SALISBURY STEAK WITH MUSHROOM GRAVY
Steps:
- In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning. Mix thoroughly and shape into 4 oval patties.
- Heat oil and 1 tablespoon butter in large skillet over medium-high heat. Brown patties on both sides and transfer to a plate.
- Add remaining butter and cognac (remove pan from heat when adding cognac.) Saute mushrooms for 7 to 8 minutes. Add beef stock and whisk in gravy mix until smooth. Stir in remaining mushroom soup.
- Return patties to skillet and spoon gravy over top. Cover pan and simmer for 20 to 25 minutes.
- Serve Salisbury Steaks and Mushroom Gravy over hot cooked rice.

Steps:
- Place breadcrumbs in a bowl. Use a box grater and grate the onion over the breadcrumbs. Mix with fingers, leave to soak for a few minutes.
- Add remaining Salisbury Steak ingredients into the large bowl. Use your hands to mix until just combined. Mix well for a couple of minutes until the mixture becomes a bit "pasty" which will ensure your patties hold together well.
- Divide into 5 and pat firmly into oval patties around 3/4" / 1 2/3 cm thick.
- Heat oil in a skillet over high heat. Add the steaks and cook the first side for 1 minute or until browned, then flip and brown the other side (they will still be raw inside). Remove onto plate.
- If skillet is looking dry, add a touch more oil. Add chopped onion and garlic and cook for 2 minute until onions are a bit translucent.
- Add the mushrooms into the skillet and cook for 2 - 3 minutes until golden.
- Turn heat down to medium. Add butter. Once melted, add flour and cook for 30 seconds, stirring constantly.
- Gradually add in beef broth, stirring as you go. Once mostly lump free, whisk in remaining Gravy ingredients.
- Add steaks along with the juices on the plate. Cook for 5 - 7 minutes, or until gravy is thickened, stirring occasionally around the steaks. If the gravy thickens too quickly, add more water.
- Remove steaks onto a plate. Taste gravy and adjust salt and pepper to taste.
- Serve salisbury steaks topped with the mushroom gravy - over mashed potato is ideal! Sprinkle with a bit of parsley if desired.

When I was a kid, we didn't have smartphones or the internet, all we had was a TV. But we didn't care because as we watched, we got to enjoy a little something called a "TV dinner." The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

- Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
- Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.
- While the meat is resting, melt 2 tablespoons butter in a large nonstick pan over high heat; add mushrooms, onions, and a pinch of salt. Saute, stirring occasionally, until very nicely browned, 5 to 8 minutes. Reduce heat to medium and add flour. Cook and stir for 3 minutes.
- Stir in ketchup, Worcestershire sauce, and beef broth; increase heat to high. Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
- Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
- Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.

- Saute half of chopped onion in 1 Tabsp hot oil in medium skillet over medium heat until tender. Add garlic, and saute 30 seconds. Remove from heat and let cool.
- Combine cooked onion mixture, beef, and next 4 ingredients, 1/4 teasp salt, and 1/2 teasp pepper. Shape into 6 patties.
- Cook patties in remaining 2 Tabsp. hot oil over medium-high heat 3 minutes on each side or until browned. (Do not cook until done). Remove patties and set aside.
- Add remaining onion to drippings in skillet, and saute over medium-high heat until tender; add mushrooms and saute 3 minutes. Whisk in flour, and cook, stirring constantly, 1 minute, whisk in wine, broth, and remaining 3/4 teasp salt and 1/2 teasp of pepper. Bring to a boil, reduce heat to low and simmer stirring occasionally, 5 minutes.
- Place patties in lightly greased baking dish, top evenly with gravy.
- Bake, covered, at 350 for 25 minutes or until done.
- In the summer I make this recipe in my electric fry pan.

- Combine ground beef, bread crumbs, chopped onion, egg, salt, and black pepper in a bowl until evenly mixed. Shape beef mixture into 4 patties, about 3/4 inch thick.

