LEEKY SALMON IN A PARCEL
Assemble the parcels a few hours ahead, zap in the microwave, and that's supper ready

Steps:
- Season the salmon fillets all over. Slice the leeks really thinly. Cut two 40cm square sheets of greaseproof paper and put a fillet in the middle of each sheet.
- Top each fillet with leeks and peas, and 2 tbsp of crème fraîche. Sprinkle with tarragon and salt and pepper.
- Make up parcels with the paper and stand them on a microwave-proof plate or tray. Microwave on full power for 5 minutes. Put the contents of the parcels on two plates and top each serving with a spoonful of crème fraîche. Serve with new potatoes.

STEAMED SALMON IN THE MICROWAVE

- Pat the fish dry with kitchen paper then cut into very big pieces. Put in a heatproof dish and evenly scatter with the ginger. Wrap tightly in cling film. Can be prepared to here up to 2-3 hours ahead, chill. Put the plate of fish into the microwave and cook for 3-5 minutes (depending on its thickness and how you like your fish cooked) on full power.
- Remove the plate of cooked fish. Wait one minute and pour off any excess liquid that may have accumulated on the plate, then scatter the spring onions on the fish, together with the light and dark soy sauces.
- Heat the two oils together in a small saucepan until very hot, then pour over the top of the fish. Scatter with a handful of coriander sprigs and serve at once.

- Thaw filet in refrigerator for several hours, or immerse package in cold water for 30 minutes.
- Place filet in small microwave casserole dish.
- Sprinkle with lemon pepper seasoning.
- Top with butter or margarine.
- Cover casserole and place in microwave.
- Cook on High for 3- 4 minutes.
- Repeat for remaining filets.

TERIYAKI SALMON PARCELS
These easy steamed fish parcels with Japanese seasoning are an ideal way to get kids in the kitchen

Steps:
- KIDS: The writing in bold is for you. ADULTS: The rest is for you. Make the sauce and marinade. In a small bowl, whisk together the soy, honey, garlic and mirin and set aside.
- Cut out some squares of foil. Using scissors, cut out 4 squares of foil, each about 30cm square. Brush each piece of foil with a little oil and bring the edges of the foil up a little.
- Fill your parcels. Place a couple of broccoli stems on each one, then sit a salmon fillet on top and scatter over the ginger.
- Spoon over the sauce. Spoon the sauce over each salmon fillet and drizzle with a little sesame oil, if you like.
- Close the parcels. Fold over the edges of the foil together to seal and place the parcels on a baking sheet. Can be prepared up to 1 day ahead.
- Cook the parcels. Heat oven to 200C/180C fan/gas 6. Get your child to place the parcels in the oven for 15-20 mins, but ensure an adult removes them, then leave to stand for a few mins. Serve each parcel on a plate and let each person open it themselves. Serve with spring onions and sesame seeds for scattering over, and some rice on the side.

SALMON PARCELS - MICROWAVED
My best friend in England gave me this recipe. It's fast, tasty and quite elegant I think - and I usually have the ingredients on hand. Creme Fraiche is not readily available in Canada yet, so I have used both plain yogurt and sour cream, and even low-fat and no-fat versions. For petit pois I use good quality tiny peas and for greaseproof paper I substitue wax paper. Parchment would be fine too.

Steps:
- Arrange each salmon fillet on a 14" (35cm) square of greaseproof paper and season.
- Top each fillet with leeks and peas and 2 tbsp of creme fraiche.
- Sprinkle with pepper and salt and tarragon.
- Fold the paper over at the top and fold the ends underneath (think gift wrapping) and put them on a microwave-proof plate.
- Cook on full power for 5 minutes. (I have a smaller, older, over the stove microwave and they need 7 minutes).
- Unwrap and slide onto 2 plates and top with extra creme fraiche if using.
- I like to serve these with tiny new potatoes.

- Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.
- Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal - like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

STUFFED SALMON PARCELS WITH TOMATO CREAM SAUCE
This recipe is my very own creation. Together with Salmon, mushrooms, some herb seasoning and cabbage leaves makes this quite a presentable dish that can be an entre/side dish or as a starter for a sitdown dinner/ lunch. The cream sauce brings out the flavor in the salmon, the sauce is very simple to make with ready to use ingredients from a bottle. The lemon grass paste is available in tubes in Australia ,maybe its also available in large grocery stores-if you can't get it you can leave it out

- Wash the salmon fillets , add 2 tablespoons of the lemon juice and 1 teaspoon of the lemon grass paste and keep aside for 15 minutes.
- In a microwavable bowl add the chopped mushrooms, basil, carrot , spring onion,1 teaspoon lemon grass paste and the lemon juice, season with salt and pepper.
- Microwave for 2 minutes and set aside.
- Wash the cabbage leaves and blanch them in hot salted water , run cold water to keep them from wilting but they should be nice and soft.
- Carefully remove the skin from the salmon and cut into 8 pieces of same size.
- On each cabbage leaf spread a little lemon grass paste,a small amount of the microwaved mix put a piece of salmon sprinkle little course black pepper and fold the leaf to make a neat parcel-secure with tooth picks.
- Use a round open glass dish , spray with cooking spray and arrange the parcels . spray the parcels with the spray again.
- Cover with a microwavable dish cover and microwave on high for 8 minutes.Remove on a serving dish or a plate-Let cool for few minutes.remove the tooth picks.
- In a glass bowl mix the pasta sauce and cream and blend till well mixed.
- Either pour all the sauce on the parcels if serving as a one dish or if on individual plates spoon a bit of the sauce on the plate, put one parcel , spoon sauce on the parcel. garnish with a fresh basil leaves.

MICROWAVE TERIYAKI SALMON
This recipe is heaven-sent for working folk--not only is is quick and tasty, but kids love it and the texture is so velvety smooth that you'll never cook salmon anywhere but in the microwave again! It is low in calories, fat and carbs to boot. Serve on a bed of spinach sauteed in a bit of olive oil with fresh minced garlic, salt & pepper (like #28274 or #31108 from this website) and you have a company-worthy, healthful meal. - Place salmon skin side down (if using fillets) in shallow microwave-safe dish, glass or plastic.
- Combine the rest of the ingredients, except scallions, and pour over fish.
- Cover with plastic wrap and marinate at room temperature for 30 to 60 minutes.
- The longer it marinates, the more pronounced the flavor.
- Turn fish once or twice while marinating, leaving it skin side up on the last turn (if using fillets).
- Making sure the plastic wrap seal is tight, microwave on high for 7 minutes.
- Let it stand in the microwave for an additional 3 minutes, covered, while you plate the spinach or other veggies.
- Check one fillet to ensure it is cooked to your liking (All microwaves cook a little differently; I rather like medium rare salmon if it turns out that way, but others may not-- if too rare, just pop it back in the microwave, sealed, and zap it for a minute or so).
- Plate the salmon and sprinkle with the scallions.
