTA
It's rich, but it's fast and easy and delicious. I often serve it during the busy holiday season when we need a quick supper because we have to rush off somewhere.

- In a large pot of boiling salted water, cook pasta according to package directions -- until al dente; drain well.
- Meanwhile, in a large skillet, bring cream to a boil; boil for 3 minutes or until reduced and slightly thickened.
- Stir in one can of salmon (red looks best), drained well and bones removed, the cheese and the drained pasta.
- Season with salt and pepper to taste and toss lightly.
- Turn on your hot water tap until water runs hot and warm the bowl you will serve pasta in; pat dry.
- Place pasta in the serving dish.
- Sprinkle with chopped green onion and serve with extra parmesan to sprinkle on top.
