SAGE MEAT LOAF
I really like this meat loaf because it's moist and the sage flavor in it makes it really yummy. The topping is not too sweet and adds a nice zip to it. It's also a good way to use up those saltine crackers that linger around. Recipe comes from Taste of Home magazine.

Steps:
- Preheat oven to 350°F.
- Crush saltine crackers in ziplock bag with mallet or rolling pin until finely crushed.
- Combine the first 9 ingredients together in a large bowl and mix well with your hands.
- Place and form meat loaf into a greased 9x5 loaf pan.
- Bake uncovered for 50 minutes.
- Combine sauce ingredients and spread over top of meat loaf.
- Bake 15-20 minutes longer, until thermometer reads 160°F
- Let meat stand for 10 minutes before slicing.
- Enjoy!

CLASSIC SAGE AND SAUSAGE STUFFING (DRESSING) RECIPE
Steps:
- Adjust oven racks to lower-middle and upper-middle positions. Preheat oven to 275°F (135°C). Spread bread evenly over 2 rimmed baking sheets. Stagger trays on oven racks and bake until completely dried, about 50 minutes total, rotating trays and stirring bread cubes several times during baking. Remove from oven and allow to cool. Increase oven temperature to 350°F (180°C).
- In a large Dutch oven, melt butter over medium-high heat until foaming subsides (do not allow butter to brown), about 2 minutes. Add sausage and mash with a stiff whisk or potato masher to break up into fine pieces (largest pieces should be no bigger than 1/4 inch). Cook, stirring frequently, until only a few bits of pink remain, about 8 minutes. Add onion, celery, garlic, and sage and cook, stirring frequently, until vegetables are softened, about 10 minutes. Remove from heat and add half of chicken stock.
- Whisk remaining chicken stock, eggs, and 3 tablespoons parsley in a medium bowl until homogeneous. Stirring constantly with a wooden spoon, slowly pour egg mixture into sausage mixture. Add bread cubes and fold gently until evenly mixed.
- Use part of stuffing to stuff turkey, if desired (see note). To cook remaining stuffing, transfer to a buttered 9- by 13-inch rectangular baking dish (or 10- by 14-inch oval dish), cover tightly with aluminum foil, and bake until an instant-read thermometer reads 150°F (66°C) when inserted into center of dish, about 45 minutes. Remove foil and continue baking until golden brown and crisp on top, 15 to 20 minutes longer. Remove from oven, let cool for 5 minutes, sprinkle with remaining parsley, and serve.

Steps:
- Heat oven to 425°F.
- Put the 4 cups of flour, baking powder, salt and sage in a large bowl; stir to mix well.
- Add milk and 1/2 cup olive oil.
- Stir until mixture forms a ball.
- Knead lightly about 10 times.
- Divide dough evenly into 16 pieces.
- Flatten pieces, one at a time, on clean counter or pastry cloth lightly dusted with flour.
- Roll out as thinly as possible, allowing ragged edges.
- Turn dough over frequently to make rolling easier.
- Place 2 crackers on each baking sheet.
- Brush lightly with some of the remaining olive oil and sprinkle with coarse salt.
- Bake 8 to 10 minutes or until golden brown.
- Cool, uncovered, on a wire rack.
- Serve at room temperature.
- To serve, tear crackers into pieces and place in a napkin-lined basket.
- Serve alone or with spreads or dips.

BROWN SUGAR SAGE SHORTBREAD

- In the bowl of your stand mixer fitted with the paddle attachment, combine the dark brown sugar, confectioners' sugar, minced sage and salt. Use your fingers and rub the sage into the sugar to release its flavor. Add the flour and mix to combine. Add the butter and blend on low until a smooth dough forms. Scrape the bowl and paddle and blend for another 15 seconds.
- Place the dough onto a piece of plastic wrap, flatten into a disk and wrap. Allow the dough to chill for at least two hours or up to overnight.
- When ready to bake, preheat your oven to 350 degrees F and line two half sheet pans with parchment.
- Remove the dough from the refrigerator. Working on a lightly floured surface (or between two pieces of parchment), roll the dough to 1/4-inch thickness and cut out desired shapes with a 2 1/2-inch people-shaped cookie cutter. Transfer cutouts to the parchment-lined baking sheets and bake until the edges are a deep golden brown, 18 to 20 minutes. Allow to cool completely on the sheet pans.

- In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into two patties. , In a medium skillet, cook patties for 4-5 minutes per side or until browned; drain.
