SAUTEED VEAL MEDALLIONS WITH SAGE AND MUSHROOMS



Sauteed Veal Medallions with Sage and Mushrooms image

Provided by Food Network

Yield 4 servings

Number Of Ingredients 10

3 tablespoons olive oil
1-1/4 pounds veal tenderloin (also called filet) cut into 8 equal medallions
Salt and freshly ground black pepper to taste
1 cup parboiled pearl onions (frozen are fine)
12 ounces fresh, cleaned, sliced mushrooms such as cremini, portobello, shiitake, oyster, or any combination
1/4 cup dry white wine
1 cup Beef and Veal Stock
3 tablespoons chopped fresh sage leaves
2 ounces Prosciutto ham, thinlysliced and julienne
2 tablespoons whole butter

Steps:

  • Season the veal with salt and pepper. Heat the olive oil in a skillet over medium heat for 2 to 3 minutes, until hot. Add the veal and brown well for 3 to 4 minutes on one side, then turn and brown the second side for another 3 to 4 minutes. When the veal is nicely browned on both sides, remove from the pan. In the same pan, saute the onions in the pan juices for 3 to 4 minutes, or until they are browned. Add the mushrooms to the onions and saute together until the mushrooms begin to wilt. Add the white wine and reduce until the wine evaporates. Add the veal stock, sage, and Prosciutto, and bring to a boil. Reduce the heat to low, return the veal to the pan and reheat for 1 minute to warm. Continue to cook the mushrooms and sage sauce for an additional 10 minutes. Add the butter to the finished sauce and whisk until it is incorporated. Serve the veal on individual plates with some of the sauce spooned over it.;

Canola oil, cooking spray
2 (10-ounce) packages white button mushrooms
3 tablespoons canola oil
1 medium onion, diced
3 stalks celery, diced
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
2 eggs, beaten
2 (14.5-ounce) cans chicken broth
1 loaf day old French bread, diced into 1/2-inch cubes
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9 by 13-inch baking dish with cooking spray.
  • Remove the mushroom caps from the stems. Reserve the caps for the online round 2 recipe Stuffed Mushrooms. Roughly chop the stems and set aside.
  • In a large skillet over medium-high heat, add the canola oil. Stir in the onions and celery and cook until softened slightly, about 2 minutes. Add the mushroom stems and herbs and continue to cook until the mushrooms are browned and the vegetables are slightly tender, about 5 minutes.
  • Whisk together the eggs and chicken broth in a large bowl. Add the cubed bread and toss to coat all of the bread. Stir in the cooked onions and mushroom mixture and toss to combine. Season with salt and pepper, to taste. Transfer to the baking dish and bake, covered loosely with foil, for 40 to 50 minutes. Remove the foil for the last 10 minutes of cooking time to brown the top. Remove from the oven and serve.
  • Use the leftovers from this recipe to make quesadillas and stuffed mushrooms.

SAUSAGE-STUFFED MUSHROOMS

24 ounces white button mushrooms
1/3 pound hot pork sausage
1 tablespoon minced fresh rosemary
2 teaspoons minced fresh sage
4 cloves garlic, finely minced
1/2 medium onion, finely diced
1/3 cup dry white wine
Kosher salt and freshly ground black pepper
8 ounces cream cheese
1 large egg yolk
3/4 cup grated sharp Cheddar cheese
2 tablespoons chopped chives

Steps:

  • Preheat the oven to 350 degrees F.
  • Wipe off or wash the mushrooms in cold water. Pop out the stems, reserving. Chop the mushroom stems finely and set aside.
  • Crumble the sausage into a hot dry skillet and cook until browned, 6 to 8 minutes. Set aside on a plate to cool.
  • Add the rosemary, sage, garlic and onions to the same skillet; cook for 2 minutes over medium-low heat. Pour in the wine to deglaze the skillet, allowing the liquid to evaporate for a couple of minutes. Add the chopped mushroom stems and cook, stirring, for 2 minutes. Add salt and pepper to taste. Set the mixture aside on a plate to cool.
  • In a bowl, combine the cream cheese and egg yolk. Add the Cheddar cheese and mix. Add the sausage and mushroom stems and stir together.
  • Arrange the mushroom caps on a baking sheet. Spoon some of the sausage mixture into the cavity of each mushroom, filling the cap and creating a sizable mound over the top. Bake until golden brown, 20 to 25 minutes. Sprinkle with the chives.

