SAGE TEA
This description is from Back to Eden, a book written early this century. I do not mean to offend anybody, just quoting what the book says. "It has been said American people would do well if they would use sage instead of tea and coffee. The Chinese make fun of the American people because they buy the expensive tea for their drink and pay a big price for it, while the Chinese buy sage from America for a small price and drink that for their tea, which is a most wonderful remedy. The Chinese know that the sage tea will keep them well, while the tea that we buy from the Chinese makes us sick, is a cause of great nervousness and one of the causes of insanity. Sage tea is very soothing to the nerves, good for stomach troubles, gas, makes an excellent gargle for the throat, will expel worms, stop bleeding of wounds, good for liver and kidney troubles, a good wash for wounds, good hair tonic, fever reducer, and good for circulation. Steps:
- Bring water to a boil. Remove from heat and put sage in the water. Let steep for about 3-5 minutes.
- Strain, pour in cup, add lemon and honey, if desired, and drink. You may drink this hot or cold. Enjoy!

CANADIAN TEA BISCUITS

- Preheat oven to 425 degrees F (220 degrees C).
- Whisk together flour, baking powder, and salt in a bowl. Cut in shortening with a knife or pastry blender until the mixture resembles coarse crumbs. Stir Cheddar cheese and chives into flour mixture; gradually stir in milk to form a soft dough.
- Turn dough out onto a lightly floured surface and with floured hands, knead until smooth, about 15 times. Roll dough out to a 1-inch thickness with a floured rolling pin. Cut biscuits with a 2 1/2-inch round cookie cutter; place onto an ungreased baking sheet. Press dough trimmings together, roll out again, and cut remaining dough into rounds.
- Bake in the preheated oven until golden brown, about 15 minutes.

WILD SAGE BREAD
Cooking time includes time for all risings. This makes an excellent bread to make stuffing for your Thanksgiving turkey. Or just eat plain with butter.

Steps:
- Combine sugar, sage, salt, baking soda and flour.
- Dissolve yeast in 1/4 cup warm water.
- Beat egg and cottage cheese together until smooth.
- Add melted shortening and yeast.
- Add flour mixture slowly to egg mixture, beating well after each addition until a stiff dough is formed.
- Cover dough with cloth and put in warm place until double in bulk (about 1 hour).
- Punch dough down, knead for one minute and place in well-greased pan.
- Cover and let rise for 40 minutes.
- Bake in a 350-degree oven for 50 minutes.
- Brush top with melted shortening and sprinkle with crushed, roasted pine nuts or coarse salt.
LEMON-THYME TEA BREAD

- In a microwave-safe bowl, combine milk and thyme. Microwave, uncovered, on high 1-2 minutes or until bubbly; cover and let stand until cooled to room temperature., Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt; add to creamed mixture alternately with reserved milk mixture. Stir in lemon juice and zest. , Pour into a greased 9x5-in. loaf pan. Bake 40-45 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack. , In a small bowl, combine glaze ingredients until smooth; drizzle over bread.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. , Combine the flour, baking powder and baking soda; add to creamed mixture alternately with sour cream, beating well after each addition. Fold in apricots and pecans. , Spoon into two greased 8x4-in. loaf pans. For topping, combine flour and sugar in a small bowl; cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. , Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
