SALISBURY STEAK WITH MUSHROOMS

Steps:
- Gently mix the beef, egg, onion, cracker crumbs, sage, 1/2 teaspoon salt and a few grinds of pepper in a large bowl using your hands. Divide into 4 equal portions and shape into oval patties, about 1/2 inch thick.
- Heat 1 tablespoon butter in a large skillet over medium-high heat. Brown the patties, about 4 minutes per side. Transfer to a plate.
- Add 1 tablespoon butter to the skillet and cook the mushrooms, stirring occasionally, until slightly browned, about 2 minutes. Stir in the Worcestershire sauce, and salt and pepper to taste, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Sprinkle in the flour and stir, then stir in the hot water and simmer until the sauce begins to thicken, about 2 minutes. Add the remaining 1 tablespoon butter, swirling to combine.
- Return the patties and any juices from the plate to the skillet. Simmer until the sauce thickens and the patties are cooked through, about 2 minutes. Sprinkle with parsley and season with salt and pepper. Serve with noodles, if desired.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat the oil in a Dutch oven, or deep iron skillet. Dredge steaks in some of the flour, reserving the rest of the flour. Brown steaks in the oil a few at a time, and remove to a plate. When all of the steaks are browned, place a layer of sliced onions into the Dutch oven, and alternate layers of steak and onion. Pour in beef stock and Worcestershire sauce.
- Cover, and bake for 2 hours in the preheated oven. Remove steaks and onions from the pan, and whisk in 2 tablespoons of the remaining flour. Bring to a boil over medium heat, and cook, stirring until thickened. Serve steaks and onions with gravy with mashed potatoes or noodles.

- In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
- In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.

- Preheat oven to 350 degrees F (175 degrees C). Prepare a large casserole dish with cooking spray.
- Lightly mix ground beef, 1/2 cup onion, bread crumbs, 3 tablespoons beef broth, milk, and 1/4 teaspoon black pepper together in a bowl; divide into 5 portions and shape into patties.
- Season flour with salt and pepper in a wide, shallow dish. Gently lay patties into the flour to lightly coat.
- Heat vegetable oil in a 10-inch skillet over medium-high heat. Fry patties in hot oil until browned completely, 3 to 5 minutes per side. Remove patties to a plate lined with paper towel to drain excess grease.
- Stir remaining beef broth, cream of mushroom soup, salt, and 1/4 teaspoon black pepper together in a bowl until smooth.
- Arrange drained patties into the prepared casserole dish. Spread onion slices atop the patties and pour the soup mixture over the patties to cover completely.
- Bake in preheated oven until no longer pink in the center, 45 minutes to 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

A good recipe for Salisbury steak recipe is hard to find! I remember enjoying it often when I was growing up, but when I decided to add it to my recipe collection, I wasn't able to find it in my modern cookbooks. - Combine chuck, 3 tablespoons onion soup mix, horseradish, and Worcestershire sauce.
- Shape into 4 patties.
- In skillet, heat 1 tablespoon oil over medium heat.
- Add patties; cook, turning once, until no longer pink in the middle.
- Remove from skillet; cover with foil.
- In a small bowl, whisk flour, salt, and remaining soup mix into 1 cup water.
- In clean skillet, heat remaining oil over medium heat.
- Add onion; cook, stirring often, until softened

- Cook egg noodles according to the directions on the package.
- Using a Ziploc bag and your hands, or a food processor, crush saltines crackers into crumbs.
- In a large bowl, combine the egg white, onion, crushed saltines, ketchup, Worcestershire sauce, garlic, pepper, and ground beef, using hands to mix well.
- Shape into five oval shaped patties. One patty will be about 1/2 cup of the beef mixture.
- Spray a large skillet with cooking spray and cook patties over medium heat for 3 minutes on both sides. Transfer patties to a plate.
- Whisk together the soup mix, cornstarch, water, and bouillon cube in the skillet. Bring to a boil. Put patties back into the skillet with the sauce.
- Reduce heat. Cover and cook at a low heat 5-7 minutes or until meat is fully cooked.
- Sprinkle with parsley and serve with egg noodles.

- Preheat the broiler. Line a broiler pan with foil. Cook egg noodles according to package directions.
- Coarsely chop the mushrooms, celery, onion, and garlic.
- Combine half the chopped vegetables with the ground beef, 1/3 cup of the breadcrumbs, the salt and pepper.
- Form the mixture into patties, a scant ½ inch thick.
- Place the patties on the broiler pan and broil 4 inches from heat for 5 minutes. Turn over and broil for 7 minutes longer, or until browned on top.
- While patties are cooking, melt the butter in a medium skillet over medium-high heat until hot.
- Add the reserved chopped vegetables to the skillet and sauté until the onion is slightly softened, about 2 minutes.
- Stir in the beef broth, tomato paste and remaining 1/3 cup breadcrumbs.
- Bring the mixture to a boil, reduce the heat to medium-low and cover and simmer for about 5 minutes.
- Spoon sauce over Salisbury steaks before serving. Serve steaks with buttered egg noodles. Makes 4 servings.

