Rustic Nectarine and Raspberry Crostata With Cornmeal Crust image

The picture says it all! This beauty not only looks impressive, but tastes fresh and wonderful. The cornmeal in the crust adds a nice element, different than the regular pie crust. (Prep time includes chilling periods).

Number Of Ingredients 15

1 2/3 cups all-purpose flour
1/4 cup coarse cornmeal
3 tablespoons sugar
1 teaspoon packed orange zest
3/4 teaspoon salt
14 tablespoons chilled unsalted butter, cut into 1/2 inch cubes
1/3 cup ice water (or more)
1/4 cup sugar
1 1/2 teaspoons cornstarch
4 medium nectarines, pitted and each cut into 16 slices
1/2 pint blackberries or 1/2 pint blueberries
1/2 teaspoon vanilla extract
1 egg, beaten (for glaze)
raw sugar, to sprinkle
peach preserves, heated

Steps:

  • To prepare the crust: Combine first 5 ingredients in food processor and whiz for 5 seconds to blend.
  • Add butter, and pulse until butter is pea size.
  • Add 1/3 cup ice water and pulse until dough forms moist clumps.
  • Add more water by teaspoon fulls if too dry.
  • Gather dough into ball, flatten into disc, wrap in plastic and chill for at least one hour.
  • Can be made 1 day ahead.
  • Let dough sit a few minutes, then roll on lightly floured sheet of parchment paper to a 14 inch round, turning occasionally to prevent sticking.
  • Slide a rimless baking sheet under parchment and place disc in fridge for 30 minutes.
  • To make Filling: Stir sugar and cornstarch to blend.
  • Mix in fruit and vanilla.
  • Let stand until juices are released, stirring occasionally, about 30 minutes.
  • Preheat oven to 375°F.
  • Transfer baking sheet with dough to work surface and let stand for 8 minutes.
  • Spoon fruit and juices into center of dough, making a even 10 inch diameter.
  • Brush a 2 inch border of dough with egg.
  • Lift about 2 inches of dough border and pinch to form vertical seam.
  • Pinching every two inches.
  • See photo- middle six inches of fruit should remain uncovered.
  • Brush folded border with egg and sprinkle with raw sugar.
  • Place baking sheet with tart in oven.
  • Bake until crust is golden and fruit is bubbling, about 55 minutes.
  • Remove from oven and transfer with large spatula to cooling rack.
  • Brush fruit with heated preserves.
  • Cool 45 minutes.
  • Serve warm, or at room temperature.
  • A dollop of creme fraiche or vanilla ice cream goes very nicely with a slice of this.

A simple, free form fruit tart with summer fruits

The crust:
2 cups all-purpose flour (or 1¾ cup flour & ¼ cup cornmeal)
1 TBSP. granulated sugar
½ tsp. sea salt
¾ cup butter, chilled and cut into small cubes
⅓ cup ice-cold water
The filling:
1¼ lbs. peaches (about 3 medium), peeled, pitted and thickly sliced
¾ cups raspberries (or one more medium peach)
⅓ cup light brown sugar, packed
2 TBSP. all-purpose flour
½ tsp. lemon zest
½ tsp. vanilla extract
--- pinch of freshly grated nutmeg
--- peach preserves or jam, warm
1 TBSP. milk or 1 TBSP. of beaten egg whites
1 TBSP. turbinado sugar*
½ TBSP. cold butter, diced (optional)
2 TBSP. peach preserves or jam, warmed to a glaze-like consistency

Steps:

  • For the crust:
  • Combine the first three ingredients in the bowl of a food processor and blend. Add the cold butter and pulse until small pea-size pieces of dough are formed, making sure to not overwork the butter. Add the ice-cold water and pulse until the dough forms moist clumps and barely comes together. Lightly flour a surface and turn the dough out on it. Gather it into a bowl and then pat it down to form a disk. Wrap it well in plastic wrap and chill for an hour.
  • For the filling:
  • In a medium bowl, blend the brown sugar, flour, lemon zest, vanilla extract and nutmeg. Add the sliced and peeled peaches. Let the mixture stand for 20 minutes or until the peach juices are released, stirring every now and then. Gently fold in the raspberries.
  • Preheat the oven to 375°F. Remove the dough from the refrigerator and allow it to soften slightly at room temperature; about 15 minutes (this step will make the rolling easier). Line a baking sheet with parchment paper and set aside.
  • Place the dough between two pieces of parchment paper and roll it out to a 13" disc. Alternatively, you can lightly flour a work surface and roll the dough out. Lift the disc from the work surface by rolling it around the rolling pin and then unroll it onto the prepared baking sheet.
  • Spoon the fruit mixture into the center of the dough, leaving a 2-inch border around the outer edge. Fold in the edges of the dough about an inch over the fruit filling to create a rustic border. Brush the folded dough boarder with the milk and sprinkle with the turbinado sugar. Dot the filling with the diced butter (this is optional).
  • Bake the crostata for about 30-40 minutes, or, until the crust is golden brown and the fruit filling is set. Remove from the oven. Lift the parchment paper and place on a rack to cool. Brush the still warm fruit with the preserves/jam. Carefully remove the parchment paper.
  • The peach and raspberry crostata can be served slightly warm or at room temperature (with vanilla ice cream, if desired).

