Our Beef and Broccoli Casserole is made with flank steak, tons of veggies, and a homemade Asian brown sauce that is savory and a little bit sweet.

2 cups minute/instant white rice (option to use minute/instant brown rice)
2 heads broccoli florets (cut into bite-sized pieces (~6-8 cups florets))
1 large red pepper (finely diced)
1/2 medium yellow onion (finely diced)
1/3 cup soy sauce (option to swap tamari)
3 tablespoons hoisin sauce (gluten-free, if desired)
1 tablespoon minced garlic
1 tablespoon maple syrup
2 teaspoons red chili sauce (or more if you like it spicy)
1.5 cup beef broth
1 cup water
1 lb. flank steak (tenderized and cut into 1/2-inch pieces)

Steps:

  • First, preheat oven to 375ºF and spray a 9-inch x 13-inch casserole dish with nonstick cooking spray.
  • Then, sprinkle the white rice onto the bottom of the casserole dish.
  • Next, prepare veggies. Cut broccoli into bite-sized pieces and finely dice a large red pepper and half a yellow onion. Add those to the casserole dish.
  • Prepare sauce by mixing together soy sauce, hoisin, minced garlic, maple syrup, red chili sauce, beef broth, and water. Set aside.
  • Prepare flank steak by placing it in between 2 pieces of parchment paper. Then, using a meat tenderizer, tenderize meat until it's around 1/2-inch thick. This will help break down the beef and make it a lot less chewy.
  • Next, slice the beef into 1/2-inch pieces and add it to the casserole dish.
  • Pour the sauce over steak, veggies, and rice, and use a large wooden spoon to mix everything together.
  • Cover casserole dish with a piece of tin foil and bake at 375ºF for 20 minutes.
  • Remove from oven and mix. Cover again and bake for an additional 15 minutes.
  • Remove from oven and uncover. Then, bake for an additional 10-15 minutes, uncovered or until the beef is fully cooked and the rice is no longer crunchy.
  • Let sit for around 5-10 minutes before serving to let the sauce fully soak up.

2 pounds ground beef
1 (8 ounce) package fresh mushrooms
1 large onion, chopped
salt to taste
ground black pepper to taste
2 (10.75 ounce) cans condensed cream of celery soup
1 (16 ounce) container sour cream
1 (16 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare the broccoli according to package directions.
  • In a skillet over medium heat, mix the ground beef, mushrooms, and onion. Cook until beef is evenly brown; drain grease. Season with salt and pepper, and mix in cream of celery soup and sour cream. Continue cooking until heated through. Transfer to a medium baking dish, and evenly layer with broccoli. Top with cheese.
  • Bake 1 hour in the preheated oven, until bubbly and lightly brown.

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

3 tablespoons cornstarch, divided
1/2 cup water, plus
2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
2 tablespoons vegetable oil, divided
4 cups broccoli florets
1 small onion, cut into wedges
1/3 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
hot cooked rice, for serving
toasted sesame seeds, for serving (optional)

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.
  • Serve over rice and garnish with toasted sesame seeds (optional).

A friend shared this with me. I don't like broccoli and she was trying to get me to try it. It took one bite and I was hooked! It is so yummy and easy to make. I usually make ahead and freeze or store in fridge for a day. Add at least 10 more minutes bake time if you do this.

4 cups frozen potato slices (1/2 30 oz bag)
1 lb cooked and drained ground beef
1 (10 ounce) package frozen chopped broccoli, thawed
1 (2 7/8 ounce) can French-fried onions
2 cans cream of celery soup
1/3 cup milk
2 cups shredded cheddar cheese

Steps:

  • Place potatoes on bottom and sides of 8x12 inch casserole dish (like a pie crust).
  • Bake uncovered at 400 degrees for 10 minutes or until golden brown.
  • Mix soup, milk and 1 cup of cheese together.
  • Add cooked ground beef, broccoli and 1/2 can of french fried onions and mix well.
  • Place in potato shell and bake uncovered at 400 degrees for 20 minutes.
  • Top with rest of cheese and french fried onions and bake 2-3 minutes until cheese is melted and bubbling.

3 tablespoons grated parmesan cheese
3/4 lb penne pasta or 3/4 lb other penne pasta
3 tablespoons all-purpose flour
1 teaspoon thyme
1/4 teaspoon crushed red pepper flakes
1 lb ground beef
1 tablespoon unsalted butter
1/8 teaspoon nutmeg, grated
1 1/2 cups reduced-sodium chicken broth
1 cup fresh breadcrumb
1 1/2 cups low-fat milk
1 cup fat-free cheddar cheese, shredded
2 cups broccoli florets
1 small onion, chopped
2 garlic cloves, crushed

Steps:

  • Preheat oven to 375°F
  • Place broccoli in a steamer basket over boiling water.
  • Cover pan and steam 3 minutes or until tender.
  • Rinse broccoli under cold running water and drain well.
  • Transfer to a buttered, deep casserole dish.
  • Cook pasta in a large pan of boiling water 7 minutes, or until al dente. Drain, rinse under cold water, and drain again.
  • Stir into broccoli.
  • Melt 2 tsp butter in a heavy nonstick skillet over medium high heat.
  • Sauté meat, onion and garlic 5 minutes, stirring often to break up meat, until browned.
  • Sprinkle on flour and thyme.
  • Sauté 2 minutes, stirring often.
  • Stir in next 4 ingredients and salt to taste.
  • Bring to a boil, stirring until thickened.
  • Reduce heat to low and simmer 3 minutes, stirring often.
  • Remove from heat and stir in Cheddar cheese until melted.
  • Stir into casserole and toss.
  • Top with breadcrumbs and Parmesan and dot with remaining butter.
  • Bake about 30 minutes until casserole is bubbling and top is golden brown.

I make this casserole frequently for supper because it is cheap, fast, filling and great for kids. It's even good for very young kids who are just beginning to eat table foods. When I was a kid, we would have this as a side dish for holiday dinners, but I make it as a simple supper with crackers or dinner rolls and salad. You can substitute ingredients to fit what you have on hand.

  • Preheat oven to 350 degrees.
  • Spray a 9x13 casserole dish with cooking spray. Set aside.

Steps:

  • Brown ground beef, onion, salt, pepper and garlic powder. While beef is browning, cook Minute Rice according to directions, mix in Cheez Whiz and soup.
  • Pour browned beef mixture into 9x13 baking dish, cover with broccoli, then pour cheese and rice mixture over all. Cover all with crushed potato chips.
  • Bake at 350°F for 30-45 minutes until hot through.
