SALMON AND WATERCRESS TART



Salmon and watercress tart image

Buttery pastry, rich salmon and peppery watercress make this creamy quiche by Nigel Slater a real treat to come home to. For this recipe you will also need a round, loose-bottomed 24cm/10in tart case at least 3.5cm/1½in deep, plus baking beans for baking blind.

200g/7oz plain flour, plus extra for dusting
100g/3½oz butter, cut into small pieces, plus extra for greasing
1 free-range egg yolk
a little water
400g/14oz salmon fillet
a little butter or groundnut oil
salt and black pepper
2 large handfuls watercress
4 free-range eggs
400ml/14fl oz double cream

Steps:

  • For the pastry case, put the flour and butter into the bowl of a food processor. Add a pinch of salt and blitz until the mixture resembles fine breadcrumbs. If you prefer, rub the butter into the flour in a bowl with your fingertips.
  • Add the egg yolk and enough water to bring the dough to a firm ball. The less water you add the better, as too much will cause your pastry case to shrink in the oven.
  • Pat the pastry into a flat round on a floured surface then roll out to a rough circle large enough to line the tart tin. Lightly butter the tin, dust it with a small amount of flour, shake out any surplus then lower in the circle of pastry. Push the pastry right into the corner where the rim joins the base without stretching it. Make certain there are no holes or tears. Trim the overhanging pastry and place in the fridge to chill for 20 minutes.
  • Set the oven at 200C/400F/Gas 6. Put a baking sheet in the oven to warm. Line the pastry case with kitchen foil and baking beans and slide onto the hot baking sheet. Bake for 15 minutes, then remove from the oven and carefully lift the beans and foil out.
  • Return the pastry case to the oven for five minutes or so, until the surface is dry to the touch. Remove from the oven and set aside. Turn the oven temperature down to 180C/160C FanGas 4.
  • For the filling, place the salmon in a baking dish, brush with oil or butter, season lightly with salt and pepper and bake for 15 minutes, or until the flakes part easily. Remove from the oven and leave to cool a little, then break into large pieces. Place the pieces of fish in the tart case.
  • Wash the watercress leaves and remove and discard the thickest of the stems. Put the still-wet watercress into a saucepan, cover tightly with a lid and place over a high heat. Cook for a couple of minutes, or until the leaves wilt a little. They should keep their colour. Turn the watercress over once with tongs, let it steam a further few seconds, then remove from the heat, cool under cold running water and squeeze dry.
  • Tuck the watercress into the tart case in between the salmon pieces. Gently whisk the eggs and cream, pour into the case and bake for 25 minutes, or until set. Serve warm.

My mother-in-law gave me this one. It is very easy to make and very tasty. It can also be made with tuna, leeks, etc. Even my 5 year-old daughter ate this up and asked for seconds!

1 flaky pastry crust
1 1/2 teaspoons Dijon mustard (approx.)
1 (12 ounce) can salmon, drained
3 eggs
3 tablespoons creme fraiche or 3 tablespoons sour cream
1/4 teaspoon salt
1 dash pepper
1 dash dill
shredded swiss cheese
1 large tomatoes, thinly sliced

Steps:

  • Preheat oven to 350°F (180°C).
  • Lightly grease bottom and sides of pie plate, then place pastry crust in pie plate.
  • Thinly coat the bottom of crust with the mustard (brush it on or spread with a spoon).
  • Spread salmon over bottom of crust, flaking with a fork.
  • In a small bowl, beat eggs, creme fraiche, salt, pepper and dill together. Pour over salmon.
  • Sprinkle as much shredded Swiss cheese as you like over the egg mixture.
  • Top with tomato rounds and bake for 40 minutes.
  • Serve and enjoy!

  • Sift the flour and salt into a large mixing bowl. Add the butter cubes and use your fingertips and thumbs to lightly rub it into the flour until the mixture resembles breadcrumbs. Add the Parmesan (if using) and rub again until the cheese is mixed in evenly. Now add the beaten egg yolk and water, and use a round-bladed knife to combine the wet ingredients with the dry until the pastry comes together. Gather it up with your hands and knead very briefly into a ball on a lightly floured surface. Try not to handle it too much at this stage, or the fat will get warm and the pastry will become tricky to use and may turn out tough and chewy. Wrap in clingfilm and chill for 30 minutes before use.
  • On a lightly floured work surface, roll out the pastry to about 3mm thick and line your tart tin with it, making sure the edge of the pastry stands just a little proud above the rim. Trim the edges, then prick the base with a fork and return it to the fridge for 30 minutes. Don’t be tempted to skip this step – it helps stop the pastry shrinking in the oven.
  • Preheat the oven to 200°C/180°C/gas mark 6 and put a baking sheet in to heat up. Tear off a sheet of foil big enough to enclose all your salmon fillets and lay it on a work surface. Put the salmon in the middle, add the lemon juice and some salt and pepper, and scrunch to seal tightly. Bake in the oven for 12 minutes, then remove and set aside to cool.
  • Take the pastry case out of the fridge, line with crumpled non-stick baking paper and fill with baking beans. Place in the oven on the hot baking sheet and bake for 20 minutes. Then remove the paper and beans and return the case to the oven for a further 5 minutes. This will allow the pastry base to dry out before you pile in the filling.

  • For the pastry. Place the flour, salt and butter into a bowl and rub together until it resembles breadcrumbs. Add enough water to bring the mix together into a dough.
  • Roll the pastry to around 3mm thick. Once rolled, lift the pastry up and use it to line a 23cm sandwich tin, gently pressing it down into place.
  • Lightly prick the base with a fork and blind bake at 170°C (150°C fan/gas mark 3) for 15–20 minutes, until lightly coloured and cooked through. Remove from the oven and leave to cool.
  • For the filling, tear the salmon into bitesize pieces. Next, remove and discard any large or woody stalks from the watercress and roughly chop. Thinly slice the spring onions, and finely chop the dill.
  • Place the smoked salmon, watercress, spring onion and dill in a bowl, and mix to combine well. Place into the cooled pastry case.
