PROSCIUTTO BRUSCHETTA

8 slices crusty sourdough bread, cut on the diagonal from a 1-pound loaf
Extra-virgin olive oil
1 clove garlic
8 thin slices fresh mozzarella
8 thin slices prosciutto
8 fresh basil leaves

Steps:

  • Preheat the broiler.
  • Brush the bread on both sides generously with oil and place on a baking sheet. Broil until golden and crispy, 2 minutes per side.
  • Remove, let cool slightly, and rub the garlic all over one side of each slice. Place a slice of cheese on each piece of bread, then top each with a slice of prosciutto. Return to the oven until the cheese is melted and golden, 2 minutes.
  • Garnish with a basil leaf and serve.

Late Summer Tomato Bruschetta image

1 loaf day old country bread
6 whole canned tomatoes
6 roughly torn basil leaves
3 tablespoons olive oil
2 cloves garlic, peeled

Steps:

  • Preheat a grill or grill pan.
  • Slice your bread thickly, and place slices on a dry grill to brown, about 30 seconds on both sides. Take canned tomatoes, place on cutting board, and slice. Add the basil to the canned tomatoes in a large bowl. Add olive oil and season with black pepper, to taste.
  • Remove carmelized bread from grill and rub each side with cloves of garlic. Top with spoonfuls of mixture and serve immediately.

2 ears corn, kernels cut off
2 small peaches, sliced into thin wedges
1 Fresno or serrano chile, thinly sliced
1/3 cup chopped fresh basil
2 teaspoons white balsamic vinegar
1 tablespoon extra-virgin olive oil, plus more for drizzling, optional
1/2 teaspoon kosher salt
Eight 1/2-inch-thick slices ciabatta bread
1/4 cup olive oil
8 ounces burrata cheese, drained and patted dry
1/2 teaspoon flaky sea salt

Steps:

  • In a medium bowl, combine the corn, peaches, chile, basil, white balsamic, extra-virgin olive oil and kosher salt. Mix well with a spoon. Let marinate for 30 minutes at room temperature or up to 2 hours in the refrigerator.
  • Meanwhile, heat a grill or grill pan over medium-high heat. Drizzle the ciabatta slices with the olive oil and grill until golden brown, about 1 minute per side.
  • To serve, tear off small amounts of burrata and place on the toast. Sprinkle with the flaky sea salt. Spoon some of the salad on top. Drizzle with a touch more olive oil if desired.

SHAVED SALAD WITH PROSCIUTTO BITS



Shaved Salad with Prosciutto Bits image

1/4 cup red wine vinegar
Pinch gray salt
2 tablespoons Dijon mustard
1 teaspoon dried oregano
Freshly ground black pepper
1 cup extra-virgin olive oil
1/2 cup crumbled blue cheese, optional
2 cups baby arugula
2 cups coarsely grated or thinly sliced fennel, about 2 small bulbs
Gray salt and freshly ground black pepper
1/2 cup freshly grated Parmesan
1/2 cup Prosciutto Bits, recipe follows
2 cups coarsely grated green zucchini
2 cups coarsely grated or thinly sliced red cabbage
2 cups coarsely grated carrot

Steps:

  • For the vinaigrette: In a small bowl, whisk together the vinegar and salt. The salt crystals should dissolve. Whisk in the mustard, oregano, and black pepper. Slowly whisk in the olive oil to form a smooth emulsion. Crumble in the blue cheese, if using. Pour the vinaigrette into a serving bowl to be passed at the table with a spoon. Refrigerate until ready to serve.
  • For the salad: Set out 8 salad bowls, preferably clear glass so the guests can see the layers of vegetables. For each bowl, put down a layer of arugula and then a layer of fennel. Season with salt and pepper, to taste, and sprinkle 1 tablespoon Parmesan and 1 tablespoon Prosciutto Bits over the fennel. Next, put down a layer of zucchini and a layer of red cabbage. Once again, season with salt and pepper to taste and sprinkle with Parmesan and Prosciutto Bits. Put down a layer of carrots over the top and finish with a small sprinkling of Parmesan and Prosciutto Bits.
  • Serve the salads at room temperature. Pass the vinaigrette at the table. Allow guests to dress their own salads and mix up the layers.

2 teaspoons minced fresh sage
2 teaspoons baking powder

½ cup Crisco® Baking Sticks All-Vegetable Shortening, well chilled
¾ cup buttermilk
½ cup shredded extra sharp white or mild Cheddar cheese
2 tablespoons butter, melted

Steps:

  • Heat oven to 425 degrees F. Combine flour, corn meal mix, sugar, sage, baking powder and salt in large bowl; mix well. Cut in shortening with pastry blender or fork until mixture resembles coarse crumbs. Stir in buttermilk and cheese just until evenly moistened.
  • Turn out dough onto lightly floured work surface. Knead 5 times to bring dough together. Roll out to a 3/4-inch thickness. Cut with floured 2-inch biscuit cutter. Place 2 inches apart on baking sheet.
  • Bake 12 to 15 minutes or until golden brown. Remove from baking sheet to wire rack to cool. Brush tops with butter. Serve warm.

1 3/4 cups Original Bisquick™ mix
1/2 cup yellow cornmeal
2/3 cup milk
1 teaspoon dried sage leaves, crumbled
1 package (12 ounces) bulk turkey breakfast sausage
1/4 cup Original Bisquick™ mix
2 1/4 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 450°F. Stir 1 3/4 cups Bisquick mix, the cornmeal, 2/3 cup milk and the sage until soft dough forms; beat 30 seconds. Drop by 12 spoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.
  • While biscuits are baking, cook sausage in 2-quart saucepan over medium heat, stirring frequently, until no longer pink; drain. Sprinkle 1/4 cup Bisquick mix over sausage; stir in to blend. Gradually stir in 2 1/4 cups milk until well blended.
  • Cook about 5 minutes, stirring frequently, until thickened. Stir in salt and pepper. Serve biscuits with sausage gravy.
