1/4 cup packed light-brown sugar
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 tablespoons dry white wine, or water
2 pounds salmon fillet
Lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees. with a rack in the center. Make the glaze: In a small bowl, stir brown sugar, olive oil, soy sauce, lemon juice, and white wine until the sugar has dissolved.
  • Cut salmon fillet into 4 equal-size pieces; arrange, skin side down, in a single layer in a baking dish. Pour glaze over the fish, and turn to coat evenly.
  • Bake until fish is opaque but still bright pink inside, basting every few minutes with glaze from baking dish, 15 to 20 minutes. Serve with lemon wedges.

Steps:

  • Preheat oven to 375°F (190°C). Rinse the salmon with cold water and pat dry with paper towels. Cut the salmon into two pieces if they are too big. Transfer the salmon fillets (skin side down) on a baking sheet lined with parchment paper or aluminum foil.
  • Combine the soy sauce, oyster sauce, brown sugar, sesame oil and red pepper flakes together. Stir to mix well.
  • Brush the soy sauce mixture on the surface of the salmon fillets.
  • Bake in the oven for 20 minutes or until the salmon is cooked through. Top the salmon with white sesame and parsley, serve immediately.

I am always trying different ways to season and cook salmon, and this recipe is by far one of my favorite creations. It's neither too sweet nor too spicy--just right! I serve it over rice, drizzled with the sauce. Yummm!

4 salmon fillets, skin removed
2 tablespoons honey
2 tablespoons orange juice
1 tablespoon soy sauce
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/4 teaspoon ginger, dried ground

Steps:

  • In a small bowl, thoroughly wisk together honey, orange juice, soy sauce, garlic powder, cayenne pepper and ginger. It may take a few strokes to thoroughly combine the honey.
  • Place salmon filets into a glass 9x13-inch baking dish. Pour mixture over the fish.
  • Marinate at room temperature for 30 minutes or in refrigerator for up 1 hour. Turn occasionally to ensure even marination.
  • Preheat oven to 375 F (If marinating in refrigerator, please let baking dish come up to room temperature before placing in oven).
  • When ready to place fish in oven, DO NOT drain marinade from baking dish.
  • Roast in a 375 F oven for 12-15 minutes, basting with marinade every 5 minutes. Fish will be done when it flakes easily with fork.

12 oz skinless salmon
1 tablespoon olive oil
4 cloves garlic, minced
2 teaspoons ginger, minced
½ teaspoon red pepper
1 tablespoon olive oil
⅓ cup less sodium soy sauce
⅓ cup honey

Steps:

  • Place salmon in a sealable bag or medium bowl.
  • In a small bowl or measuring cup, mix marinade ingredients.
  • Pour half of the marinade on the salmon. Save the other half for later.
  • Let the salmon marinate in the refrigerator for at least 30 minutes.
  • In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
  • Remove salmon from pan. Pour in remaining marinade and reduce.
  • Serve the salmon with sauce and a side of veggies. We used broccoli.

2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon lemon juice
¼ teaspoon ground ginger
1 (1 pound) salmon fillet, cut into 4 pieces
¼ teaspoon salt

2 teaspoons extra-virgin olive oil
1 lemon, cut into 4 wedges

Steps:

  • Mix orange juice, honey, soy sauce, lemon juice, and ginger together in a small bowl.
  • Place salmon in a shallow dish. Pour all but 3 tablespoons of the orange juice mixture on top. Reserve remaining mixture in the bowl. Let salmon marinate at room temperature for 30 minutes.

3 tablespoons soy sauce
1/2 cup soy sauce
1 garlic clove, minced
1 tablespoon finely grated gingerroot
2 tablespoons shredded gingerroot
2 tablespoons rice wine or 2 tablespoons sherry wine
1/4 cup rice vinegar
2 tablespoons lemon juice
1 tablespoon sugar
2 tablespoons sliced scallions
1 (18 3/4 ounce) package soba noodles or 1 (1 lb) box whole wheat pasta
1/2 lb small green beans, sliced in half lengthwise

Steps:

  • Place the salmon in a shallow glass dish. Combine 3 t. of the soy sauce, the garlic, grated ginger, and 1 T. of the rice wine and pour over the salmon, turning to coat. Cover and marinate for 15 minutes in refrigerator.
  • Place the vinegar, lemon juice, sugar, the remaining soy sauce, and the remaining rice wine in a small saucepan over low heat. Stir to dissolve the sugar, bring to a boil, and cook until reduced by half, about 3 minutes. Set the glaze aside and keep warm.
  • Fill a large saucepan with 1 inch of salted water and bring to a boil. Remove the salmon from the marinade and place in a steamer basket that fits snugly over the pan. Scatter the scallions and shredded ginger over the salmon. Cover and steam over the boiling water for 4 minutes or until cooked through. Remove and keep warm.
  • Cook the noodles according to package directions. Just before they are done, add the beans to the boiling water; strain. Serve the salmon over the noodles & beans, drizzled with the glaze.

8 ounces fresh ginger, peeled
1/2 cup szechuan peppercorns (may substitute black peppercorns)
1 bunch cilantro
1/2 cup granulated sugar
2 tablespoons black pepper, coarsely ground
1 tablespoon peanut oil
1/4 cup soy sauce
1/4 cup orange juice

Steps:

  • Up to 24 hours before serving, place the salmon fillets in a nonreactive pan. In a food processor, combine and finely chop the ginger, peppercorns and cilantro. Roll the salmon fillets in the mixture, cover with plastic wrap or another plate and refrigerate overnight.
  • Combine the sugar and pepper on a plate or in a shallow bowl.
  • Heat the oil in a skillet.
  • Scrape the excess ginger mixture from the fish and discard.
  • Press the flesh (top) side of the salmon fillets into the sugar-pepper mixture and sauté them, seasoned side down, to caramelize the sugar, about 2 to 3 minutes.
  • Quickly, before the sugar burns, pour the soy sauce and orange juice into the pan, swirling and stirring well to dissolve the caramelized bits.
  • Turn the salmon skin side down. Lower the heat to medium. Cover the pan and let the salmon finish cooking for 5 to 8 minutes longer, or until it is cooked medium rare.