This flavorful recipe costs a little more due to the Italian sausage and the ground beef but it is fairly simple to make and, depending on what you serve with it, somewhat impressive.

- In a large bowl, whisk the egg with 2 tsp Worcestershire sauce, 1 tsp mustard, 1/2 tsp salt and 1/4 tsp pepper. Add the beef, sausage, breadcrumbs, onion and garlic and mix until well combined. Shape into 4 oval patties about 1/2 inch thick.
- Heat the oil and 1 tbsp of the butter in a large skillet over medium-high heat until the butter stops foaming. Add the patties and cook, flipping once, until well browned and cooked through (about 10 minutes). Transfer to a plate and cover to keep warm. Wipe out the skillet.
- In a small bowl, stir 2 tbsp of the beef broth with the cornstarch.
- Melt the remaining 1 tbsp butter in the skillet over medium-high heat. Add the mushrooms and 1/2 tsp salt and cook, stirring occasionally, until the mushrooms are browned (5 minutes). Add the remaining beef broth, 1 tsp Worcestershire, and 2 tsp mustard. Stir the cornstarch mixture again and then whisk it into the skillet. Cook, whisking occasionally, until the mixture is slightly thickened (5-7 minutes). Season to taste with salt and pepper. Return the patties to the skillet to reheat.

This is wonderful served with mashed potatoes, noodles or rice. You can also make Salisbury Pork Chops by using 6 chops each 1/2" thick. Then just cook them for 15-20 minutes in step 5.

- 4 min per side.
- Season with salt& pepper.

- Preheat oven to 300°F.
- Spray shallow baking dish with non-stick cooking spray.
- In large bowl, combine ground beef, tomato, eggs, onion, salt, and pepper. Mix well. Shape into eight 4-inch round patties & place in baking pan.

This is total comfort food at it's very best! ---to save time this may also be made using store bought frozen hamburger patties ---the yield amount for this is six if you like lots of gravy then increase amounts to 3 cups beef broth and 6-7 tablespoons flour --- this is a must served with mashed potatoes :)

- In a bowl combine all hamburger mixture until combined.
- Shape into 6 patties.
- Heat oil in a large skillet over medium-high heat.
- Add in hamburger patties, cook until browned on each side (about 3-4 minutes per side, the burgers do not have to be cooked all the way through as they will finish cooking completely in the gravy) remove to a plate.
- To the same skillet add in sliced onion and mushrooms; cook stirring scraping up any browned bits that have accumulated on the bottom of the skillet; cook for about 8-10 minutes or until the onions are softened (adding in more oil if needed).
- Add in flour and cayenne pepper; stir for 2 minutes.
- Add in beef broth, Worcestershire sauce and black pepper; bring to a simmer stirring continuously until bubbly and thickened (at this point you may add in the beef bouillon powder).
- Add in the patties back to the skillet.
- Reduce heat to low and simmer uncovered for about 25 minutes turning the patties over once halfway through cooking.

- Combine soup, mustard, Worcestershire and horseradish in a bowl and set aside.
- In another bowl, mix together egg, bread crumbs, onion, salt, pepper, 1/4 cup soup mixture and the ground beef.
- Form mixture into 4-6 patties.
- Brown patties in oil and drain off excess fat.
- Combine rest of the soup mixture with the 1/2 cup water and pour over the patties.

- Gently combine ground beef, worchestershire sauce, steak spice and onion - be careful not to overwork the meat mixture.
- Shape the meat into oval patties, not too thin.
- At medium to high heat, fry the meat patties approximately 6 mins on each side - turn only once.
- Remove the cooked patties to a platter and cover with tin foil to keep them warm.
- Add butter to the same pan and melt.
- Add the mushrooms, salt and pepper to the pan, saute until nice a golden brown (approx. 3-5 mins).
- Sprinkly the flour over the mushrooms and cook for 1-2 mins until flour has absorbed the butter (sometimes I added a little bit more butter at this stage).
- Whisk in the beef stock and cook until thickened. Check for seasoning.
- Serve gravy over the meat patties.
