CHEESY SAUSAGE BREAKFAST CASSEROLE

Number Of Ingredients 12

1 onion, chopped
1 bell pepper, cored, seeded and chopped
2 cloves garlic, very finely chopped
6 large eggs
21/2 cups milk
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh flat-leaf parsley
12 ounces white bread, cubed (about 1/2 loaf)
1/2 cup grated Cheddar cheese (about 2 ounces)
Coarse salt and freshly ground black pepper
2 teaspoons canola oil, plus more for the dish
1/2 pound pork or turkey country sausage, casings removed

Steps:

  • In a large nonstick skillet, heat the oil over medium heat. Add the sausage and cook, stirring and breaking it up into smaller pieces, until it begins to brown, 3 to 5 minutes. Add the onion and bell pepper and cook until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Remove from the heat to cool slightly.
  • Meanwhile, whisk together the eggs, milk, sage and parsley in a large bowl. Add the cubed bread, sausage-vegetable mixture and 1/4 cup of the cheese. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least 30 minutes or overnight.
  • Preheat the oven to 350 degrees F. Brush a medium casserole dish with oil. Pour the chilled bread mixture into the prepared casserole dish. Sprinkle with the remaining 1/4 cup of cheese. Let sit at room temperature for 20 minutes.
  • Transfer the casserole to the oven and bake until puffed and golden brown, about 30 minutes. (If the top of the casserole starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.

1 pound sage flavored breakfast sausage
3 cups shredded potatoes, drained and pressed
¼ cup butter, melted
12 ounces mild Cheddar cheese, shredded
½ cup onion, shredded
1 (16 ounce) container small curd cottage cheese
6 jumbo eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
  • Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

1 teaspoon salt
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine the first five ingredients. Crumble pork over mixture and mix well. Shape into six patties. Chill at least 1 hour. , Fry in a skillet for 3-4 minutes on each side or until a thermometer reads 160°.

1 lb Jimmy Dean sausage
1/2 cup chopped onion
1/2 cup green pepper
4 cups frozen hash browns
9 -12 eggs, depending on size
1 1/2 cups cheddar cheese, shredded

Steps:

  • Brown the sausage and drain.
  • In a greased 9x13 inch cake pan, sprinkle the hashbrowns, then sausage, onion, green peppers, and 1/2 cheese.
  • Mix the eggs until scrambled and pour over the hashbrown mixture in cake pan.
  • Fork the ingredients together.
  • Bake at 350* for 30 minutes, checking to see if done in the center.
  • Sprinkle the remaining cheese over the top and put back in the oven until melted.
  • This can be done the night before and put in the refrigerator overnight.
  • You may need to cook a little longer, though.
  • You can be creative, substitute ham for the sauasage.
  • or pepper jack cheese for the cheddar.

8 ounces sharp cheddar cheese
0.5 cups green onions

Steps:

  • PREHEAT oven to 325 degrees F. In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, combine eggs, milk, mustard, and salt, stir well.
  • DISTRIBUTE half the bread evenly in a buttered 9x13x2" baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half the onions. Repeat layering using remaining bread, pepper, cheese, sausage and onions. Pour egg mixture evenly over casserole.
  • BAKE uncovered for 60 minutes. Tent with foil if top begins to brown too quickly.

1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten

Steps:

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
  • The next day, preheat the oven to 350 degrees F.
  • Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

½ teaspoon salt

  • Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.

This recipe is easy, turns out well every time, can be quickly made the morning of, and is easily tailored to your tastes. Plus, my husband loves it!

1 (16 ounce) bag frozen hash browns (Seasoned or unseasoned to your taste)
1/4 cup melted butter
1 lb sausage (we prefer homemade or Jimmy Dean's sage)
1/2 yellow onion, chopped

12 ounces shredded cheddar cheese
16 ounces small curd cottage cheese

Steps:

  • Brown sausage. Drain.
  • Grease a 13x9 pan. In the pan, mix together the melted butter and frozen hash browns. Smooth into bottom layer.
  • In another bowl, mix together the sausage, eggs, onion, cheddar and cottage cheese.
  • Pour mixture over the hashbrowns.