1 tablespoon vegetable oil
8 ounces mushrooms, of your choice sliced
1/4 cup chopped fresh sage
1/4 teaspoon salt
1/8 teaspoon pepper
1 shallot, minced
1/4 cup white wine
1/2 cup low sodium chicken broth
2 tablespoons soft cream cheese

Steps:

  • In medium saute pan, over medium high heat, heat the oil.
  • Add the sliced mushrooms, sage, shallots, the salt and pepper.
  • Cook until the mushrooms have given up most of their moisture.
  • Add wine and reduce by half.
  • Add broth and cream cheese. Stir and continue cooking until slightly thickened, about 3-5 minutes.

1/4 cup dusseldorf mustard or 1/4 cup Dijon mustard
1 egg yolk
1 tablespoon water
1 tablespoon red wine vinegar
3/4 cup vegetable oil
salt & freshly ground black pepper
2 ounces Roquefort cheese, crumbled
1 tablespoon fresh snipped chives (or green onions)
1 tablespoon diced pimento

Steps:

  • Squeeze lemon over mushrooms in large bowl.
  • Whisk mustard and yolk in another bowl; blend in water and vinegar.
  • Whisk in oil in thin stream; season to taste with salt and pepper.
  • Stir in cheese,chives and pimiento.
  • Pour over mushrooms and toss well.

4 shallots, finely chopped
5 ounces mushrooms, thinly sliced
1/2 ounce fresh sage, leaves removed from stalks & finely chopped
4 tablespoons mascarpone
1 lb gnocchi
parmesan cheese, shavings to serve (optional)
fresh ground black pepper

Steps:

  • Heat the oil, add the shallots and cook for 5 minutes, stirring occasionally. Add the mushrooms and cook for a further 5 - 6 minutes, stirring occasionally until golden. Stir in the sage, mascarpone and seasoning to taste.
  • Meanwhile, bring a pan of lightly salted water to the boil and cook the gnocchi following instructions on the pack. Drain, reserving approximately 3 tablespoons of the cooking liquid and place the gnocchi in a serving dish.
  • Stir the reserved liquid into the sauce, pour over the gnocchi and serve straight away garnished with fresh sage leaves and parmesan shavings.

1 tablespoon olive oil
3 medium onions, chopped
5 garlic cloves, minced
1 1/2 lbs mushrooms, sliced (shitake, baby bellas, or button)
1 red bell pepper, seeded, diced
2 tablespoons chopped fresh sage
1/4 teaspoon ground red pepper (to taste)
2 bay leaves
6 cups vegetable broth
1 cup pearl barley
4 ounces goat cheese (optional) or 4 ounces ricotta cheese (optional)
1/4 teaspoon salt (to taste)

Steps:

  • Heat olive oil in large non-stick pan over medium heat. Add onions and garlic and cook until translucent, about 10 minutes. Add mushrooms, bell pepper, sage and red pepper. Cook, stirring frequently, until mushrooms are wilted, about 15 minutes.
  • Add bay leaves and broth, and heat to boil. Add barley, reduce heat to low; simmer uncovered until barley is tender, about 35 to 40 minutes. Add salt and pepper to taste.
  • Add cheese if desired, and cook just enough to melt cheese about 5 minutes. Remove bay leaves.

1 head garlic (Or Less To Taste, Peeled And Sliced)

1/4 cup flour
1/4 cup butter
1 lb sliced mushrooms (Chantrelle, Shitake, Or Button)
25 sage leaves (Wash, Pat Dry, Set Aside)
12 ounces angel hair pasta or 12 ounces thin spaghetti

Steps:

  • Place 4 quarts of water in a large kettle, add a bit of canola oil.
  • Heat the water to boiling for pasta while you prepare the sauce.Melt 1/8 cup of the butter. Add sage leaves and fry until they are crisp.
  • Remove and place on clean paper towel.Melt the rest of the butter.
  • Add sliced mushrooms.
  • Sprinkle with salt and pepper.
  • When mushrooms are slightly toasty around the edges add the sliced garlic.
  • Stir mixture and cook just until garlic is fragrant.
  • Remove and put in a bowl.Throw your pasta into the kettle of boiling water.Mix enough water with the flour to form a smooth paste. Set aside.Add about 1/2 cup water to hot pan and use a wooden spatula or spoon to scrape mushroom bits from bottom of the pan.
  • Heat the water to boiling. Gradually add flour paste and stir until you have a smooth sauce.
  • Add the mushroom mixture to reheat.Reduce heat to simmer.Drain pasta. Place pasta on plates.
  • Spoon up the mushroom sauce. Scatter fried sage on top.
  • Serve.
