LEMON-TARRAGON SALMON OVER ASPARAGUS

Red onion, lemon, and tarragon come together as a tangy topping for salmon and asparagus. To make this recipe for two, as seen on "The Martha Stewart Show," halve the ingredient quantities.

20 asparagus spears, trimmed to 6 inches and halved lengthwise
4 large radishes, very thinly sliced
4 boneless, skinless salmon fillets, preferably wild sockeye (5 ounces each; 1 inch thick)
Coarse salt and freshly ground pepper
1 small red onion, thinly sliced
1/4 cup plus 1 tablespoon thinly sliced lemon zest strips, plus 1 tablespoon plus 1 teaspoon fresh lemon juice
3 tablespoons fresh tarragon
1 tablespoon plus 1 teaspoon extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Cut out four 12-by-17-inch pieces of parchment; fold each in half crosswise to form a crease, then open.
  • Divide asparagus and radishes evenly among 4 parchment pieces, arranging mixture on 1 side of each crease. Lay 1 salmon fillet on top of each pile. Season each with 1/8 teaspoon salt and some pepper.
  • Toss together onion, zest and juice, tarragon, 2 teaspoons oil, and 1/2 teaspoon salt; divide among salmon, spooning over tops. Fold parchment over ingredients; make overlapping pleats to seal.
  • Bake on 2 baking sheets (2 packets per sheet) for 11 to 12 minutes for medium-rare or 13 minutes for medium. Unwrap; drizzle fillets with remaining 2 teaspoons oil.

1 bunch thin asparagus (about 1 pound), trimmed
3 tablespoons olive oil, divided
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
4 (6-ounce) skin-on salmon fillets
8 teaspoons country-style or whole-grain Dijon mustard
3 tablespoons panko (Japanese breadcrumbs)
1/4 teaspoon smoked paprika
2 tablespoons chopped fresh tarragon

Steps:

  • Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper. Toss asparagus with 2 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on one half of baking sheet. Bake asparagus 5 minutes.
  • Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. Toss panko with remaining 1 Tbsp. oil in a small bowl. Sprinkle panko mixture evenly onto salmon fillets, then dust with smoked paprika.
  • After asparagus has baked for 5 minutes, remove baking sheet from oven. Place prepared salmon fillets skin side down on empty half of baking sheet. Return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14-16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates and top with tarragon.

6 quail eggs , at room temperature
400g smoked salmon
6 anchovies in olive oil, drained
12 chunky slices of baguettes
3 tbsp mayonnaise or aïoli
12 cocktail sticks

Steps:

  • Put a pan of water on to boil. Put the eggs in a small sieve and, as soon as the water reaches a rolling boil, lower the eggs into the water. Turn the heat to a gentle simmer and set the timer for 3 mins.
  • Meanwhile, prepare a bowl of iced water. Drain the eggs and immediately tip into the water to cool. Carefully peel them and cut in half lengthways. Cut the smoked salmon into 2cm strips and cut each anchovy into 4 slivers.
  • Spread the bread with the mayonnaise or aïoli. Top with a swirl of salmon, a halved quail's egg and 2 slivers of anchovy. Push a cocktail stick through each piece of bread to hold it all together, sprinkle over some black pepper and serve.

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

400g new potato, halved if large
2 tbsp olive oil
8 asparagus spears, trimmed and halved
2 handfuls cherry tomatoes
1 tbsp balsamic vinegar
2 salmon fillets, about 140g/5oz each
handful basil leaves

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

Cooling the quails' eggs and peeling them immediately will help ensure a neat finish. But that's the only fiddly part to this dainty and delicious starter.

6 quails' eggs
200g/7oz asparagus tips, woody ends removed
200g/7oz smoked salmon slices
lamb's lettuce, to serve
celery salt, for sprinkling
lemon wedges, to serve
2 tbsp chopped tarragon leaves
1 tsp Dijon mustard
1 tsp light muscovado sugar
1 tbsp lemon juice
6 tbsp olive oil
salt and freshly ground black pepper

Steps:

  • Bring a pan of water to the boil. Add the quails' eggs and boil for 2 minutes. Carefully remove with a slotted spoon, cool under cold running water and peel immediately.
  • Cook the asparagus in a pan of boiling, salted water for 2 minutes. Drain and refresh under cold water to stop the cooking and set the colour. Set aside.
  • Slice each egg in half lengthways and set aside with the asparagus.
  • For the dressing, whisk together all the ingredients in a bowl and season with salt and pepper.
  • To serve, arrange two pieces of salmon on each place, sit a little of the lettuce next to it. Arrange three quails' egg halves alongside, cut-side up and sprinkle with celery salt.
  • Arrange the asparagus spears alongside the salmon with a wedge of lemon. Pour over the tarragon dressing and serve.

1 tbsp olive oil
2 salmon fillets , scaled, skin on, about 140g/5oz each
125g pack asparagus tips, ends trimmed
2 bunches cherry tomatoes on the vine
1 tbsp chopped tarragon
150ml hollandaise sauce , to serve (we used Joubére Fresh Hollandaise Sauce)

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil in an ovenproof pan over a high heat. Add the salmon, skin-side down, then cook for 5 mins until the skin is crisp.
  • Add the asparagus and vine tomatoes to the pan, then place in the oven. Cook for 7-10 mins until the salmon is just cooked through.
  • Add the tarragon to the Hollandaise and stir through. Drizzle over the salmon, then serve.
