This is hands down the best salmon log I've ever had. My family makes it for every get together, and my boyfriend demands it randomly (and he doesn't like salmon!). You don't have to chill it for that long, just until it's set.

1 (1 1/2 lb) can salmon (use canned always)
1 (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
2 teaspoons grated onions
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1/2 cup chopped pecans (optional)
3 tablespoons snipped parsley (dried works best)

Steps:

  • Drain and flake salmon, removing skin and bones.
  • Combine salmon with next six ingredients; mix thoroughly.
  • Chill several hours.
  • Combine pecans and parsley (or, just use parsley, I never use pecans).
  • Shape salmon mix in 8x2 inch log; roll in nut mix; chill well.
  • Serve with Crackers.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1 teaspoon prepared horseradish, drained
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 pound (4 ounces) smoked salmon, minced

Steps:

  • Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites and/or crackers.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon lemon zest plus 1 tablespoon fresh lemon zest (from 1 lemon)
1 small clove garlic, finely grated
Kosher salt and freshly ground black pepper
6 ounces hot-smoked salmon, finely flaked with your hands or a fork
1 scallion, thinly sliced
Sliced carrots, celery, cucumbers and/or crackers, for serving

Steps:

  • Whisk together the cream cheese, sour cream, Worcestershire sauce, lemon zest, lemon juice, garlic, 1 tablespoon water and a large pinch of pepper in a medium bowl until completely smooth. Fold in the smoked salmon and scallions to combine well. Season to taste with additional salt and pepper if needed. Transfer to a small serving bowl and serve with vegetables and/or crackers.

This is an easy appetizer to make, using simple ingredients that can be found at any grocery store. But it makes a great presentation. Try it on tiny rye bread slices, or sesame-seasoned crackers.

1 lb canned alaskan salmon
8 oz cream cheese, softened to room temperature
1 Tbsp lemon juice
1 Tbsp finely minced onion
1 tsp prepared horseradish
1/2 tsp salt
1/4 tsp liquid smoke flavoring
1/2 c chopped pecans
1/4 c chopped fresh parsley

Steps:

  • 1. Drain, flake, and remove bones if desired, from the salmon. Combine salmon with cream cheese, lemon juice, onion, horseradish, salt, and liquid smoke flavoring. Mix thoroughly and chill several hours or overnight.
  • 2. Combine the chopped pecans and parsley on a sheet of waxed paper. Shape the salmon mixture into a log. Roll the log in the parsley and nuts. Place on appropriate serving dish and garnish with parsley leaves if desired. Refrigerate until serving time.

This is the best recipe for smoked salmon dip I've tried. It comes from my dad, an Alaskan commercial fisherman, who makes the best smoked fish around. This dip is creamier than a lot of the pate' style smoked salmon spreads. You won't find your chips and crackers snapping in half as you go in for a dip. The green onions give it a little added texture and the garlic makes it more savory. If you don't have your own smoked salmon, you can always buy some at the supermarket. Just make sure it's wild Alaskan salmon!

12 ounces smoked salmon, roughly chopped
8 ounces cream cheese, warmed
1 cup sour cream
1 cup mayonnaise
1 teaspoon Tabasco sauce
2 cloves garlic, finely minced
1 bunch green onion, finely chopped

Steps:

  • Warm cream cheese in the microwave until slightly runny.
  • Mix cream cheese with chopped smoked salmon until combined.
  • Stir in tobasco, sour cream and mayonnaise until smoothly combined.
  • Stir in garlic and green onions.

4 ounces cream cheese
2 ounces fresh goat cheese
3 tablespoons prepared beet horseradish
2 teaspoons finely grated lemon zest
1 pound hot-smoked salmon, skin removed, flaked, divided
2 large radishes, trimmed, finely chopped
1/3 cup finely chopped red onion
1/2 cup drained capers, chopped
3 tablespoons finely chopped chives
2 Belgian endives, leaves separated
Bagel chips or pumpernickel bread (for serving)

Steps:

  • Line a 6"-diameter ring mold, 6"-diameter cake pan or springform pan, or 16-oz. ramekin with plastic wrap, pressing it along the bottom and up the sides (you can also use a small bowl, but the layers won't be quite as even). Pulse cream cheese, goat cheese, horseradish, and lemon zest in a food processor until well combined and creamy.
  • Press a third of smoked salmon into an even layer across the bottom of mold. Spread half of cream cheese mixture evenly over salmon, smoothing surface with a rubber spatula.
  • Toss radishes and onion in a small bowl to combine, then scatter over cream cheese mixture and press down lightly into mixture. Top with half of remaining salmon, making an even layer, then scatter capers over. Spread remaining cream cheese mixture over capers and finish with a final layer of the remaining salmon. Cover dip with plastic wrap and chill at least 1 hour to let dip set and flavors meld.
  • Uncover dip and carefully invert onto a plate. Remove ring mold, then carefully peel away plastic. Top with chives. Serve with endives and bagel chips for spreading over.

1/2 cup dry white wine, such as Sauvignon Blanc
1 salmon fillet (8 ounces), skin on
2 ounces Neufchatel cheese, or whipped light cream cheese (1/4 cup), room temperature
1/2 ounce smoked salmon, finely chopped (about 2 tablespoons)
1 tablespoon sliced scallion (white and pale-green parts only; sliced 1/4 inch thick)
1 teaspoon finely grated lemon zest plus 1 tablespoon fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 teaspoon coarse salt
Freshly ground pepper
4 heads Belgian endive, leaves separated

Steps:

  • Put wine into a medium skillet. Add salmon, and cover with lid. Poach salmon over medium-high heat until it is opaque, 6 to 8 minutes.
  • Remove from heat. Let salmon cool completely in poaching liquid. Transfer salmon to a plate. skin. Using a fork, flake salmon into large pieces.
  • Stir together cheese, smoked salmon, scallion, lemon zest and juice, mustard, and salt in a bowl; season with pepper. Stir in flaked salmon. Serve dip with endive leaves.
