1 medium onion, chopped
3/4 cup chopped celery with leaves
3 tablespoons butter, divided
6 slices day-old bread, toasted and crumbled (about 3 cups)
3/4 to 1 cup chicken or turkey broth
2 tablespoons minced fresh sage or 2 teaspoons rubbed sage
2 teaspoons minced fresh parsley
2 teaspoons minced chives
1/2 teaspoon dried basil

Steps:

  • In a large skillet, saute onion and celery in 1 tablespoon butter until tender. Add the bread, broth and seasonings. Shape into six patties. , In another large skillet, melt remaining butter over medium heat. Cook patties on both sides until lightly browned.

1 stick unsalted butter, plus more for the dish
1 pound loose breakfast sausage (or use links and remove the casings)
2 onions, chopped
4 stalks celery, chopped
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
2 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
2 large eggs
1/2 cup chopped fresh parsley
16 cups stale 1/2-inch country white bread cubes (about 2 pounds)

Steps:

  • Preheat the oven to 350˚. Butter a 3-quart baking dish. Melt 6 tablespoons butter in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat, until no longer pink, 3 to 5 minutes. Add the onions, celery, sage and thyme and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the chicken broth, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then remove from the heat.
  • Whisk the eggs and parsley in a large bowl. Add the bread cubes and sausage-broth mixture and toss until evenly combined. Transfer to the prepared baking dish, dot with the remaining 2 tablespoons butter and cover with foil.
  • Bake the stuffing until hot, about 30 minutes. Uncover and bake until golden brown, 20 to 30 minutes. Let cool at least 15 minutes before serving.

1 (12 ounce) can refrigerated biscuit dough, baked
¾ cup chopped onion
1 cup chopped celery
1 cup chopped mushrooms
⅛ teaspoon celery salt
⅛ teaspoon poultry seasoning
ground black pepper to taste
2 cups turkey broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one baking sheet.
  • Saute vegetables in butter until soft.
  • Break up cornbread and the biscuits into a very large mixing bowl. Mix in the sauteed vegetables and seasonings to taste. Add lots of turkey broth until very moist and will hold it's shape when formed. Shape into patties and place on the prepared baking sheet. Bake at 350 degrees F (175 degrees C) until lightly browned.

1 1/2 pounds untrimmed French or Italian bread
2 teaspoons corn, peanut or vegetable oil
1 pound bulk sausage - do not use Italian sausages with seasonings such as anise or fennel - shaped into 9 patties of more or less equal size
2 cups coarsely chopped onion
1 1/2 cups coarsely chopped celery
3 cups peeled and cored apples, cut into 1/2-inch cubes
1/2 cup coarsely chopped fresh sage leaves or half the amount dried
4 eggs, lightly beaten
3 cups simmering fresh or canned chicken broth
Salt to taste, if desired
Freshly ground pepper to taste
6 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees.
  • Cut the untrimmed bread into one-inch cubes. There should be about 21 cups.
  • Heat the oil in a skillet and add the sausage patties. Cook, turning the pieces often, about eight minutes or until cooked through and browned on both sides. Remove the patties and pour off almost all the fat from the skillet. Cut the patties into bite-size pieces.
  • Heat the skillet and add the onion and celery. Cook, stirring, about three minutes, then add the apples. Cook, stirring, about three minutes longer. Stir in the sage.
  • To a large bowl, add the cubed bread, sausage pieces, the apple and sage mixture, the beaten eggs, chicken broth, salt and pepper to taste. Blend well, tossing gently to moisten without making the mixture mushy.
  • Use two tablespoons of the butter to grease a pan measuring about 18 by 12 by 2 1/2 inches. Pour the dressing into the pan and smooth it over. Dot with the remaining four tablespoons of butter. Place in the oven and bake one hour.