Steps:

  • For crust:
  • Combine first 5 ingredients in processor and blend 5 seconds. Add butter; using on/off turns, blend just until butter is reduced to pea-size pieces. (To ensure a flaky crust, be careful not to overwork the butter.) Add 1/3 cup ice water. Using on/off turns, blend until dough comes together in moist clumps, adding more water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap; chill at least 1 hour. Continue around tart, pinching seam every 2 inches to form standing border. Fold border down over fruit (center 6 inches of fruit remain uncovered). Brush folded border with egg glaze; sprinkle with raw sugar.
  • Place baking sheet with tart in oven. Bake until crust is golden brown and fruit filling is bubbling at edges, about 55 minutes. Remove from oven; slide large metal spatula under tart to loosen from parchment. Brush fruit with preserves. Slide tart onto rack. Cool 45 minutes. Serve warm or at room temperature with ice cream.

Steps:

  • Filling: Preheat oven to 375 degrees. Combine fruit, granulated sugar, cornstarch, and salt. Transfer to a 9-inch square or other 1 1/2-quart baking dish.
  • Topping: In a large bowl, beat butter with brown sugar on medium speed until light and fluffy. Work flour, cornmeal, and salt in with your hands until large clumps form. Scatter over filling.
  • Bake until center is bubbling, 40 to 50 minutes. Let crisp cool slightly before serving.

2 tablespoons Splenda sugar substitute
1 teaspoon baking powder
1/8 teaspoon salt

4 -5 tablespoons nonfat milk
1/3 cup Splenda sugar substitute (or more to taste)
3 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg or 1/4 teaspoon ground cinnamon
3 cups sliced pitted fresh apricots (or 3 cups fresh peach slices or unsweetened frozen, thawed, do not drain) or 3 cups frozen apricots, thawed, do not drain (or 3 cups fresh peach slices or unsweetened frozen, thawed, do not drain)
1 tablespoon lemon juice
2 teaspoons nonfat milk

Steps:

  • Grease and lightly flour a large baking sheet; set aside.
  • For the cornmeal crust, in a medium bowl stir together 3/4 cup flour, cornmeal, 2 tablespoons Splenda, baking powder, and salt.
  • Cut in butter or margarine until the size of small peas.
  • Sprinkle 1 tablespoon of cold fat-free milk over mixture; gently toss with a fork.
  • Add 3 to 4 tablespoons more fat-free milk, 1 tablespoon at a time, until the dough is moistened (dough will be crumbly).
  • Turn out onto a lightly floured surface and knead 7 to 8 times or just until dough clings together and form into a ball. On the baking sheet, flatten dough.
  • Roll into a 12-inch circle and set aside.
  • For Filling:.
  • In a bowl stir together 1/3 cup Splenda, the 3 tablespoons flour, and the nutmeg or cinnamon. Stir in the apricots or peaches and lemon juice.
  • Mound the filling in center of crust, leaving a 2-inch border.
  • Fold border up over filling.
  • Brush top and sides of crust with the 2 teaspoons milk.
  • Bake in a 350 F degree oven about 40 minutes or until crust is golden and filling is bubbly.
  • To prevent overbrowning, cover the edge of the crust with foil the last 10 to 15 minutes of baking if needed.
  • Cool tart for 30 minutes on the baking sheet on a wire rack.

1 tablespoon all-purpose flour, plus more for dusting
1 sheet frozen puff pastry (from a 17.3-ounce package), thawed according to package instructions
1/3 cup sugar, plus 2 teaspoons for sprinkling
5 large ripe nectarines (about 1 3/4 pounds), halved, pitted, and sliced 1/4 inch thick
Pinch of salt
2 tablespoons seedless red-currant jelly, warmed until liquefied

Steps:

  • Preheat oven to 425 degrees. Place folded pastry on a lightly floured work surface; roll out to a 12-by-14-inch rectangle. Trim edges to make even.