- In a large bowl, beat egg.
- Stir in 1/3 cup of soup, bread crumbs salt and pepper.
- Add beef; mix gently.
- Shape into six oval patties.
- Brown in a skillet over medium heat for 3-4 minutes on each side.
- Remove and set aside; discard drippings.
- In the skillet, combine flour and water until smooth; add the ketchup, Worcestershire sauce, mustard and remaining soup; bring to a boil.
- Cook and stir for 2 minutes.
- Return patties to skillet.
- Cover and simmer for 15 minutes or until meat is no longer pink.
- Serve patties and gravy over noodles.
- Garnish with parsley if desired.
- Serves 6.
- To freeze, freeze the meat patties in the gravy.
- Don't freeze with the noodles, (cook the noodles fresh when serving).
- Use a plastic zipper freezer bag and squeeze out all the excess air before sealing.
- Or freeze in plastic containers, filled to within 1/2 inch of the top.
- To serve, defrost then reheat in the microwave until hot.

Cold wintery, blustery day is perfect for developing a new recipe. I took several recipes, tricks and tips I've learn through the years and came up with this one. It was a huge hit with my husband and I have to brag, me as well! Very tender and gravy that is out of this world!

- In large mixing bowl combine the lean ground beef, eggs, salt, pepper, garlic powder, Panko breadcrumbs, dried onions and Cream of Mushroom soup. Mix together well.
- Prepare a wire cooling rack by covering it with parchment paper. Shape the meat mixture into 6-8 oval shaped patties. We like ours thick about 1-inch thick, so I got 6 patties out of this batch.
- Leaving the steaks uncovered, place the rack in the refrigerator for 4-6 hours (can do this the night before if you like). This gives the meat a chance to absorb all the flavors you've mixed into it.
- Approximately 1 hour before you want to serve this meal, preheat your skillet over medium-high heat. I used my cast iron and let the oven heat it for me as I sliced the onions. Preheat oven to 375 degrees F. While waiting for the oven, slice the onions into 1/4-inch thick slices. Set aside. When oven is preheated, take your skillet out and on medium-high heat, melt 2 TBSP butter.
- Place 3-4 steaks in the skillet, make sure you do not over crowd the pan. Brown for 3-4 minutes then flip over and brown the other side for 3-4 minutes.
- Remove from skillet and set aside on a plate. Repeat with remaining steaks adding another tablespoon butter if needed. Remove these steaks and let rest with the others. Now add another 1-2 TBSP butter to the same skillet (do NOT remove any of the drippings or fond from the skillet).
- Brown the sliced onions in the skillet until golden and soft, this should take 7-10 minutes. Stir in flour - start with 3 TBSP stirring constantly to cook the flour, if it appears too wet, add another TBSP flour and keep stirring. Now stir in 2 TBSP beef base (I used Better than Bouillon) and add 3 cups HOT water. (Always add hot water to a hot pan - especially cast iron, you don't want it to crack or warp!). Once you have the water added and the lumps smoothed out, return the steaks to the pan.
- Spoon the gravy over the tops and if the gravy appears too thick add more hot water, 1/4 cup at a time until it's the consistency you desire. Place skillet in the oven and bake uncovered for 30-40 minutes. Check it halfway through the time and baste the steaks with the gravy.
- Delicious with mashed potatoes, rice or noodles of your choice.

SALISBURY STEAK
I came up with this recipe while referencing another recipe here on Zaar. I would have simply reviewed the recipe and added to my cookbook but I made such changes that it is not like the original recipe I referenced, so I feel it would not be a fair rating if I did rate it(even a high rating, which it would have been) I am not saying this is better, but different, the recipe I went by is recipe #16143 . The main reason for the biggest change - the addition of brown gravy is because I like salisbury steaks with mashed potatoes and in order to have enough gravy for 4 or 5 serving of potatoes needs more gravy, plus when I think of salisbury steak I think of brown gravy.

- In large bowl, mix thoroughly 1/2 cup soup, the beef, bread crumbs, onion,worcestershire, salt, pepper to taste and egg.
- Shape firmly into 5 patties, about 3/4 inch thick.
- In large skillet over medium-high heat, melt margarine and cook 3 or 4 patties until browned on both sides, remove.
- Repeat with remaining patties and remove, spoon off fat.
- While patties are browning mix brown gravy mix with 1 cup of cold water.
- In same skillet, patties removed, add remaining mushroom soup, brown gravy and mushrooms; bring to boil.
- Return patties to skillet, reduce heat to low cover; simmer 20 minutes or until patties are thoroughly cooked and no longer pink, turning patties occasionally.
- While patties are cooking, saute sliced onion in 1 teaspoon of butter over medium heat stirring often until soft and caramelized.
- Serve patties topped with sauteed onions and mushroom sauce spooned over.
- I serve this with mashed potatoes, you could use egg noodles instead.
