1 cup milk
2 tablespoons distilled white vinegar
2 cups all-purpose flour
1 tablespoon white sugar
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • Stir the milk and vinegar together, and allow to stand until curdled, about 10 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet. In a bowl, mix together the flour, sugar, baking soda, and salt.
  • Gradually stir the soured milk into the flour mixture until the dough just comes together, and turn the dough out onto a well-floured surface. Knead a few times, and shape into a round. Place the dough onto the prepared baking sheet. With a sharp knife, cut an X shape into the top of the dough to release steam and help the bread keep its round shape.
  • Bake in the preheated oven until golden brown, about 45 minutes.

Number Of Ingredients 7

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

Sally was an old Irish neighbor who promised me that this recipe was so easy that even "non-Irish" people like me could make it. She was right! Now I can also celebrate St. Pat's Day with some yummy soda bread!

Number Of Ingredients 9

2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup milk
1 teaspoon vinegar
1 egg, slightly beaten
1/2-1 cup raisins (soak in hot water and squeeze)
1/4 cup butter (room temperature)

Steps:

  • Mix flour, baking powder, baking soda, and sugar.
  • Cut in butter until consistency of cornmeal.
  • Add raisins to mix.
  • Add vinegar to milk to make sour milk.
  • Mix egg into sour milk.
  • Pour milk mixture into flour mixture just until flour is wet.
  • Do not overmix!
  • Grease a cast iron skillet or loaf pan with Pam or butter.
  • Pour mixture into pan.
  • Take a knife and slash an X down the middle of batter.
  • Bake at 350-375 degrees for 40-45 minutes or until toothpick comes out clean.

3 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter (1/4 cup)
2 tablespoons caraway seeds, optional
1 cup raisins
1 cup buttermilk
1 egg

Steps:

  • Set a rack in the middle level of the oven and preheat to 400 degrees.
  • In a mixing bowl, combine the flour, sugar, baking powder, soda and salt and stir well to mix.
  • Add the butter and rub in until the butter disappears into the dry ingredients.
  • Stir in the caraway seeds if used and the raisins.
  • In a small bowl, whisk the buttermilk and egg together and mix into the dough mixture with a rubber spatula.
  • Turn the dough out on a floured work surface and fold it over on itself several times, shaping it into a round loaf. Transfer the loaf to one cookie sheet or jelly roll pan covered with parchment or foil and cut a cross in the top. Bake for 15 minutes then reduce heat to 350 and cook for about 15 to 20 minutes more, until well colored and a toothpick plunged into the center emerges clean.
  • Cool the soda bread on a rack and serve with plenty of sweet butter and bitter orange marmalade.

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
  • With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
  • Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
  • Cool on a baking rack. Serve warm or at room temperature.

Steps:

  • Preheat oven to 425*F
  • Spray a 9 inch round cake pan with cooking spray and set aside.
  • In a bowl combine flour, baking soda and salt. Mix well.
  • Slowly add the buttermilk and mix with your hands. Do not use a stand mixer or hand mixer. Simply do this recipe by hand.
  • Mix dough until it comes together. Do not over mix the dough.
  • Form the dough into a large ball and place in your prepared cake pan.

1 teaspoon sugar (superfine or regular granulated)
1 teaspoon baking soda

1 1/2-2 cups buttermilk or 1 1/2-2 cups soured milk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C or mark 8).
  • Sift the flour, sugar, baking soda, and salt into a large bowl. Make a well in the center and pout in most of the buttermilk, leaving about ¼ cup (50 ml) in the measuring cup. Using one hand with your fingers outstretched like a claw, bring the flour and liquid together, adding more buttermilk, if necessary. Don't knead the mixture, or it will become heavy. The dough should be soft, but not too wet and sticky.
  • When the dough comes together, turn it onto a floured work surface and bring it together a little more. Pat the dough into a round about 1½ inches (4 cm) thick and cut a deep cross in it. Place on a baking sheet. (I lined mine with parchment paper.).
  • Bake for 15 minutes. Turn down the heat to 400 degrees F (200 degrees C or gas mark 6) and bake for 30 minutes more. When done, the load will sound slightly hollow when tapped on the bottom and be golden in color.
  • Rachel recommends turning the bread upside down for the last 5 minutes.

Combine flour, sugar, baking soda and salt in a large bowl. Place 2 tablespoons of flour mixture in a medium sized bowl. Add raisins and toss to coat raisins well in flour mixture (this well keep them from sinking to the bottom of the bread). Set aside the flour coated raisins.
