1 pound Jimmy Dean ground pork Italian sausage
6 garlic cloves (minced)
2 cans (14-1/2 ounces each reduced-sodium chicken broth)
1-3/4 cups water
1 can (14-1/2 ounces diced tomatoes, undrained)
1 package (9 ounces refrigerated cheese tortellini)
1 package (6 ounces fresh baby spinach, coarsely chopped)
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
1 tsp. Italian seasoning (more or less to taste)
Grated Parmesan cheese

Steps:

  • Crumble sausage into a large pot. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water, and tomatoes, then bring to a boil.
  • Add the tortellini, and return to a boil. Cook for 7-9 minutes or until tender, stirring occasionally. Reduce heat, then add the spinach, basil, pepper, Italian seasoning, and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted. Serve with Parmesan cheese! Serves 4-6.

2 teaspoons olive oil
4-1/2 cups water
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
3 tablespoons grated Romano cheese
5 teaspoons sodium-free chicken bouillon granules
1 tablespoon prepared pesto
1 jar (7 ounces) roasted sweet red peppers, drained
1 package (9 ounces) refrigerated cheese tortellini
GARNISH:
8 thin slices prosciutto or deli ham
8 teaspoons grated Romano cheese

Steps:

  • In a Dutch oven, saute mushrooms in oil until tender. Add the water, tomatoes, cheese, bouillon and pesto. , Place peppers in a food processor; cover and process until blended. Add to mushroom mixture and bring to a boil. Reduce heat; cover and simmer for 10 minutes., Stir in the tortellini; return to a boil. Cook for 7-9 minutes or until tender, stirring occasionally. Cut prosciutto into thin strips; garnish each serving with prosciutto and cheese.

Steps:

1 teaspoon olive oil
1 (12 ounce) package mild Italian sausage
1 small onion, chopped
2 tablespoons minced garlic

1 (28 ounce) can tomato puree
1 bunch fresh spinach, chopped

Steps:

  • Pour 1 can broth into a small saucepan and add tortellini; bring to a boil. Cook tortellini until tender yet firm to the bite, about 5 minutes.
  • Heat oil in a large stockpot over medium heat; cook and stir sausage, onion, garlic, and Italian seasoning until sausage is browned and crumbly, 5 to 10 minutes. 2 medium carrots, chopped
1 bay leaf
2 tablespoons fresh basil
1 teaspoon fresh parsley

1 medium onion, chopped
1 teaspoon freshly ground black pepper
2 teaspoons good quality olive oil
1 cup water

Steps:

  • Saute celery, onion, carrots and garlic in oil.

  • Add spices and chicken broth.
  • Simmer, covered, until vegetables are tender-crisp.

5 cups beef broth
1/2 cup water
1/2 cup dry red wine
4 medium tomatoes, seeded, peeled, chopped
1 cup carrot, thin sliced
1/2 teaspoon basil
1/8 teaspoon oregano
8 ounces tomato sauce
1 1/2 cups zucchini, sliced
8 ounces frozen meat-filled tortellini or 8 ounces frozen cheese tortellini
3 tablespoons fresh parsley, chopped
1 medium green pepper, cut in 1/2-inch pieces
parmesan cheese

Steps:

  • Remove sausage casing. In dutch over brown sausage.
  • Remove sausage; reserve 1 tbsp drippings.
  • Saute onions and garlic in drippings until onions are tender.
  • Add broth and next 7 ingredients, and add sausage.
  • Bring to boil, reduce heat and simmer uncovered 30 minutes.
  • Skim fat from soup and stir in zucchini and remaining ingredients, except parmesan cheese. Simmer covered an additional 35-40 minutes until tortellini is tender.
