WATERCRESS SALAD WITH LEMON VINAIGRETTE
Watercress has a delicate but peppery flavor making it the perfect base for this simple salad. Drizzle with my homemade, easy lemon-dijon vinaigrette!

Steps:
- In a small bowl or food processor, whisk together the lemon juice, mustard, and sea salt until mixed well.
- Add 3 tablespoons of the oil slowly, while mixing constantly until the dressing is well blended. Season with sea salt and pepper and any other spices you'd like.
- Lightly rinse off any dirt and shake or pat watercress dry. Snip the stems with leaves off roots (if attached) and disccardany thick stems that may be touggh to eat, keepingg thin stems. (both are edible!
- Then, dress watercress with the vinaigrette, and serve as a side or base to your favorite protein!
FRENCH COUNTRY SALAD WITH LEMON DIJON VINAIGRETTE
A light and tasty salad made with fresh arugula, asparagus, goat cheese, beets, and a delectable lemon dijon vinaigrette.

- Preheat the oven to 400°F. Line a baking sheet with a piece of parchment paper. Cut the asparagus into 1 1/2" long pieces. Spread the asparagus out onto the prepared baking sheet. Drizzle olive oil over the asparagus along with a sprinkle of sea salt. Roast for 4 to 5 minutes, until the asparagus is tender but still has a bite. Allow the asparagus to cool before using.
- Toss the arugula with the asparagus in a large bowl; temporarily set aside.
- Whisk all of the vinaigrette ingredients together in a small measuring cup.
- Toss the salad with the vinaigrette until everything is lightly coated in the dressing. Then garnish the salad with the sliced beets, toasted nuts, and crumbled goat cheese.

SALAD WITH LEMON DIJON VINAIGRETTE
Romaine Salad with a homemade Lemon Dijon Vinaigrette and homemade croutons.

- Preheat oven to 350 degrees F
- Cut bread into 1 inch cubes and put into a medium bowl. In a small bowl combine and mix the olive oil, 1 clove minced garlic, oregano, black pepper, and parmesan cheese. Pour over the bread, mix to coat the bread with olive oil mixture. Spread onto a baking sheet in an even layer, bake for 10 minutes until bread is crisped. Set aside.
- In a small bowl combine vinaigrette ingredients: Red wine vinegar, dijon mustard, 2 cloves minced garlic, fresh lemon juice, Worcestershire sauce, salt & pepper. Whisk in the olive oil until vinaigrette is combined.
- Place the sliced romaine leaves into a large bowl, add the vinaigrette and toss the salad to coat the leaves evenly. Serve the salad and garnish with homemade croutons and top with freshly shaven/grated parmesan cheese and fresh ground black pepper.

3-BEAN SALAD WITH LEMON VINAIGRETTE
Steps:
- For the lemon vinaigrette: Using a rasp grater, grate the garlic into a bowl. Add the lemon juice, cumin, honey and Dijon. Whisk in the olive oil and season with salt and pepper.
- For the 3-bean salad: Mix the celery, green onions, black beans, kidney beans and white beans in a large bowl.
- Dress the salad with 1/4 cup of the vinaigrette and toss well. Season with salt and pepper and toss with the parsley.
LEMON GARLIC DIJON VINAIGRETTE
There are other Lemon Garlic vinaigrette on Zaar but the touch of Dijon in this recipe gives it a special character. Lovely on a simple lettuce, tomato salad

- Bring the quinoa and 1 1/3 cup water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