Our family's traditional stuffing recipe for the Thanksgiving turkey. Although I have strayed from time to time over the years, this is the stuffing recipe I always return to. All ingredient amounts are estimated; Mom has never measured and neither have I. Mom wants me to remind you to be careful with the amount of sage you use. Start off using a small amount of sage then adjust as needed. Please note that for safety reasons I do not place the stuffing into the cavity of the turkey, rather, I bake it separately. Finally and most importanly, *please avoid using commercially produced stock in this stuffing*. This is the stock recipe I use every time: Recipe #55282 And the bread recipe I've used the past several Thanksgivings: Recipe #102949

12 cups day old bread, cut into 1/2-inch cubes
butter, for sauteing
2 cups celery & leaves, minced
1 large yellow onion, diced small
1 -2 egg, lightly beaten
1 tablespoon dried sage or 3 teaspoons finely minced fresh sage, to taste
1 teaspoon poultry seasoning, to taste
1/2 teaspoon salt-free garlic powder
salt, to taste
white pepper, to taste
fresh salt-free turkey broth, warm but not too hot

Steps:

  • Preheat oven to 350 degrees.
  • In a skillet, melt approximately 2-3 tablespoons butter on medium heat and sautè the celery and onion until softened, about 3-4 minutes. Set aside to cool slightly.
  • In the meantime, cube the bread and set aside in a large, deep mixing bowl.
  • Place the cooled celery and onion in the mixing bowl with the cubed bread. Next, add the *egg(s), sage, poultry seasoning, garlic powder, salt, and white pepper. Toss to combine. *Usually I don't need more than one egg.
  • Now stir in about [1] cup of turkey stock. Mix. Add more stock, about 1/2 cup at a time until the bread mixture is {lightly} moistened but not saturated.
  • Place the stuffing mixture in a buttered ovenproof casserole dish and cover with foil.
  • Bake for about 45 minutes, removing the foil about 15 minutes before the cooking time is completed to allow the top to brown.
  • Serve hot.

1 12 ounce can refrigerated biscuits, baked
3/4 c chopped onion
1 c chopped celery
1 tsp or to taste rubbed sage or poultry seasoning
ground black pepper to taste
2 c chicken broth. (add until patties will hold shape. may be more or less than 2 cups.)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Lightly grease baking sheet.
  • 3. Saute vegetables in butter until soft.
  • 4. Break up cornbread and biscuits into a large mixing bowl.
  • 5. Mix in the sauteed vegetables and seasonings to taste.
  • 6. Add broth until very moist and will hold it's shape when formed.
  • 7. Shape into patties and place on the prepared baking sheet.
  • 8. Bake at 350 degrees until lightly browned.
  • 9. Serve with choice of gravy. Giblet, chicken, turkey, etc.

2 c leftover sage dressing (or whatever kind you have)
all purpose flour
2 Tbsp butter or cooking oil

Steps:

  • 1. Shape leftover dressing into patties. If dressing is moist, you won't need to add anything--they should shape right up easily. If they are too dry to hold together, beat in an egg or a little milk.
  • 2. Coat the patties in flour. Heat butter or oil in a large skillet and add the patties, one at a time. Cook on one side over medium heat, about five or ten minutes. Turn patties once and cook on other side.
  • 3. When golden brown, remove to a paper towel to drain. Serve plain or with leftover gravy.

1 small Bramley apple, peeled, cored and diced
2 x 400g packs meaty Cumberland sausages, removed from their skins
handful sage, leaves chopped, plus extra for topping
140g granary breadcrumbs

Steps:

  • Fry 2 sliced onions in 25g butter for 5 mins, then add 1 small diced Bramley apple and cook briefly.
  • Cool, then mix with 800g Cumberland sausages, skins removed, the chopped handful of sage, 140g granary breadcrumbs and seasoning.
  • Use to stuff the neck end of the bird, then roll any leftovers into balls. Or, pack the whole mixture into a 1kg loaf tin and top with extra sage leaves.
  • Bake with turkey for 30-40 mins. Drain off any fat and serve sliced.

1 cup minced fresh parsley
3 cups chopped onions
3 cups minced celery (stalks and leaves)

16 slices white bread, dried and broken into small pieces
1 egg
2 cups chicken broth
6 tablespoons minced fresh sage

Steps:

  • Saute the onions and celery in 4 tablespoons butter until soft.
  • In a large bowl, toss the dried bread, sage, parsley, salt, and pepper.
  • Add the onion mixture along with the remaining melted butter to the bread mixture.
  • Beat the egg and add to the mixture.
  • Toss until well mixed.
  • Add the broth slowly while tossing mixture to moisten thoroughly, making sure to not make the stuffing soupy.
