SALMON PICCATA WITH HERBED PASTA
Steps:
- Bring a large pot of water to a boil, then add a small handful of salt. Add the pasta and cook according to the package directions until al dente. Drain the pasta and reserve the pot.
- While the pasta is cooking, melt 1 tablespoon of the butter in 2 tablespoons of the oil in a large skillet. Season the salmon with salt and pepper, then dust with flour. Add the salmon to the skillet and cook over medium-high heat, flipping occasionally, until golden on the outside and just cooked through, about 8 minutes.
- In the reserved pot, melt 3 tablespoons of the butter in the remaining 4 tablespoons olive oil over low heat. Return the pasta to the pot, add all but 2 tablespoons of the herbs and toss well to coat. Season with salt and pepper.
- Transfer the salmon to a plate; tent with foil to keep warm. Add the chicken broth, lemon juice and capers to the skillet. Simmer over high heat, scraping up any browned bits from the bottom of the skillet, until the liquid is slightly thickened, 3 to 5 minutes. Remove from the heat and gradually swirl in the remaining 2 tablespoons butter until emulsified. Stir in the reserved 2 tablespoons herbs and season with salt and pepper.
- Add the salmon to the sauce and turn to coat. Divide the pasta among plates, top with the salmon and sauce and serve right away.
THREE CHEESE AND HERB PENNE
This is one of my favourite pasta recipes. It can easily be adapted to your particular tastes by changing the herbs, the pasta, or the cheeses. but I like it as it's posted here!

- Preheat oven to 375°F.
- Cook and drain pasta according to package directions, and pour into a 9x13" baking dish.
- Meanwhile, melt butter in a saucepan over medium heat.
- Add garlic and cook for 1 minute.
- Stir in flour, mustard powder, and nutmeg. Gradually stir in milk and bring to a boil, stirring constantly.
- Reduce heat and simmer for 1 minute.
- Remove from heat.
- Toss cheeses together and reserve about 3/4 cup of tossed cheese. Add remaining cheese to sauce a handful at a time, stirring until melted.
- Stir in herbs, salt, and pepper.
- Toss sauce with pasta. Sprinkle with reserved cheese.
- Bake for 30 minutes, or until cheese on top is melted and crusty (you may need to add a couple of minutes under the broiler if you like your cheese really brown!).

- broil or grill salmon for about 8 minutes per inch of thickness.
- Cook pasta according to package directions.
- Heat broccoli in microwave until warm, about 4 minutes.
- Whisk together melted butter, broth or water, lemon zest and juice, and garlic.
- Toss penne with broccoli and place cooked salmon on top.
- Drizzle lemon-butter sauce over all.

SALMON AND HERB PENNE(FLAT BELLY DIET RECIPE)
I haven't tried this one yet, but it sounded delicious. Fresh grilled salmon would take it to the unbelievably delicious level, I think. If you're using grilled salmon, just cook the other ingredients as posted and throw in the salmon right before mixing in the pasta. I wouldn't leave out the wine. - 1. PREPARE pasta per package directions.
- 2. HEAT oil in large skillet over medium-high heat while pasta cooks. Add tomatoes and cook 1 to 2 minutes. Raise heat to high and add wine, salmon, basil, oregano, garlic and capers and cook until salmon is just opaque, about 4 minutes. Or cook other ingredients and add grilled salmon with pasta in step 3.

SMOKED SALMON PENNE

- Bring a large pot of salted water on to boil. Season it liberally with salt. When it boils, add your choice of pasta. Cook to el dente, until the pasta is cooked through but still pleasantly chewy.
- Scoop out 1 cup or so of the starchy cooking water. Drain the pasta but not quite all the way. Leave it a bit wet. Put the pasta back into the pot along with a splash or two of the reserved water, about 1/2 cup or so in total then immediately add the rest of the ingredients.
- While the pasta is till steaming hot toss well melting the cheese and forming the creamy sauce. Season with salt and pepper. Serve immediately.
HERB-BUTTER PENNE AND ROASTED TOMATOES WITH SALMON

- Preheat grill to medium or the oven to 425. If cooking in the oven, line a baking sheet with aluminum foil and spray with non-stick cooking spray. Set aside. Bring a pot of salted water to a boil. When the water is boiling, add the pasta and cook according to package directions. While the water is heating, rinse the salmon fillets and pat dry. Set aside. In a small bowl, combine butter, garlic, parsley, oregano, and basil. Reserve 2 Tbsp. of the butter mixture. Spread the remaining 2 Tbsp. over the salmon. Place the salmon on the baking sheet and cook for 10-12 minutes or until the flesh is opaque and flakes easily with a fork. Remove from the oven. When the pasta is done cooking, drain and then return to the pan. Add the reserved butter, mashed tomato, and toss to combine. Place the pasta in individual bowls and then top with a piece of salmon.
